These are a classic Rhode Island treat. So delicious in a soft sub-roll with a little salt on top. My toddler loves to dip chips in it too. This can also be cooked in a slow cooker.

Steps:
- Heat the oil in a saucepan over medium-high heat; cook the onion in the hot oil until tender, about 5 minutes. Add the ground beef, bell peppers, tomatoes, tomato sauce, tomato paste, and red pepper flakes to the saucepan; stir.
- Reduce heat to medium-low; simmer until the peppers are soft and the beef is tender, 4 to 6 hours.

DYNAMITE ORANGE-ALMOND SALAD
Found this in the book At Home Cafe. I have modified it a little. It is great if you add crumbled blue cheese, mushrooms, shredded chicken and dried cranberries on top also. You can glaze the almonds and dressing ahead to save time.

Steps:
- For dressing, combine first seven ingredients (from salt through parsley). Whisk until well blended.
- For glazed almonds, combine almonds and sugar in a small skillet. Heat on low and stir constantly until sugar is dissolved and almonds are well coated. Sugar can caramelize quickly and burn--watch closely.
- Pour onto waxed paper to cool.
- Once cooled, break into small pieces.
- To serve the salad, combine greens, onions and mandarin oranges into a large salad bowl. Pour dressing over the salad and toss to combine.
- Sprinkle glazed almonds on top and serve.

- COOK VERMICELLI NOODLES: according to package directions. Some just have to be softened in hot water. Drain and rinse under cold water to remove starch. If making ahead, I toss with a teaspoon vegetable oil to prevent sticking.
- MAKE SAUCE: Whisk together all ingredients. Taste and adjust adding more sweetness, spice, lime, etc. You may not need all the sauce. If you have leftovers, use on salads, veggies, etc.
- COOK SHRIMP: Optional - use a tablespoon or two of sauce to marinate the shrimp for 10 minutes. To GRILL: heat grill to medium-high, about 450F. Thread shrimp on skewers if desired (if using wood skewers, soak them for 20 minutes). Grill for 1-2 minutes per side depending on size of shrimp. Cut into chunks. To BAKE: Heat oven to 450F and bake for 5-6 minutes until shrimp are just no longer translucent.
- ASSEMBLE: Divide noodles between 2 bowls. Add veggies, herbs, shrimp. Drizzle with 1-2 tablespoons of sauce. Garnish with chopped nuts and lime wedges/and or bean sprouts if desired. Serve hot or cold. Serving alternatives: 1) Place everything out in separate bowls and let people make their own. 2) Or toss everything together in one bowl, then divide into serving portions (easiest way).
