2 c flour
1/2 tsp sea salt
1/8 tsp black pepper, freshly ground
2 tsp baking powder
1 large egg
1/2 c milk
2 - 2 1/2 c clams, minced, reserve juice
oil or fat for frying
sprinkle sea salt

Steps:

  • 1. Heat your oil to 350 - 360 degrees.
  • 2. In a large bowl sift the dry ingredients together.
  • 3. Now combine to the dry ingredients, the milk and clam juice and stir until a smooth batter is achieved.
  • 4. Next gently fold in the clams, making sure to mix well.
  • 5. Drop the batter from a large spoon into the hot fat and fry for about a minute or until it is golden brown on all sides.
  • 6. Remove from fryer, drain and sprinkle with a pinch or two of sea salt.
  • 7. This makes a great snack, it is lovely served with slices of lemon and a choice of red seafood sauce or tarter sauce.

2 (10 ounce) cans minced clams, very well drained (reserve 1/2 cup juice)
2 teaspoons baking powder
2 cups flour
2 eggs, well beaten
1/2 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
oil or fat (for frying)

Steps:

  • Preheat your oil or fat to 360°F.
  • Sift dry ingredients together.
  • Combine dry ingredients, milk and clam juice into a batter that is smooth and free from lumps.
  • Fold in clams, mixing thoroughly.
  • Drop from a spoon into hot fat and fry for about a minute or until golden brown on all sides.
  • Serve with lemon wedges.

2-3 eggs ~ if small
2 c shucked raw clams
1 c all purpose flour
1 c milk
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. Chop clams very fine.
  • 2. Make a batter by beating eggs, add flour gradually. Add milk slowly, salt and pepper, then the chopped clams. Stir all together.
  • 3. Drop by spoonfuls into deep hot fat that will color a 1-inch cube of bread golden brown in 60 seconds (365 degree on fat, thermometer) ; or cook in frying pan holding 1 1/2 inches of hot fat. When brown turn and brown on reverse side.

We had clam fritters every time we went to Rhode Island. I looked for a recipe and finally found this one. Now we have them whenever we want.

Yield 14-16 fritters.

Number Of Ingredients 10

2/3 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (6-1/2 ounces) minced clams
1 egg
3 tablespoons milk
1/3 cup diced onion
Oil for deep-fat frying
Tartar sauce and/or lemon wedges, optional

Steps:

  • In a bowl, combine the flour, baking powder, salt and pepper; set aside. Drain clams, reserving 2 tablespoons juice; set clams aside. In a small bowl, beat the egg, milk and reserved clam juice; stir into dry ingredients just until moistened. Add the clams and onion. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls into oil. Fry for 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve fritters with tartar sauce and/or lemon wedges if desired.

1 ¼ cups finely ground cornmeal
1 (14.75 ounce) can cream-style corn
1 (6.5 ounce) can minced clams, drained
1 small onion, finely chopped
½ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon white sugar
¼ cup milk, or as needed
1 quart vegetable oil for frying

Steps:

  • Mix cornmeal, cream-style corn, clams, onion, flour, baking powder, salt, and sugar in a bowl until batter is thoroughly combined. If batter is too thick, stir in milk, about 1 tablespoon at a time.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Scoop about 1 heaping tablespoon of batter per fritter and gently drop into the hot oil; deep-fry in small batches of 3 or 4 fritters until golden brown, 3 to 4 minutes. Drain fritters on paper towels.

1 1/2 cups cracker crumbs
1 cup minced clams, drained
2 tablespoons minced pimiento
Salt and freshly ground black pepper
2 large eggs, separated
Milk

Steps:

  • In a mixing bowl combine the crumbs, clams and pimiento. Season with some salt and pepper. Stir the yolks into the batter and moisten with enough milk to make a heavy batter.
  • Whip the egg whites until stiff and fold them into the mixture. Drop the batter by spoonfuls onto a non-stick skillet and cook until browned on both sides. Serve over an arugula or sliced tomato salad.

½ cup all-purpose flour
½ cup milk
1 cup minced clams
¼ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons minced onion
2 tablespoons minced green bell pepper
½ cup vegetable oil

Steps:

  • Beat the egg and gradually beat in the flour. Slowly stir in the milk, clams, salt, pepper and onion. If desired, stir in the green pepper. With hands shape mixture into 2 inch diameter patties.
  • In a medium skillet heat the oil over medium-high heat until hot. Fry the patties in the hot oil until golden brown. Place cooked fritters on paper towels to soak up any excess oil.

12 tablespoons (1 1/2 sticks) unsalted butter, divided
2 cups chopped yellow onions (2 onions)
2 cups medium-diced celery (4 stalks)
2 cups medium-diced carrots (6 carrots)
4 cups peeled medium-diced boiling potatoes (8 potatoes)
1 1/2 teaspoons minced fresh thyme leaves (1/2 teaspoon dried)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 quart (4 cups) clam juice
1/2 cup all-purpose flour
2 cups milk
3 cups chopped fresh chowder clams (1 1/2 pounds shucked clams)

Steps:

  • Melt 4 tablespoons (1/2 stick) of the butter in a large heavy-bottomed stockpot. Add the onions and cook over medium-low heat for 10 minutes, or until translucent. Add the celery, carrots, potatoes, thyme, salt, and pepper and saute for 10 more minutes. Add the clam juice, bring to a boil, and simmer, uncovered, until the vegetables are tender, about 20 minutes.
  • In a small pot, melt the remaining 8 tablespoons of butter and whisk in the flour. Cook over very low heat for 3 minutes, stirring constantly. Whisk in a cup of the hot broth and then pour this mixture back into the cooked vegetables. Simmer for a few minutes until the broth is thickened.
  • Add the milk and clams and heat gently for a few minutes to cook the clams. Taste for salt and pepper. Serve hot.
