Steps:
- In a bowl, mix the prunes and almonds with 1 tablespoon of lemon olive oil.
- Cut a pocket on the side of each pork chop from the fat side to the bone. Season the outside of each chop with salt and pepper, to taste. Stuff each chop with 1/2-ounce of goat cheese, pushing it to the bottom of the opening, then stuff with the prune mixture. Secure with toothpicks.
- Heat the remaining 2 tablespoons lemon olive oil in a large shallow Dutch oven over medium-high heat. Sear the chops on both sides until golden brown. Add water to come 1/4 of the way up the side of chops. Cover and simmer until the chops are cooked, about 15 to 20 minutes. Remove chops to a serving platter and simmer the liquid and any stuffing drippings until reduced to a thick sauce. Pour the sauce over the chops and serve garnished with toasted almonds.

I fell in love with this picture and had to know more. The recipe is to die for but since it contained a large quantity of mushrooms--which I can't stand--I tweaked it a bit. I'm thinking serve this with mashed potatoes and pork gravy. Recipe & Photo: About.com

- 1. In a large skillet, melt butter and saute onion, celery, and pepper until cooked and most of the juices have evaporated. Add parsley and bread crumbs and mix well. Let cool.
- 2. Meanwhile, wash and pat dry chops. Using a boning knife, make a 1-inch slit in the center of each side. Using the knife, widen the pocket but leave the opening only 1-inch wide.
- 3. Stuff the pork chops until they are nice and plump. You will probably have leftover stuffing. Season both sides of chops with salt and pepper and sear in a nonstick pan until nicely browned.
- 4. Place chops in a shallow baking dish and surround with any leftover stuffing. Add 1/4 cup water or stock and bake, uncovered, in a preheated 375-degree oven for 30 to 35 minutes, or until internal temperature registers 150 degrees. Serve with pan juices, if desired. If you want a slightly European meal, serve with sauerkraut and apples.
STUFFED PORK CHOPS

- 1. Make dressing to package directions using the butter, celery, onion and chicken broth, toss together.
- 2. Slit each chop on the rounded side, cut through almost to bone to make a nice deep pocket for the dressing.
- 3. Fill each chop with 1/4 of the dressing, secure with 2 or 3 toothpicks, you will take these out later.
- 4. Put oil in fry pan on med high and brown chops on both sides.
- 5. Place on a foil lined pan (no cleanup) and bake in a 350 degree oven for 45 minutes or chops register 140 degrees in the center.
- 6. You could also put these in your slow cooker and cook on low for 7 to 8 hours as well.
HUNGARIAN PORK CHOPS
Steps:
- Preheat the oven to 350 degrees. Mix the flour, one tbsp of the paprika, salt, pepper, onion powder, dried dill in a paper bag. Shake up the ingredients to mix. Add the chops iand then shake to toss and coat the chops with mixture. Save the bag after. Heat a huge skillet, add 2 tablespoons of butter and when it sizzles add the chops to the skillet. Saute over medium heat until brown on both sides (about 3 minutes per side.) Don't crowd pan while sauteing -- saute in two batches adding more butter if necessary. Remove the chops and place in a large heavy covered Dutch oven. In the skillet, add the remaining two tablespoons butter and then add the onions and garlic, stirring and cooking. When getting soft, add the mushrooms and cook for two minutes. Pour the veggies over the chops in the pan. In the skillet, add the other tablespoon butter and sprinkle with the flour and then sprinkle remaining seasoning left over from paper bag. Using a whisk, Scrape up the bits and mix. Then, add a cup of chicken broth, the wine, the warm water and break up all the loose bits stuck on bottom of pan. Let it simmer for about two minutes. Add the lemon juice. Add the sauerkraut and the other tablespoon paprika to the sauce and stir to combine. Test for seasoning and thickness. If it's too thick, add water or broth, test for saltiness, stir in the sour cream, but don't scream, yourself. Pour mixture over chops, lifting them slightly so everything gets a little sauce! Bake the covered casserole for 1-1/2 hours or until chops are totally tender and falling off bone. Prepare the noodles according to package directions. Toss the noodles with a tablespoon of butter and the poppy seeds. Put noodles on a large serving platter. Spoon a little sauce with onions and mushrooms on the noodles. Place the pork chops on the noodles, in any pattern you'd like. Then pour all the sauce on top of chops and sprinkle with the fresh dill. Serve family style and enjoy!
