CHEESY HAM AND POTATO CHOWDER
Steps:
- In a large dutch oven, combine chicken broth, potatoes, carrots, celery, onion, parsley flakes, and frozen corn. Bring to a boil and cook until vegetables are tender.
- In a separate bowl, combine flour, cornstarch, and 2 cups of half and half. Stir slurry into cooked vegetable mixture.
- In a separate saucepan over medium, heat remaining 4 cups of half and half. Stir in Velveeta and shredded cheddar cheese. Stir continuously until cheese are melted.
- When cheese is melted add to cooked vegetable mixture. Stir to combine.
- Add ham and diced bacon to soup. Salt and pepper soup to taste.
- Notes: This soup fills one large crockpot or slow cooker. Doubling this recipe to feed a crowd will fit into a medium sized roaster with plenty of room to stir.

- In a dutch oven or large soup kettle cook bacon over medium heat until crisp.
- Drain.
- In the leftover drippings, saute onion and carrots until tender.
- Stir in flour until blended.
- Gradually add milk and water.
- Bring to a boil.
- Cook and stir for 2 minutes or until thickened.
- Add the potatoes, corn, bouillon and pepper.
- Reduce heat, simmer, uncovered for 20 minutes or until potatoes are tender.
- Add cheese and ham.
- Heat until cheese is melted.
- Stir in bacon.

- 1. Place a 5 quart Dutch oven over medium high heat. Add the butter, oil, onion, celery, salt and pepper. Cook for 3-4 minutes, stirring often, until vegetables just start to soften.
- 2. Meanwhile, in a small bowl, whisk together the flour and the 1/2 cup of milk. Mix well to break up any lumps. Set aside.
- 3. Add the remaining milk and half & half to the Dutch oven. Mix well and heat thru, stirring often. Add the flour mixture and cook over medium high heat until thickened, stirring often to avoid sticking and burning.
- 4. Add the ham flavoring, potatoes, ham, cheese, eggs and parsley flakes. Mix well.
- 5. Bring to a simmer and cook an additional 6-7 minutes, stirring often, to heat through.
- 6. Serve garnished with shredded cheese and/or dried parsley flakes.
EASY CHEESY HAM CHOWDER
I don't remember where this recipe came from but we really enjoy a hot bowl of this filling chowder on cold days. It is real easy to put together, filling and yummy! Not to mention a great way to use up leftover ham!
