- Preheat oven to 400 degrees. Butter a 9-inch square baking pan. In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda (if using), and salt. In a medium bowl, whisk together buttermilk, butter, and eggs (mixture might appear curdled). Add to flour mixture and stir just until combined (do not overmix). Transfer to baking pan and smooth top.
- Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Let cool on a wire rack 15 minutes before serving.

It is grainy and rough-textured, moist and slightly sweet. Sturdy enough to smear with butter. The secret is mixing it by hand.....a machine makes it too fine, and you end up with cake."

- Preheat the oven to 375 degrees F.
- In a large mixing bowl mix the flour, cornmeal, salt, sugar, and baking powder.
- Beat the eggs and add to the dry ingredients alternately with the milk.
- Mix by hand.
- DO NOT USE A MIXER.
- Pour the mixture into an 11 x 13-inch baking dish and bake for 35 to 40 minutes.
- Cut into squares and serve hot.
