SWEET POTATO PATTIES | EASY TO MAKE AND PREPPED IN 5 MINUTES
This sweet potato patties recipe takes leftover mashed sweet potatoes and combines them with a variety of delicious spices to create a meal like no other. Seriously, these sweet potato patties are so rich and so flavorful you'll be addicted to them after taking just one bite. Plus, all it takes is 5 minutes of prep time and a handful of simple ingredients to make 'em!

Steps:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the egg, sea salt, black pepper, curry powder, mashed sweet potatoes, flour, and dried thyme.
- Using a 4-tablespoon scoop or 1/4 measuring cup, scoop six mounds of the mixture onto a prepared baking sheet lined with parchment paper. Flatten the tops with a spatula. Brush with melted butter.
- Bake the cakes for 15 minutes. Flip to the other side, brush with more butter and bake until browned and set, 10 more minutes.
- Mix mayo and herbs together in a small bowl.
- Serve immediately with fine herbs and mayo mixture.

EASY SWEET POTATO PATTIES
Steps:
- Place the potatoes on a trivet, add 2 cups of water to the pot and pressure cook for 5-6 minutes. Allow the pressure to release naturally. Remove the skin and use it.
- Into a bowl, add the cooled potatoes and mash them using a masher.
- Now add chopped garlic, mixed herbs, cumin powder, black pepper powder and required salt. Mix well.
- Add gram flour/besan in small batches and mix thoroughly without any lumps. Then add roughly crushed roasted peanuts and mix well.
- Now add half of the bread crumbs and mix well.
- Cover and keep the mixture in the refrigerator for 10-15 minutes.
- Add corn flour into a small mixing bowl and add required water to make smooth slurry.
- After 15 minutes remove the mixture from the fridge. Line a tray with baking paper and keep aside.
- Grease your palms with oil and divide the mixture into equal parts and make big or small as per your taste. Shape them by flattening in between your palms.
- Dip the shaped disc into the cornflour slurry and then roll it in the remaining bread crumbs. Keep aside on a plate.
- Repeat the same process with the remaining mixture.
- Heat a pan with 2 to 3 tablespoons of oil for shallow frying. Before adding the patties to the pan make sure the oil is hot enough.
- Carefully add the patties to the pan and fry them on medium flame until they turn golden colour on both sides.
- Remove them onto kitchen paper to absorb any excess oil.
- Serve with green chutney or tomato ketchup

- Place to potatoes in a saucepan of boiling water and simmer until soft.
- Meanwhile dry roast the cumin seeds, cinnamon and cloves in a small frying pan until aromatic, remove from pan and grind to a powder.
- Combine with the remaining spices.
- Heat the oil in a wok.
- When hot, add the onion and pepper and fry until soft.
- Add the sweet corn and ginger, saute for a couple of minutes, and then stir in the spice mix.
- Fry for 1 minutes and then remove from heat.
- Drain the potatoes and mash, with knob of butter, until smooth.
- Then stir in the spice and vegetable mix, the beaten egg, chopped cilantro and salt to taste.
- Shape the mixture into patties and fry in a non-stick pan with a little sunflower oil until brown on both sides.
- Serve.

- Preheat the oven to 350 degrees F. Line a baking sheet with nonstick aluminum foil.
- Break the frozen patties apart and place on the prepared baking sheet. Divide the brown sugar evenly over each patty. Sprinkle with nutmeg, cinnamon sugar, lemon zest, a pinch of salt and a grind or two of black pepper. Bake until golden around the edges, 20 to 25 minutes. Serve with a spritz of lemon juice.
