EAST AFRICAN FISH STEW

East African Fish Stew image

Use any firm fish here, and whatever shrimp or crab you have available. I like making a fish stock from the heads and bones of the fish I am using, but you can skip that and use chicken stock instead, or even water. Use coconut water for the water in the stew if you can get it, otherwise just skip it. Serve this fish stew with rice.

Provided by Hank Shaw

Categories     Soup

Time 1h

Number Of Ingredients 19

2 to 4 pounds fish heads and bones, gills and guts removed
2 quarts coconut water or just plain water
1 cup chopped onion
2 celery stalks, chopped
2 carrots, chopped
3 bay leaves
A 1-inch piece of ginger, chopped
2 tablespoons red palm oil, peanut oil or vegetable oil
2 cups chopped onion
1 8-ounce can tomato sauce
1 to 2 tablespoons curry powder
1 large potato, peeled and cut into 1-inch chunks
2 sweet bell peppers, diced
2 plum tomatoes, diced
1 to 2 habanero chiles, minced ((optional))
1 cup coconut milk
1 pound fish, skinless and boneless, cut into 1-inch chunks
1/2 to 1 pound peeled shrimp or crabmeat
1/4 cup chopped cilantro

Steps:

  • In a large, heavy pot like a Dutch oven, heat the oil over medium-high heat and saute the onions until soft, but not browned.
  • Add the tomato sauce, curry powder and potatoes and stir well. Pour in about 6 cups of the broth you just made, or chicken stock. Bring to a simmer and taste for salt. Simmer gently until the potatoes are almost tender, about 20 minutes.
  • Add the sweet peppers, the chiles, the diced tomato and the coconut milk. Stir well and simmer gently for 10 minutes.
  • Add the fish and shrimp and simmer until the shrimp are nice and pink, about 5 to 10 minutes. Add the cilantro, cook another minute, then serve.

LIGURIAN FISH STEW

Ligurian Fish Stew image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h17m

Yield 4 to 6 servings

Number Of Ingredients 14

1/3 cup extra-virgin olive oil, plus extra for drizzling
1 medium carrot, peeled and chopped into 1/2-inch pieces
1 onion, chopped
2 cloves garlic, chopped
Kosher salt
3/4 cup white wine, such as Pinot Grigio
1 (28-ounce) can crushed or pureed Italian tomatoes (recommended: San Marzano)
1 cup water
1/2 teaspoon red pepper flakes, plus extra for garnish
1 1/2 pounds whitefish fillets, halibut, cod or arctic char, skinned and cut into 3/4-inch chunks
1/4 cup chopped fresh flat-leaf parsley
1 (1-pound) loaf ciabatta or rustic bread, trimmed and cut into 3/4-inch thick slices
Olive oil, for drizzling, plus 3 tablespoons
1 garlic clove, halved

Steps:

  • For the stew: In a 6-quart, heavy bottomed stock pot or Dutch oven, heat 1/3 cup of oil over medium-high heat. Add the carrot, onion, and garlic. Season with salt and cook, stirring frequently, until the vegetables begin to soften, about 5 to 8 minutes. Turn the heat to high. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Cook until most of the liquid has evaporated, about 5 minutes. Add the tomatoes, water and red pepper flakes. Reduce the heat and bring the mixture to a simmer. Cover and cook until the vegetables are tender, about 18 to 20 minutes. Season the fish with salt and add to the stew. Cook, stirring occasionally, until cooked through, about 5 to 8 minutes. Season the stew with salt, if needed.
  • For the Crostini: Put an oven rack in the center of the oven and preheat the oven to 375 degrees F.
  • Arrange the bread slices in a single layer on a baking sheet and drizzle with olive oil. Bake until light golden, about 12 minutes. Cool for 2 minutes. Rub the warm toasts with the cut side of the garlic.
  • Ladle the stew into serving bowls and garnish with parsley. Drizzle with olive oil and sprinkle a few red pepper flakes on top. Serve with the crostini.

  • Place 2 tablespoons of flour onto a plate, season the flour with salt, pepper, and cumin. Dredge the fish in the seasoned flour mixture until it's lightly coated. If you are gluten-free, you can sub corn starch or gluten-free flour, or skip the flour and season the fish without it. The flour adds thickness to the stew.
  • Heat a stockpot over medium heat and add olive oil. Add the seasoned cod to the pot and cook about 3 the fish minutes on each side, just until browned. Remove the fish from the pot and place it on a plate until later. Note - the fish may stick to the pan, but that's ok, just remove what you can and eave the remaining brown bits as they add flavor to the stew.
  • Add onions, garlic, carrots, and peppers to the stockpot and cook until translucent and slightly soft, stirring often for about 6 minutes. You can add extra olive oil if needed for this step. Add salt, pepper, cumin, and oregano and stir to combine. Add canned tomatoes and 3 cups of water (or seafood stock/vegetable broth) to the pot. Add potatoes to the pot as well. Bring to a boil, then reduce to a simmer.
