EAST INDIAN CHEESE LOGS



East Indian Cheese Logs image

This is exotic with the flavors of mango chutney, curry powder, coconut, and peanuts! Prep time includes chilling time.

Number Of Ingredients 10

2 (8 ounce) packages cream cheese, softened
1 cup cottage cheese
1 teaspoon curry powder
1 cup finely chopped green onion
1 cup dry-roasted unsalted peanuts, coarsely chopped
1 cup golden raisin
1/2 cup flaked coconut
3/4 cup mango chutney
1/4 cup flaked coconut, toasted (optional)
mango, slices (optional)

Steps:

  • Combine first 3 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until smooth.
  • Add green onions and next 3 ingredients; beat at low speed until mixed well.
  • Stir in chutney.
  • Cover and chill slightly.
  • Divide cheese mixture in half; shape each portion into a 12-inch log.
  • Wrap in wax paper, and chill 6 hours or until firm.
  • Place cheese logs on a serving tray; if desired, garnish with toasted coconut and mango slices.
  • Serve with toasted pita bread triangles, crackers, or apple slices.

8 ounces Velveeta cheese
8 ounces cream cheese
1/2 cup chopped pecans
1 teaspoon garlic powder
1/4 cup chili powder, maybe more

Steps:

  • Let the cheeses stand on the counter until they're really soft.
  • Mix cheese with garlic powder and pecans.
  • Roll into a ball or a log, and coat with chili powder. Chill and serve with crackers.

1 package (8 ounces) cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup crumbled blue cheese
1 tablespoon butter
1-1/2 teaspoons curry powder
1/2 cup finely chopped pecans
2 tablespoons minced fresh parsley
Assorted crackers

Steps:

  • Beat cream cheese until smooth. Fold in cheddar and blue cheeses. Refrigerate, covered, at least 2 hours., In a small skillet, heat butter over medium heat. Add curry powder; saute 1-2 minutes. Stir in pecans; cook and stir 1 minute. Stir in parsley. Cool slightly. Roll cheese mixture into 2 logs, each about 5 in. long. Roll logs in pecan mixture; refrigerate. Serve with crackers.

1 lb Velveeta cheese
6 ounces cream cheese
1 cup finely chopped pecans
3 garlic cloves, finely minced
1/4 teaspoon Tabasco sauce
2 tablespoons soft butter
1/2 teaspoon Worcestershire sauce
chili powder, for coating logs

Steps:

  • Have all ingredients at room temperature.
  • Mix all ingredients except chili powder with an electric mixer.
  • Form into 2 or 3 logs.
  • Roll in chili powder to coat.
  • Wrap in plastic wrap and refrigerate.
  • Slice and serve on assorted crackers.

Wrapped in coloured Saran Wrap, these make great holiday gifts! Plan ahead these need to chill for a minimum of 8 hours before serving, or they can be made and frozen up to 1 month in advance, Add in one finely chopped green onion also if desired, the pimento is optional but good to add in.

1 (10 ounce) package old cheddar cheese, shredded (use Cracker Barrel extra-sharp cheese if possible for this)
1 (8 ounce) package monterey jack pepper cheese, shredded
1 (8 ounce) package cream cheese, softened
1 -2 teaspoon fresh minced garlic
1 -2 teaspoon Worcestershire sauce
Tabasco sauce or cayenne pepper
2 tablespoons finely chopped pimientos (to taste) (optional)
2 cups finely chopped walnuts (can use more if desired) or 2 cups pecans (can use more if desired)
1/4-1/2 cup finely chopped fresh parsley

Steps:

  • In a bowl mix together the first 7 ingredients until well blended.
  • Divide the mixture in half and shape into logs.
  • In a bowl mix together the nuts with the chopped parsley, then divide mixture evenly in half.
  • Roll each log into the nut/parsley mixture (can use more than 1 cup nuts if desired).
  • Cover with plastic wrap and chill for a minimum of 8-24 hours.
  • To freeze; chill the logs for 8-24 hours, then place in the freezer to freeze until firm, remove then wrap in plastic wrap then tightly in foil, place back into the freezer for up to 1 month.
  • Defrost overnight in fridge before serving.

16 oz philadelphia cream cheese, softened
16 oz velveeta cheese, cubed
16 oz sharp cheddar cheese, cubed
1 clove garlic, minced
1 c finely chopped pecans (or walnuts)
1 pkg ground paprika

Steps:

  • 1. Place cheeses into a large mixing bowl to soften. Add minced garlic and turn mixer on. Mix on slow speed until cheeses are completely blended.
  • 2. Add finely chopped nuts, and mix well. Take a good length of waxed paper and pour a thick line of paprika in the center.
  • 3. This is the MESSY part! Using food service gloves, take a large handful of the cheese mixture and form into a log about 1 inch in diameter and 8 inches long (depending on your hand size - mine are large). Place on top of the paprika and roll back and forth until the log is completely covered in the paprika.
  • 4. Wrap log in plastic wrap tightly, then place into a freezer container or wrap again in aluminum foil. These can be frozen for several months, or placed in refrigerator to firm up.
  • 5. To serve, unwrap frozen or chilled log and place on serving plate. Surround with your favorite crackers and stand back! It will disappear very quickly!

2 (8 ounce) packages cream cheese, softened
1 (8 ounce) package sharp cheddar cheese (get a block and cut it up into small pieces)
2 (4 ounce) packages blue cheese, crumbled
1/2 small onion, diced
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon crushed red pepper flakes
1 1/2 cups pecans, toasted and finely chopped, divided
1 1/2 cups fresh parsley, finely chopped, divided

Steps:

  • Place first 6 ingredients in food processor. Pulse 1-2 minutes. Scraping down sides twice.
  • Mix together cheese mixture, 1 cup of pecans and 1/2 cup parsley. Cover and chill for 1 hour.
  • Shape cheese mixture into 4 7"long logs using saran wrap or wax paper.
  • Combine remaining pecans and parsley on work space. Roll logs in pecan parsley mixture. Cover and chill. Serve with crackers!
