EAST COAST SEAFOOD CHOWDER
This recipe is an adaption of one our neighbor serves on Christmas Eve. I am from the prairies, and the nearly four years spent in the Halifax area were the best. Now that I am back home, I miss it terribly. This recipe helps me feel like I am back there with my friends. I hope you enjoy it as much as we do.

Steps:
- Chop bacon, fry until brown. Drain most of the fat off.
- In the same pan, sauté the onion and celery until tender.
- Add bacon back to the pan.
- Add condensed milk and regular milk.
- Add potato and bay leaf.
- Cube fish and add to the pot.
- Add shrimp, scallops and whatever other seafood you are using.
- Cook on medium heat for about 20 minutes, or until potato is tender and seafood is cooked.
- If there are leftovers, they are best eaten within 2 days.
- Serve with warm buns or biscuits.
- Makes 4 main servings, or 8 appetizer servings.

Steps:
- Preheat a heavy bottomed pot over medium high heat.
- Add bacon and cook slowly until crisp and golden, strain off fat.
- Add butter, diced onions, celery, minced garlic, fresh thyme and bay leaves.
- Sauté stirring occasionally until vegetables are tender but not browned, about 5 minutes.
- Add diced potatoes, clam juice, cream and broth, covering potatoes.
- Increase heat and bring to a simmer, cook 10 minutes, untl potatoes are tender. Carfully add salmon, halibut, and scallops, gently simmering until cooked through, about 2-3 minutes.
- Stir in lobster meat and season to taste with sea salt and pepper.
- Serve garnished with fresh chives and parsley.

- Heat a large pot over medium heat. Add the canola oil carrots, onion, and celery and cook until the vegetables soften and the onions turn translucent.
- Add the butter, poultry seasoning, salt and pepper into the pot. Wait for the butter to melt, then add in the flour and stir until the flour has been completely moistened by the butter. Cook for two minutes or until the roux (butter and flour mixture) turns from white to blond.
- Add the whipping cream and whole milk into the pot, in that order. Heat the dairy, stirring to ensure the roux doesn't stick to the bottom. Let the dairy simmer for ten minutes.

- If using frozen scallops, thaw before cooking. Sandwich fresh or thawed scallops gently between sheets of paper towel to dry the tops and bottoms. The more dry the scallops are the better they will sear!
- Cook the bacon strips in a frying pan until crisp. Place on sheets of paper towel to blot any grease and set aside.
- Keep the pan of bacon grease hot over medium-high heat. Place the thawed and dried scallops in the pan, and cook until golden, about 2 to 3 minutes per side (cooking time depends on the size of your scallops). Set scallops aside.
- Combine water, 1/2 teaspoon of salt, potatoes, and carrots in a large pot. Bring to a boil, reduce heat, and simmer until the vegetables are tender, about 12-15 minutes.
