Steps:
- Slice through the top 1/3 of each egg, ensuring some of the yolk is included in the slice. Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer to a bowl.
- Mix egg yolks, mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper together in a bowl. Fill a piping bag or a plastic bag with a corner snipped with the egg yolk mixture. Pipe egg yolk mixture into the hollowed egg whites creating the 'chick', ensuring there is enough filling to add 'eyes' and a 'beak.'
- Slice small wedges out of the carrot rounds creating 12 'beaks'. Add a 'beak' to each 'chick'.
- Slice olive pieces into small squares to be used as 'eyes.' Add 2 'eyes' to each 'chick.' Place the egg tops onto each 'chick' to look like a chick peaking out of the egg.

EASTER HARD BOILED EGGS
A Gruszecki tradition and now ours, is that each person gets a colored egg at the beginning of the meal, right after "grace". Each person uses his/her egg to tap on everyone else at the table, while wishing them a Happy Easter. Part of the trick is to be the last one with an egg not crushed. After you smack eggs with everyone at the table, the egg gets peeled and eaten. The following are a few hints that will help you cook the best hardboiled eggs: The fresher the egg, the harder it will be to peal it. You should purchase your eggs 2 weeks before you'll be cooking them in order to get them to peal easy. And, the way to get the yolk to be in the center of the egg after it's boiled, is to store them on their side. This relieves the pressure on the membrane within the egg that holds it suspended. The green coloring on the outside of the yolk is caused by cooking them too long. Cooking by the directions below will eliminate that. Steps:
- Place the eggs in a pot with enough cold salted water to cover.
- Place over high heat and bring to a boil.
- Boil for 5 minutes only, then take off the heat and let the eggs sit in the pot, covered, for an additional 10 minutes.
- You'll get perfect hard boiled eggs using this method, without the outside of the yolk turning green.
- Drain the water out and either run cold water in or use ice cubes.
- If you don't cool them off quickly enough, they will develop a green skin between the yolk and the white.
- Peel the eggs, quarter and plate them.
- You can make these eggs a day or 2 ahead of Easter.
- If you wish to dye them, purchase "Paas" dyes or another edible dye version and follow the package directions.
EASTER HARD-BOILED EGG CHICKS

- Thinly slice 6 circular pieces of carrot. Cut 2 small triangles from 3 of the circular pieces to be head feathers. Cut 1 large triangle from the remaining 3 circular pieces to be the feet. Set triangles aside.
- Slice off the bottom of each egg at the wide end so they can sit upright.
- Place 3 carrot feet on a plate and place an egg on top of each. Slice the top of each egg about 1 centimeter down using a knife. Wedge a head feather into each egg.
- Poke a hole in the front of each egg, aligning with head feather. Wedge a larger triangle into each hole as beaks.
- Poke 2 sunflower seeds into the front of each egg as the chicken's eyes.
- Serve eggs on a bed of kale.

- Cut a thin slice from the bottom of each egg to allow it to stand. Using a paring knife, cut around egg white in a zigzag pattern, about a third way down from the top end. Carefully remove yolks to a small bowl; mash with a fork. Stir in mayonnaise, cheese, onion and seasonings. Spoon into bottom portion of egg whites. Replace tops., Cut each olive into four slices; attach to eggs for eyes. Cut twelve small triangles from red pepper; attach to eggs for beaks. Refrigerate until serving.

- Peel 12 hard-boiled eggs. With a sharp knife, slice off a very thin layer from the base of the egg - this will give it a flat surface to stand on a platter. Cut off a generous top third of the egg. Squeeze around the egg base gently to loosen the yolk and it should pop right out. Keep the lids paired with their bases.
- In a medium mixing bowl, combine 12 cooked yolks and mash well with a fork. Add 1/3 cup mayonnaise, 1 1/2 tsp dijon (or add to taste), 1/4 tsp garlic powder and 1/8 tsp salt, or season to taste. Mash everything together until smooth. Transfer mixture to ziploc or pastry bag and pipe generously into egg bases. Place top 1/3 back over the base and press down slightly to adhere.
- For the eyes, poke through an olive with a plastic straw several times then gently squeeze down the straw and the little circles of olives will pop right out. For the beaks, thinly slice a few rings of carrot and cut each ring into sixths. Insert 2 olive spots for eyes and 2 carrot wedges the beak. Set chicks on a platter and garnish with fresh parsley or dill to give them that "free range" feel.

- Place the eggs in a pot, cover with water and bring to a full boil. Turn off the heat, cover the pot and let stand for 10 minutes. Drain the water and crack the eggs by shaking the pot. Run the eggs under cold water until cool enough to handle.
- Peel the eggs and trim the tops. Remove the yolks to present the eggs upright. You should have 12 upright eggs.
- To the hard-boiled egg yolks, add grated onion, grating directly over bowl to catch the onion juice, garlic, relish, Worcestershire sauce, mustard, hot sauce, salt, pepper, paprika and mayonnaise – a few tablespoons to start – mash to very smooth, adding a bit more mayonnaise if too dry.
