EASTER BUNNY RACERS
I got this from Family Fun, so I can't take all the credit. ha! These are cute for kids and hopefully will pass the "no home-baked goods" rule at school. I used all store-bought items.

Steps:
- Place Swiss Roll on flat surface or plate. Put a dab of chocolate frosting on each lifesaver. Make four "wheels" with lifesavers, and use another for a steering wheel. Split one fudge covered graham cookie in half, cover back side with a little bit of frosting, and use to finish off the front end of the "car". Put a dab of frosting on bottom of the bunny and adhere to top side of the Swiss roll "car".

Steps:
- 1. about 2/3 back on the twinkie cut out a small rectangle to fit in the bunny marshmallow. Do not cut all the way thru the twinkie.
- 2. Cut about a 1/2 inch off the bottom of the bunny so he fits nicely in the opening. Then slide a mini pretzel in front of the bunny. (makes the steering wheel)
- 3. Cut the two regular marshmallows in half. They make the 4 wheels for the race car. Dab a bit of frosting on them to attach to the twinkie (car) and also a dab to hold on the M&M's (hubs)
- 4. Your ready to roll! such an easy little kitchen craft for the young ones to help with.

This is an adorable idea for kids during the Spring/Easter season. They are easy to assemble - the kids can help too!

Steps:
- Unwrap Swiss cake rolls and put on flat surface to work on.
- Place contents of frosting container in quart-sized ziploc bag; press all air out, seal and snip corner off end.
- Cut a shallow V shape in bottom of Peeps so they sit flat on cake rolls.
- Add small amount of frosting to bottom of Peeps and stick on almost to the back of cake rolls.
- Take halved peach gummy slices and add small dabs of frosting to cut end and stick down behind Peep as the "back of the seat".
- Next, add small dab of frosting to Lifesavers and stick down in front of Peep on a slight angle for steering wheel.
- Take 2 matching M&M's and adhere to front of cake roll as the headlights.
- Take 4 matching Spree candies (or equivalent) and use frosting to adhere them two to each long side of cake roll as the tires.
- Repeat with all cake rolls.

- Cut a rectangle out of the top of the round side of the snack cake, starting about a third of the way from the front end of "car." (It needs to be big enough for the bunny to fit into). Use frosting to adhere the bunny peep, mini pretzel "steering wheel," and halved marshmallow "tires" in place. If your cake has plenty of filling, you may not need any frosting to secure the bunny. Decorate the center of the "tires" with M&M's, using a dab of frosting to adhere. Allow time for frosting to set up.

PEEP BUNNY CARS WITH THE BEST HOMEMADE TWINKIES

- Preheat oven to 350°F. Whip up the chocolate cake mix (prepared according to package instructions). Spray the pan with non-stick cooking spray and fill the cavities about halfway. You don’t want it too full or they will puff up too much. Bake at 350°F. for 20 minutes. Let them cool completely, about 30 minutes.
- Meanwhile, make your frosting. Beat softened butter on medium speed with an electric or stand mixer. Beat for 3 minutes until smooth and creamy. Add powdered sugar, cream, and vanilla extract with the mixer running. Increase to high speed and beat for 3 minutes. Add more powdered sugar if frosting is too thin or more cream if mixture is too thick.
- Once the cakes are cooled, trim off the bottoms (see photo). Use a toothpick to create 3 little holes in the bottom of the cake (don't press down too far though, you don't want it to go all the way through the cake). Then pipe the frosting into the 3 holes using a pastry bag fitted with a #21 pastry tip.
