3 tablespoons butter
3 -4 garlic cloves, chopped finely
1 cup thinly sliced prosciutto
1 (28 ounce) can whole tomatoes, drained and chopped
1/2 cup heavy cream
1/4 cup vodka (only a kind you would drink)
salt and pepper
1 pinch crushed red pepper flakes
1 lb penne pasta
3/4 cup freshly grated parmigiano-reggiano cheese

Steps:

  • In a wide pot big enough to hold all the pasta and sauce, melt the butter.
  • add the garlic and cook until golden brown.
  • stir in the proscuitto and cook for a a minute or two.
  • add the tomatoes, crushed pepper, pepper and salt.
  • simmer for 5 minutes.
  • stir in the cream and cook for 2 minutes stirring alot.
  • add the vodka and cook until it no longer smells strongly of vodka (about 3-5 minutes).
  • cook the pasta as directed on box but al dente.
  • add the pasta to the pot with the sauce and mix until it is all coated over the pasta.
  • toss with the cheese and serve immediately.

LJ's Easy Penne with Vodka Sauce image

This is the best (and easiest) vodka sauce recipe I've found. I've given it out at least twenty times, and everyone raves about it!

3 tablespoons olive oil
1 small onion, chopped
4 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
½ cup vodka
1 (28 ounce) can crushed tomatoes
1 cup light cream
½ cup grated Romano cheese
salt and pepper to taste
1 pound penne pasta

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in the onion and cook and stir until softened, about 5 minutes. Add the garlic and crushed red pepper flakes and cook, stirring, for an additional minute.
  • Stir the vodka, crushed tomatoes and light cream into the onion mixture, turn heat to high, and bring sauce to a boil. Reduce heat to low, stir in the Romano cheese and simmer for 2 hours, stirring occasionally. Season finished sauce with salt and pepper.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Drain well in a colander set in the sink. Transfer pasta to a large bowl and pour vodka sauce over, tossing to coat pasta with the sauce to serve.

1 (28 oz) can San Marzano tomatoes, (crushed finely with hands*)
2 Tbsp extra virgin olive oil
1/2 cup minced yellow onion
3 oz. proscuitto (or pancetta, diced (optional))
1 Tbsp minced garlic ((3 cloves))
Salt and freshly ground black pepper
1/2 cup vodka
1/4 tsp red pepper flakes, (more or less to taste)
2/3 cup heavy cream
1/4 cup finely shredded parmesan cheese, (plus more for serving)
1 Tbsp chopped fresh oregano
1/4 cup chopped fresh basil
14 oz. penne pasta, (plus reserved pasta water for thinning sauce as needed)

Steps:

  • Bring a pot of water to a boil to cook pasta. Season water with salt.
  • Heat oil in a large pot over medium heat. Add onion and prosciutto saute 4 - 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.
  • Remove pan from heat and add tomatoes, vodka, season with salt and pepper to taste. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 minutes**, stirring occasionally.
  • Meanwhile cook pasta according to package directions. Reserve 1/2 cup pasta water and drain pasta.
  • Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan, basil and oregano.
  • Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.

2 tablespoons butter
2 teaspoons garlic (chopped)
1 medium onion (chopped)
1/2 teaspoon crushed red pepper flakes
28 ounce can Italian style whole tomatoes
1/4 cup vodka
1 cup heavy cream
1 cup grated parmesan cheese plus more for serving
salt and pepper to taste
2 tablespoons chopped parsley

Steps:

  • Cook the pasta in salted boiling water according to package directions.
  • While the pasta is cooking, prepare the sauce.
  • Melt the butter in a large saucepan over medium heat. Add the garlic, onion, and red pepper flakes and cook for 45 seconds. Do not burn the garlic.
  • Place the whole tomatoes with the juice in a blender or food processor and puree until smooth. Pour the tomato puree into the pan and stir to mix well.
  • Add the vodka to the pan. Simmer the sauce for 10 minutes over medium-low heat.
  • Stir in the heavy cream, grated parmesan cheese, parsley, and simmer for another 5 minutes or thickened. Season the sauce with salt and pepper to taste.

12 ounces whole-wheat penne
1 28-ounce can whole plum tomatoes
1 tablespoon unsalted butter
2 shallots, minced
1 clove garlic, minced
1/4 teaspoon red pepper flakes
1/2 cup vodka
2/3 cup heavy cream
1/2 cup freshly grated parmesan cheese, plus more for topping
Handful of fresh basil leaves, torn, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta. Empty the tomatoes into a bowl and crush with your hands.
  • Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from the heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.
  • Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.

1 pound penne
3 cloves garlic, minced
1 whole medium onion, chopped finely
3 tablespoons butter
2 tablespoons olive oil
1 cup vodka
One 14-ounce can tomato puree or tomato sauce
1 cup heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/4 to 1/2 teaspoon salt
Freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • Cook the pasta according to package directions.
  • Saute the garlic and onions in 2 tablespoons butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

2 boneless, skinless chicken breasts, cut into bite sized chunks
1/2 cup finely chopped onion
2 garlic cloves, chopped
1/2 teaspoon red pepper flakes (use more or less)
1 and 1/2 cups marinara sauce, I used Prego (tomato, basil and garlic)
1 cup heavy cream
1/4 cup Vodka, plain
1/2 to 3/4 teaspoon salt (I used 3/4 teaspoon)
1/4 teaspoon ground black pepper
1/2 cup grated parmesan cheese
Fresh basil leaves, chopped

Steps:

  • 1. Cook pasta until al dente and drain. 2. Heat a large saute pan over medium heat. Add butter when hot and let melt. Add chicken and spread them into a single layer. Let cook for 2 to 3 minutes (without disturbing). 3. Add onion, garlic, salt, red pepper flakes and black pepper to the chicken, cook, stirring occasionally for about 3 minutes or until chicken is almost cooked and onion is translucent. 4. Stir in marinara sauce, heavy cream and vodka. Cook, stirring occasionally for 7 to 10 minutes or until sauce has reduced slightly and thickened. 5. Stir in cooked pasta, parmesan cheese and basil. Toss well and serve.
