Baked chicken spaghetti is an easy dinner casserole. Tender pieces of chicken tossed with tender noodles and a creamy tomato sauce.

4 quarts of water
1 tablespoon kosher salt (for seasoning pasta)
1 pound spaghetti
2 tablespoons olive oil
1/2 cup finely chopped yellow onion
1 tablespoon minced garlic
1 teaspoon Italian seasonings
2 cups marinara sauce (store-bought or homemade)
½ cup heavy cream
2 cups shredded chicken (cooked)
1 1/2 cups shredded mozzarella cheese
½ cup shredded parmesan cheese
1 tablespoon chopped parsley

Steps:

  • Set the oven rack to the middle position-Preheat the oven to 375°F (190ºC).
  • In a large pot, bring water to a boil. Add the salt, stir to dissolve. Add in the spaghetti, cook according to package directions until al dente, about 10 minutes. Drain the noodles in a colander, and rinse with cool water for about 30 seconds to stop the cooking.
  • Heat olive oil in a large skillet or dutch oven over medium-low heat. Add the onion, garlic, and 1 teaspoon Italian seasonings, sauté until onions are translucent, about 3 minutes.
  • Add the marinara sauce, stir to combine. Cook until the sauce is hot, about 2 to 3 minutes. Turn off the heat and stir in the heavy cream. Season the sauce with more salt and pepper to taste.
  • Add the drained spaghetti to the sauce, stir to combine. Add the shredded chicken and mix. Transfer the pasta to a 13x9-inch baking dish.
  • Sprinkle the pasta with the shredded mozzarella and parmesan.
  • Cover with foil and bake until the cheese melts and the pasta is hot, about 15 to 20 minutes. For a more browned surface, remove the foil, and broil the casserole until lightly browned, about 2 to 5 minutes.
  • Garnish with chopped parsley, and serve immediately.

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection).
  • Place a rack on a tray, and spray the rack with oil.
  • Place Meatball ingredients in a bowl, mix well. Scoop up a heaped tablespoon, roll into a ball and place on the rack. Repeat with remaining mixture - should make 25 - 30. Tip: spray hands with oil or wet lightly with water.
  • Spray each ball well with oil, then bake for 25 minutes until golden brown. Give 'em a squeeze and you'll see how soft they are!

1/2 medium onion, chopped
2 garlic cloves, minced
1 can (8 ounces) tomato sauce
3 cups uncooked penne pasta
1 cup beef broth
3 cups water

1 tablespoon Italian seasoning
1 package (5 ounces) fresh spinach

Steps:

4 bone-in chicken thighs with skin
1 teaspoon Italian seasoning, or to taste
salt and ground black pepper to taste
1 dash balsamic vinegar
1 pound Italian sausage
1 (8 ounce) package sliced fresh mushrooms
1 (24 ounce) jar spaghetti sauce
1 pound spaghetti
2 cups shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place a rack in the middle of the oven.
  • Heat a 6 1/2 quart Dutch oven on the stove over high heat. Sear chicken thighs, skin-side first, in the hot Dutch oven, flipping over halfway, until browned, 6 minutes. Season with Italian seasoning, salt, and black pepper. Transfer chicken to a plate, skin-side down. Drizzle vinegar on top.
  • Add sausage and mushrooms to the Dutch oven over medium-high heat. Cook until sausage is browned, 3 to 5 minutes, adding a little vinegar if the pan is too dry. Drain and discard grease. Pour spaghetti sauce into the Dutch oven and stir. Return chicken to the Dutch oven, skin-side up, leaving skin exposed above the sauce. Cook until sauce begins to bubble, 3 to 5 minutes.
  • Transfer Dutch oven to the preheated oven and bake 30 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until partially cooked, about 4 minutes. Drain and rinse with cold water to stop the cooking process.
  • Remove Dutch oven from oven and add cooked spaghetti noodles on top. Use tongs to pull chicken thighs above the noodles and to push noodles down into sauce. Top everything with shredded Italian cheese blend and return Dutch oven to the oven for 10 minutes more. Turn on the broiler and broil 5 minutes.
  • Remove Dutch oven and let cool about 10 minutes before serving.

Sausage and peppers is a dish that takes me down memory lane: my mom and I make it every year in a big batch for family reunions. One year when we had leftovers, I realized that adding the slow-cooked sweet peppers and onions to tomato sauce gave it so much great flavor and a natural sweetness - no sugar needed. That, combined with my constant need to get ahead on meal prep, led me to develop this recipe. By assembling the dish the day before, you can avoid having to boil the pasta and instead let it sit in the sauce overnight to soften and absorb all that flavor. In the end, you'll have a delicious pasta bake ready to pop into the oven when you're ready for dinner. Plus, you can make a big batch of the tomato sauce to freeze along with any leftovers, making it truly the dish that keeps on giving.

1 to 2 tablespoons extra-virgin olive oil
1 pound Italian sausage, a mix of sweet and spicy, casings removed
2 red bell peppers, seeds and ribs removed, thinly sliced (about 2 cups)
2 yellow bell peppers, seeds and ribs removed, thinly sliced (about 2 cups)
1/2 medium or 1 small yellow onion, finely diced (about 1/2 cup)
4 cloves garlic, minced (about 1 tablespoon)
Kosher salt
3 tablespoons tomato paste
One 28-ounce can tomato puree
2 teaspoons red wine vinegar
1 teaspoon dried oregano
1 sprig fresh basil, plus more for garnish
1 pound rigatoni
1 cup ricotta
1/4 cup grated Parmesan, plus more for garnish

Steps:

  • Heat a 4 1/2-quart Dutch oven over medium heat. Add 1 tablespoon of the oil and heat until hot, about 1 minute. Break up the sausage into small pieces, add to the Dutch oven and cook, without stirring, until the sausage is caramelized on the bottom, about 2 minutes. Begin to break up the sausage into smaller pieces with a wooden spoon and continue to cook, stirring often, until caramelized all over, cooked through and broken into 1/2-inch pieces, another 4 to 5 minutes. Transfer the sausage to a paper towel-lined baking sheet and set aside.
  • If the Dutch oven is dry, add 1 tablespoon oil if needed and immediately stir in the peppers and onions. Reduce the heat to medium low and cook, stirring often, until the vegetables are very soft, about 10 minutes; the vegetables should not take on much color besides what comes from scraping the bottom of the pot to coat them in the sausage flavor.
  • Stir in the garlic and 1 1/2 teaspoons salt and cook until the garlic just begins to toast and become fragrant, about 1 minute. Add the tomato paste and cook, stirring constantly, until the paste coats the vegetables, toasts slightly and becomes a darker shade of red, about 2 minutes. Add the tomato puree, red wine vinegar, dried oregano, basil and 4 cups water. Stir the sauce together and season with additional salt to taste; make sure the sauce is well seasoned since it will season the pasta as well.
  • Stir in the rigatoni and bring to a simmer, about 5 minutes. As soon as you see the first few bubbles, simmer for 1 more minute, then remove from the heat. Stir in the reserved sausage. Carefully ladle the mixture into a 9-by-13-inch baking dish. Discard the basil. Cool to room temperature, then cover and refrigerate overnight, at least 8 hours. The pasta will soften as it sits in the sauce.
  • When ready to bake, remove the baking dish from the refrigerator and uncover. Preheat the oven to 375 degrees F.
  • Dollop the ricotta in 2- to 3-tablespoon mounds over the top of the dish and sprinkle with the Parmesan. Bake until bubbling around the edges and the ricotta begins to brown on top, 45 to 50 minutes. Let cool for 10 to 15 minutes, then garnish with basil leaves and more Parmesan.
