BEST TOFFEE EVER - SUPER EASY
Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

- Preheat oven to 325 degrees F (165 degrees C). Grease a baking sheet. Line baking sheet with saltine crackers, edges touching.
- In a medium saucepan, combine butter and brown sugar and cook until mixture reaches 235 degrees F (112 degrees C) or a small amount of mixture dropped into cold water forms a small ball that flattens when placed on a flat surface. Pour mixture over crackers and spread evenly.
- Bake in preheated oven 15 minutes. Sprinkle chocolate chips over hot toffee. When chips turn glossy, spread evenly with spatula. Sprinkle with almonds. Freeze 20 minutes before serving.

Buttery Toffee Cookies are easy to make. Full of toffee bits and mini chocolate chips for great English toffee flavor.

- Whisk together the flour, baking soda, cornstarch, and salt until well combined. Set aside.
- In a large bowl, beat together the butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract and beat to combine.
- Add the dry ingredients and mix until well combined. NOTE: the dough will be thick.
- Fold in the mini chocolate chips and toffee bits.
- Use a tablespoon or 1 tablespoon cookie scoop to scoop out balls of dough. Roll the balls between your hands to smooth them, then place the balls on a plate or baking sheet and chill for at least 2 hours.
- When ready to bake, preheat the oven to 350 degrees. Line a baking sheet with parchment paper and place the dough balls two inches apart on the prepared pan.
- Bake in the preheated oven for 10 to 12 minutes, until the edges are just beginning to brown.
- Allow the cookies to cool for 5 minutes on the pan, then transfer to a wire cooling rack to cool completely.

- 1. Preheat the oven to 375°F. Butter a 9 x 13 pan.
- 2. Place butter and brown sugar in a medium saucepan and bring to a boil. Stir in 2 cups of the nuts reserving 1/2 cup for topping. Pour into prepared pan and bake 15 minutes.
- 3. Sprinkle with the chocolate chips and let melt. Spread melted chips over the surface of the baked mixture. Sprinkle with the remaining nuts. Let cool and break into bite sized pieces. Store in airtight container in a cool place.

Stirring too quickly or too often can cause the toffee to separate. Moderate the heat as needed - turn it down if the toffee is boiling or cooking too fast so it doesn't burn.
- Cook until the toffee registers 285-290 degrees on an instant-read or candy thermometer and is deep amber brown in color, about 20-25 minutes.
