2 eggs
3/4 cup sugar
4 tablespoons butter melted and cooled
1 1/2 cup milk
2 cups flour
1 cup yellow cornmeal
1 tablespoon baking powder

Steps:

  • Mix all ingredients together. Bake in preheated 425 degree oven for 10 to 12 minutes

1/4 cup unsalted butter, melted, plus more, room temperature, for baking pan
1 cup yellow cornmeal
1 cup all-purpose flour, (spooned and leveled)
1/4 cup sugar
1 1/2 teaspoons baking powder (for a fluffier cornbread, add 1/2 teaspoon baking soda)
1 1/2 teaspoons coarse salt
1 cup low-fat buttermilk
2 eggs

Steps:

  • Preheat oven to 400 degrees. Butter a 9-inch square baking pan. In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda (if using), and salt. In a medium bowl, whisk together buttermilk, butter, and eggs (mixture might appear curdled). Add to flour mixture and stir just until combined (do not overmix). Transfer to baking pan and smooth top.
  • Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Let cool on a wire rack 15 minutes before serving.

This recipe comes from The Durgin-Park Cookbook. Durgin-Park is a famous Boston restaurant. "Thick, yellow squares of cornbread arrive at the table before every Durgin-Park meal. It is grainy and rough-textured, moist and slightly sweet. Sturdy enough to smear with butter. The secret is mixing it by hand.....a machine makes it too fine, and you end up with cake."

8 teaspoons baking powder
2 large eggs
2 1/2 cups milk

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large mixing bowl mix the flour, cornmeal, salt, sugar, and baking powder.
  • Beat the eggs and add to the dry ingredients alternately with the milk.
  • Mix by hand.
  • DO NOT USE A MIXER.
  • Pour the mixture into an 11 x 13-inch baking dish and bake for 35 to 40 minutes.
  • Cut into squares and serve hot.
