Easy Cauliflower Salad (gluten-free and dairy-free option) image

This easy cauliflower salad is one of my favorite salads to bring to potlucks and get-togethers. You can make it the day before and it holds up nicely. As a matter of fact, I think it tastes better the next day.

1 head of cauliflower, broken up into bite-sized pieces
1 small onion, chopped
1/4 cup clean mayonnaise (or learn to make your own here)
1/8 cup extra virgin olive oil
1/4 cup apple cider vinegar
8 drops liquid stevia
1/2 tsp. sea salt
1/2 tsp. black pepper
1/4 cup dried cranberries
1/4 cup pumpkin seeds

Steps:

  • Wash and break up the cauliflower into bite-sized pieces and put in a bowl (with a lid so you can toss it all together) with the chopped onion.
  • Whisk together the mayo, oil, vinegar, stevia, salt and pepper.
  • Add the pumpkin seeds, dried cranberries, and the dressing to cauliflower and onion.
  • Toss together well.
  • Let marinate for a couple hours or overnight.
  • This salad will also keep a couple days in the fridge without going bad or getting soggy.

Quick Cauliflower Salad image

Bacon, cheese, tomatoes and olives really dress up plain old cauliflower. Even my husband had to admit this salad is delicious!

6 cups fresh cauliflowerets
3 plum tomatoes, chopped
1 cup thinly sliced green onions
1 cup shredded cheddar cheese
1/2 cup sliced pimiento-stuffed olives
1/2 cup mayonnaise
12 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the cauliflower, tomatoes, onions, cheese and olives. Add mayonnaise; toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, sprinkle with bacon.

2-3 small heads of broccoli, chopped (3-4 cups)
1 head cauliflower (3-4 cups)
1 medium apple, diced
2 celery ribs, diced (3/4 cup)
1/2 medium red onion, diced (1 cup)
1/2 cup dried cranberries (Made In Nature are Whole30 compliant)
3/4 cup chopped walnuts, toasted (sub sunflower seeds for nut-free)
2/3 cup Tessemae's Lemon Garlic Dressing (or see recipe option below)
1/3 cup mayo
1 Tbsp. fresh thyme (optional)
Salt & pepper to taste

Steps:

  • In a large bowl, toss together all of the ingredients except for the dressing, mayo and thyme.
  • In a small bowl, whisk together the lemon dressing, mayo and fresh thyme. Season with salt & pepper to taste.
  • Add the dressing to the large bowl and toss until well combined. Let salad sit in the fridge for 30 minutes to allow veggies to marinate in the dressing.
  • Store leftovers in an airtight container in the fridge for up to 4-5 days.
