Steps:

  • Arrange chicken, thickest parts to outside edges in glass pie plate, 10x1 1/2 or 9x1 1/4 inches (sides of chicken will touch).
  • Cover dish with plastic wrap, folding back one corner or edge 1/4 inch to vent steam. Microwave on Medium (50%) 14 to 16 minutes or until juice of chicken is no longer pink when center of thickest pieces are cut and temperature reaches 170°. Let stand 5 minutes.
  • Cool slightly; cut into desired size of pieces.

1 can (8 ounces) tomato sauce
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/2 cup cornflake crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley flakes
6 boneless skinless chicken breast halves
1 egg, beaten
2/3 cup shredded part-skim mozzarella cheese

Steps:

  • In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside. , In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes. , Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.

1 tablespoon taco seasoning

Steps:

  • Microwave the tortillas on a plate until slightly crispy. They will dry out a bit as they cool.
  • Mix the chicken, peppers, and taco seasoning in a bowl until evenly combined, then cook for about 1-2 minutes until the peppers are soft.
  • Spread the mixture evenly on one tortilla, cover evenly with the cheese, then top with the other tortilla.
  • Cook for another 30 seconds to 1 minute, slice, then serve.

8 chicken thighs (or equivalent other parts)
1-1/2 cup favorite BBQ sauce

Steps:

  • Remove skin and excess fat from chicken pieces, leaving only half the soft fat along the edge of the thighs for moisture.
  • Place in glass microwave safe bowl - and cover. Place in microwave for 20 minutes on medium high. Remove from microwave and drain off liquid (fat) from chicken.
  • Pour in BBQ sauce and stir until fully coated. Place in microwave for 15 minutes. Remove from microwave and stir until fully coated again. Replace in microwave for additional 10 minutes, and you're done!
  • Remove from microwave and test for doneness. If not totally cooked, microwave additional 5-10 minutes depending on part of chicken you use.

Yes, this seems weird. But it DOES work! Try this method of cooking for use in salads or any dish that calls for cooked chicken. It makes moist, flavorful meat -- the flavor isn't all boiled out into the broth, and it doesn't get the sort of carmelized flavor of roasting, which I don't care for in a chicken salad. If you do Once-A-Month Cooking, this is a great way to prepare a lot of chicken for the freezer. The 90 minute cooking time is actually 60 minutes of standing after (approximately) 30 minutes to boil the water twice.

Steps:

  • Fill a very large pot with water, enough to cover the chicken completely. You want a LOT of water. An 8 quart pot at least is best for ONE chicken or about 3 pounds of parts WITH bones. I do NOT recommend for boneless chicken, as the heat will not be able to penetrate the big pile of meat at the bottom of the pot.).
  • Do not put the chicken in yet.
  • Bring to a boil.
  • Now put in the chicken.
  • As soon as it STOPS boiling, take out the chicken.
  • Return the water to a boil, then put the chicken back in and cover tightly.
  • Turn off the heat but leave the pot on the burner.
  • Leave it untouched for exactly ONE HOUR.
  • Remove chicken from water.
  • Let it cool just enough to handle, then debone your chicken.
  • I've been making it this way for about 16 years now.
  • You can use a whole chicken or parts.
  • The large volume of water is important: I use a 15 quart stock pot, and do 2 chickens at one time.
  • (then I save the skin& bones up in the freezer until I have a bunch, and use them to make broth).

It's very popular on allrecipes.com because it makes perfectly moist and delicious chicken every time, pretty much with no effort. It's even great made with one bouillon cube,no butter, and just a sprinkling of garlic salt--that's how I always make it, in an effort to make it even healthier.

2 cups water
2 chicken bouillon cubes
1/2 cup butter
1 tablespoon dried Italian seasoning (optional)
1/2 teaspoon dried dill weed (optional)
1 teaspoon garlic salt (to taste)
4 boneless skinless chicken breast halves

Steps:

  • Pour the water into a microwave-safe casserole dish, and place in the microwave. Heat until boiling, about 2 minutes. Stir in bouillon cubes, butter, italian seasoning, dill, and garlic salt.
  • Pierce the chicken breasts with a fork on one side, and place the pierced side down in the casserole dish. The chicken should be almost covered by the liquid, if not completely covered.
  • Cover the dish, and cook in the microwave for 10 minutes, or until chicken is no longer pink, and juices run clear. If the chicken is not done after the 10 minutes, continue to cook at 1 1/2 minute intervals.
