Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover the saucepan with a lid and steam cauliflower until tender, 10 to 12 minutes.
- Melt butter in a large pot over medium heat. Whisk flour into melted butter; cook, stirring constantly until raw flour taste cooks off and mixture darkens, 3 to 4 minutes.
- Gradually whisk milk into butter mixture; cook, stirring constantly, until sauce thickens, about 8 minutes. Remove pot from heat; stir in Cheddar cheese. Season sauce with salt and white pepper.
- Stir steamed cauliflower into cheese sauce; season with salt and white pepper.

EASY CHEESY CAULIFLOWER
I adapted this recipe years ago from an old microwave cookbook. My children were young then and loved it. It is still one of their most requested recipes for family get togethers. The amounts can be adjusted to suit your taste. If you have a nice microwave safe dish, this makes a beautiful presentation straight to the table.

Steps:
- Place cauliflower in a deep microwave safe dish that has a lid or can be covered with plastic wrap.
- Mix together mayonnaise, mustard, Nature's Seasons, and 1 cup of cheese.
- Spread over cauliflower, covering completely. Use it all.
- Top with remaining cheese.
- Cover and microwave on 50% power for 10 minutes.
- At this point you can top it with seasoned bread crumbs, if you choose.
- Then microwave on high for about 5 minutes.
- Let sit in microwave, covered, for 5 minutes.
- Carefully remove the lid or plastic wrap (hot steam will escape). And serve.

EASIEST CHEESIEST CAULIFLOWER
This is the easiest recipe imaginable. It may be one of the reasons that Velveeta was invented. It's also low carb and delicious. What else do you need? I've never seen this serve more than four people, two in my household.

Steps:
- Wash the cauliflower and break into florets.
- Steam until still crisp, but just starting to soften.
- Drain well (let sit in colander for 5 mins.) and place in an ovenproof dish.
- Pour the cream into the bottom of the dish.
- Place enough cheese slices to completely cover on top of the cauliflower.
- Place in the oven, uncovered with whatever else you are making (or at 350-400 degrees) and bake for 15 minutes, stirring every five minutes.
- If the resulting sauce seems too thick, add an extra splash of cream, if too runny, let sit a few minutes.

Steps:
- Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
- Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
- Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
- Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
- Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
- Put in the oven and bake for 20 mins until bubbling.

CHEESY CAULIFLOWER
I originally got this recipe out of a Taste of Home book years ago and have been making it ever since--and always at Thanksgiving. It can be dressed up to look as elegant or plain as you want to, and only takes about 18 minutes to make--start to finish. It is my 6 year olds most requested vegetable and always a hit. Ingredient amounts are just approximates, as I usually just make it by sight. Adjust as needed to your own taste.

Steps:
- Place trimmed head of cauliflower in microwave dish with 1 tbsp water. Cover and Microwave on high approximately 10-12 minutes or until tender. Drain.
- Meanwhile, mix mayo and mustards in separate bowl until it suits your taste.
- When cauliflower is done, spread mayo/mustard mixture all over the top so it covers most of the cauliflower.
- Sprinkle with cheddar cheese and microwave approximately 1 minute more, or until cheese melts.
- ENJOY!
- This also works well with a bag of frozen cauliflower -- Just mix the mayo/mustard with the COOKED/DRAINED cauliflower, sprinkle with cheese and microwave 1 minute more.

- Preheat the oven to 425 degrees F (220 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover, and steam until tender, 8 to 10 minutes. Drain and let cool 10 minutes.
- Combine mozzarella cheese, sour cream, mayonnaise, 1/2 the bacon bits, and chives in a large bowl. Add cauliflower; mix well. Pour mixture into a baking dish. Sprinkle remaining bacon bits and Cheddar cheese on top.
- Bake in the preheated oven until cheese is melted and golden brown, 15 to 20 minutes.

- Prep cauliflower by removing outer green leaves and then cut head into quarters. Put each quarter head down and at a 45º angle and slice into the smaller stems around the cauliflower into florets. Add florets into a large bowl, drizzle with oilve oil and mix well.
- In a small bowl mix paprika, garlic powder, onion powder, salt, and pepper. Sprinkle on cauliflower and mix well.
