QUICK CHICKEN PARMESAN
My mother inspired me to develop my first pasta sauce. It's tangy, simple and really satisfying. The longer it simmers, the better it gets, so keep that in mind if you have time to spare. -Danielle Grochowski, Milwaukee, Wisconsin

Steps:
- Wash and pat the chicken breasts dry and then coat them with the breadcrumbs (I push hard on them while coating them to break the tissue down and make them even more tender).
- After the chicken breasts are breaded, fry them either in a teflon skillet or with a little olive oil (if you use olive oil, you must count it as part of the fat in the nutritional breakdown).
- Fry the breasts until they are completely cooked.
- Pour 1/2 of the spaghetti sauce into a 9"x5" casserole dish.
- Place the cooked chicken breasts on top of the sauce.
- Pour the remaining spaghetti sauce on top of the chicken breasts.
- Sprinkle both cheeses on top Put the dish into a 400 degree oven for 30 minutes, or long enough to warm all the sauce and breasts throughly and melt the cheese.
- Serve over spaghetti (or rice!).

Steps:
- Arrange racks in top and bottom of oven and place a rimmed baking sheet on bottom rack; preheat to 450°F.
- Beat eggs in a large shallow bowl. Using a fork or your fingertips, mix breadcrumbs, Parmesan, 3 Tbsp. oil, 3 tsp. oregano, 1/2 tsp. salt, and 1/2 tsp. pepper in another large shallow bowl or plate.
- Working with 1 cutlet at a time, dip in egg, allowing excess to drip back into bowl. Dredge in breadcrumb mixture, shaking off excess, then pressing to adhere. Transfer chicken to a baking sheet.
- Carefully remove preheated baking sheet from oven and generously brush with oil. Transfer chicken to baking sheet and return to bottom rack. Roast 6 minutes, then carefully flip (use a spatula to scrape under cutlets) and sprinkle with mozzarella. Place baking sheet on top rack and continue to roast until juices run clear, mozzarella is melted, and an instant-read thermometer inserted into the center of cutlet registers 165°F, about 4 minutes more.
- Meanwhile, heat remaining 2 Tbsp. oil in a large skillet over medium-high. Cook onion, stirring, until softened, 3-4 minutes. Add garlic and cook until fragrant, about 1 minute more. Add marinara sauce, red pepper flakes (if using), 1/4 cup basil, and remaining 1/2 tsp. oregano, 1/4 tsp. salt, and 1/4 tsp. pepper. Cook, stirring, until sauce starts to bubble. Reduce heat to medium and simmer until chicken is ready, stirring occasionally, at least 5 minutes.
- Divide sauce among 4 plates. Top with chicken and torn basil.
EASY AND FAST CHICKEN PARM
Fast and easy. I gave this to my DD to make as her first "have Popou (Grandpa) over for dinner". Delicious comfort food that lends to conversation before, during, and after dinner. Serve with crusty bread and a nice bottle of wine (or soda) edited to add- you may use any store bought you like or your own homemade for the "ragu" sauce.

- In a medium, shallow bowl, beat 2 eggs well, set aside. In another medium bowl, add bread crumbs (omit for low carb or keto or use gluten free bread crumbs, or Panko) and grated parmesan (see post for cheese differences). Add seasonings, stir with fork to combine.
- Place your chicken breast (one at a time) in a gallon size sturdy ziplock bag, remove any air and seal. Place flat on a cutting board, and using any heavy object pound until even and flat, about 1/2-3/4 of an inch. You can use a heavy skillet, wine bottle, a heavy jar, meat mallet, or a rolling pin. Not only will your meat cook evenly and quickly, but it's a fabulous tension and frustration reliever! Repeat with other breasts.
- In a large lidded pot, fill to 2/3 - 3/4 full with cold tap water, add 1 1/2-2 tablespoons sea salt and bring to boil. If water boils before you are finished searing your chicken simply reduce heat to low or remove from heat until ready to add pasta.
- Preheat skillet over medium-high heat, pouring in a few tablespoons of olive or avocado oil. Once your chicken is flat; using a fork or tongs, dip breast into egg wash, coating both sides well. Move from egg wash directly into bread crumbs/cheese mixture and press each side to coat well.

- 1. Position oven rack 4 inches from the broiler and then turn on broiler. Place a large plate next to the stove to put the chicken as it cooks.
- 3. In a large, ovenproof skillet, over medium-high heat, add 1 tablespoon of the oil and let it heat up for about 20 seconds. It will thin out as it heats but shouldn't start to smoke. Add as many pieces of the seasoned chicken to the skillet as fit in one layer without overlapping (usually 2 or 3). Let the chicken cook until it is pale golden on the bottom (about 2 minutes), then use tongs to flip them and let them get golden on the other side, another 1-2 minutes longer. Transfer cooked chicken to the plate and continue cooking the remaining chicken, adding more oil if the pan looks dry.
- 4. When the chicken is browned, add 1 tablespoon oil to the pan and stir in the garlic. Cook, stirring, for about 30 seconds to a minute, just until you can smell it. Stir in the marinara sauce, 2 tablespoons of the Parmesan and pepper, and let the sauce come to a simmer.
