Time 1h20m

Yield 36

Number Of Ingredients 12

2 ½ cups all-purpose flour
1 teaspoon salt
1 cup butter
1 egg yolk
⅔ cup cold water
1 cup cornflakes cereal
10 apples - peeled, cored and sliced
¾ cup white sugar
2 teaspoons ground cinnamon
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon almond extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a cup, beat egg yolk, stir the cold water into the yolk. Gradually stir the egg mixture into the flour mixture until dough can be packed into a ball. On a clean dry surface, roll out 1/2 of the dough large enough to cover the bottom and sides of a 9x13 inch pan. Lay the dough in the pan.
  • Place the cornflakes over the dough in the pan. Arrange apple slices over the top of the corn flake layer. Sprinkle the sugar and cinnamon over the apples. Roll out the second half of the dough to cover the entire pan. Lay over the filling and pinch the edges of the two crusts together. Beat the egg white until foamy, and brush onto the top crust.
  • Bake for 45 to 50 minutes in the preheated oven, until golden brown. Drizzle with glaze while still warm.
  • To make the glaze: In a small bowl, beat the confectioners' sugar with the milk and almond extract until smooth.

Categories     Bar Cookie

Time 2h2m

Yield 24 bars

Number Of Ingredients 20

1 1/2 cups unbleached all-purpose flour
3/4 teaspoon salt
1/2 cup unsalted butter
1 large egg, beaten
2 tablespoons ice water
2 tablespoons unbleached all-purpose flour
1/2-3/4 cup sugar (depends on tartness of apples and personal preference)
nutmeg (a pinch)
1/2 teaspoon cinnamon
1/4 teaspoon salt
5 -6 cups peeled cored diced apples (Granny Smith)
2 teaspoons vanilla extract
1/2 cup heavy cream
1 1/2 cups unbleached all-purpose flour
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 425°; lightly grease a 13x9 inch pan.
  • Crust: in a mixing bowl, whisk together the flour and salt; using a pastry blender, cut in the butter.
  • Drizzle the beaten egg over the mixture; toss lightly to combine.
  • Add the ice water 1 tablespoons at a time, stirring gently until the dough starts to clump together; grab a fistful; if it sticks together easily, you have added enough water.
  • Roll the dough into a generous rectangle to fit your pan.
  • Place the dough in the pan; prick it all over with a fork; bake it for 10-12 minutes, until it is set and barely starting to harden.
  • Filling: in a bowl, whisk the flour, sugar, spices, and salt together; add in the apples, tossing to coat.
  • Stir in the vanilla, then the cream; spread the filling over the crust.
  • Topping: in a mixing bowl, whisk together the flour, sugar, salt, and cinnamon.
  • In another bowl, combine the melted butter and extracts; pout over the flour mixture.
  • Stir until the butter is absorbed and the mixture forms fairly even crumbs; sprinkle over the filling.
  • Bake for 15 minutes; decrease temperature to 350°; bake for 30-35 minutes, or until the topping is brown and the filling is bubbly.
  • Remove from oven and cool on a rack; let them cool to lukewarm before cutting.

EASY APPLE PIE BARS

Easy Apple Pie Bars image

Easy Apple Pie Bars have all the flavors of a traditional apple pie with out all the work! Sweet vanilla cake is topped with store-bought apple pie filling, then topped with the remaining vanilla batter. Right before serving drizzle with a little Powder Sugar Glaze for a show stopping dessert. These are excellent served warm with a little vanilla ice cream.

Provided by Susie Weinrich

Categories     Dessert

Time 40m

Number Of Ingredients 10

1 cup butter, softened ((I have used melted butter in a pinch))
1 1/2 cup sugar
4 eggs
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
1 21oz. can apple pie filling
1/4 tsp cinnamon
1/2 cup powder sugar
1 ½ tbsp milk (or water) (approx, add milk or water until you have a consistency that can be drizzled. Start with 1 1/2 tbsp)

Steps:

  • Preheat the oven to 350 degrees. Prep a 9x13 baking pan by greasing the bottom with oil or non-stick spray.
  • In a large mixing bowl, with a hand mixer, cream the butter, sugar, and vanilla together. Add the eggs one at a time, mixing them in one at a time.
  • Sift the flour and baking powder into the butter/sugar mixture. Mix until the flour is completely incorporated.
  • Pour 2/3 of the batter into the bottom of the prepared 9x13 baking dish, make sure it is spread evenly in the pan. Pour the apple pie filling over the batter, sprinkle with cinnamon. Dot the top of the apples with the remaining batter.

  • Preheat oven to 300 degrees F. Line an 8x8" square pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil liberally with cooking spray; set aside.
  • First, make your shortbread crust. Combine the melted butter, sugar, vanilla, salt, and flour in a medium bowl until a soft dough comes together. Press the shortbread crust into the bottom of the prepared pan. Bake for 15 minutes. Remove from the oven, but keep the oven on and increase the oven temperature to 350 degrees F.
  • While the crust pre-bakes, combine your apple filling ingredients into a medium bowl and toss to coat. When crust finishes pre-baking, top the crust with the apple mixture. It may seem like a lot of apples, but they will cook down some. Try to move the apple slices around to fill in any gaps and make an even layer of apples.
  • Next, make the crumble. Combine the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the cold, cubed butter with two forks or a pastry blender until the mixture resembles coarse, pea-size crumbs. Crumble the mixture evenly over the top of the apple layer.
