This sweet potato patties recipe takes leftover mashed sweet potatoes and combines them with a variety of delicious spices to create a meal like no other. Seriously, these sweet potato patties are so rich and so flavorful you'll be addicted to them after taking just one bite. Plus, all it takes is 5 minutes of prep time and a handful of simple ingredients to make 'em!

1 tsp. Olive Oil
1 large egg
½ tsp. sea salt
¼ tsp. black pepper
½ tsp. curry powder
½ tsp. dried thyme
¼ cup wheat flour
1 cup mashed sweet potato
1 tbsp. butter, melted
1/2 cup mayo
1 tsp. mixed herbs

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the egg, sea salt, black pepper, curry powder, mashed sweet potatoes, flour, and dried thyme.
  • Using a 4-tablespoon scoop or 1/4 measuring cup, scoop six mounds of the mixture onto a prepared baking sheet lined with parchment paper. Flatten the tops with a spatula. Brush with melted butter.
  • Bake the cakes for 15 minutes. Flip to the other side, brush with more butter and bake until browned and set, 10 more minutes.
  • Mix mayo and herbs together in a small bowl.
  • Serve immediately with fine herbs and mayo mixture.

Easy Sweet Potato Patties image

Healthy and delicious sweet potato patties that are crispy from the outside and soft from the inside. These are made with boiled sweet potatoes, a few spices and herbs. The best part is these are vegan and easy to make.

3 sweet potatoes (medium)
1 tsp chopped garlic
1 tsp Mixed herbs
1 tsp Roasted cumin powder
2 to 3 tbsp Roasted peanuts (roughly crushed)
½ tsp Black pepper powder
½ cup Gram flour/besan/chickpea flour (roasted)
1 cup Bread crumbs
3 tbsp Corn flour
Water as required for making slurry
Salt to taste
Coriander leaves
2 to 3 tbsp oil for shallow frying

Steps:

  • Place the potatoes on a trivet, add 2 cups of water to the pot and pressure cook for 5-6 minutes. Allow the pressure to release naturally. Remove the skin and use it.
  • Into a bowl, add the cooled potatoes and mash them using a masher.
  • Now add chopped garlic, mixed herbs, cumin powder, black pepper powder and required salt. Mix well.
  • Add gram flour/besan in small batches and mix thoroughly without any lumps. Then add roughly crushed roasted peanuts and mix well.
  • Now add half of the bread crumbs and mix well.
  • Cover and keep the mixture in the refrigerator for 10-15 minutes.
  • Add corn flour into a small mixing bowl and add required water to make smooth slurry.
  • After 15 minutes remove the mixture from the fridge. Line a tray with baking paper and keep aside.
  • Grease your palms with oil and divide the mixture into equal parts and make big or small as per your taste. Shape them by flattening in between your palms.
  • Dip the shaped disc into the cornflour slurry and then roll it in the remaining bread crumbs. Keep aside on a plate.
  • Repeat the same process with the remaining mixture.
  • Heat a pan with 2 to 3 tablespoons of oil for shallow frying. Before adding the patties to the pan make sure the oil is hot enough.
  • Carefully add the patties to the pan and fry them on medium flame until they turn golden colour on both sides.
  • Remove them onto kitchen paper to absorb any excess oil.
  • Serve with green chutney or tomato ketchup

10 ounces sweet potatoes, peeled and cut into cubes
10 ounces potatoes, peeled and cut into cubes
2 teaspoons cumin seeds
2 inches cinnamon sticks
6 cloves
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cardamom
2 tablespoons sunflower oil
1 medium onion, diced
1 small red pepper, diced
4 ounces sweet corn
1 tablespoon fresh ginger, grated
1 1/2 teaspoons butter
1 egg, beaten
1/2 cup fresh cilantro, finely chopped
salt & freshly ground black pepper

Steps:

  • Place to potatoes in a saucepan of boiling water and simmer until soft.
  • Meanwhile dry roast the cumin seeds, cinnamon and cloves in a small frying pan until aromatic, remove from pan and grind to a powder.
  • Combine with the remaining spices.
  • Heat the oil in a wok.
  • When hot, add the onion and pepper and fry until soft.
  • Add the sweet corn and ginger, saute for a couple of minutes, and then stir in the spice mix.
  • Fry for 1 minutes and then remove from heat.
  • Drain the potatoes and mash, with knob of butter, until smooth.
  • Then stir in the spice and vegetable mix, the beaten egg, chopped cilantro and salt to taste.
  • Shape the mixture into patties and fry in a non-stick pan with a little sunflower oil until brown on both sides.
  • Serve.

Two 16-ounce 8-count packages frozen sweet potato patties, preferably Bright Harvest or PictSweet Farms
1/2 cup light brown sugar
Freshly grated nutmeg, for dusting
Cinnamon sugar, for dusting
Zest of 1 lemon plus lemon wedges, for spritzing
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with nonstick aluminum foil.
  • Break the frozen patties apart and place on the prepared baking sheet. Divide the brown sugar evenly over each patty. Sprinkle with nutmeg, cinnamon sugar, lemon zest, a pinch of salt and a grind or two of black pepper. Bake until golden around the edges, 20 to 25 minutes. Serve with a spritz of lemon juice.
