COFFEE CAKE MUFFINS
The classic coffee cake is transformed into a convenient muffin, loaded with a mile-high crumb topping!

- Preheat oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large glass measuring cup or another bowl, whisk together milk, canola oil and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Scoop the batter evenly into the muffin tray. Sprinkle with reserved crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean. To make the glaze, combine confectioners' sugar, vanilla and milk. Whisk until smooth. If the glaze is too thin, add more confectioners' sugar as needed. When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin. Allow glaze to set before serving.
DUNKIN DONUTS BLUEBERRY MUFFINS

- Preheat oven to 425°F . Line a 12-cavity muffin pan with muffin liners (or spray with a non-stick spray). Set aside.
- In a large bowl, add in flour, baking soda, baking powder, and salt. Whisk to combine.
- In another bowl, add in butter, granulated sugar, and brown sugar. Use a stand mixer or handheld mixer to cream the butter and sugars on high-speed until smooth.
- Turn the mixer speed to medium speed, then mix in the eggs until combined. Add in yogurt and vanilla extract and beat again until combined.
- Turn the mixer to low speed, then pour in the milk. Once combined, slowly add in the dry ingredients into the wet ingredients. Mix until combined, then turn off the mixer and fold in the blueberries. Your batter will be thick - this is normal!
- Pour the batter into the prepared muffin tin (make sure it's filled to the top) and top with extra granulated sugar. (If you want to add the streusel topping, mix all of the cinnamon streusel ingredients together and top each muffin batter with the streusel mix).
- Bake for 4-6 minutes at 425°F, then turn the oven temperature down to 350°F. Continue to bake for an additional 20-22 minutes, or until a toothpick inserted in the center comes out clean.
- Take the muffin tin out from the oven, but let the blueberry muffins stay in the tin for 5-7 minutes, then transfer to a wire rack to finish cooling.
- That's it! You've just made your very own copycat Dunkin Donuts blueberry muffins! To store, transfer the muffins to an airtight container and keep at room temperature for 2-3 days, or up to 1 week in the refrigerator. ENJOY!

DONUT MUFFINS
Steps:
- Set oven to 350 degrees F. Mix together milk and lemon juice to create buttermilk. Set aside. In a medium size bowl, whisk together egg and sugar.
- Whisk in vanilla extract, buttermilk and half & half. Whisk in soft butter. In a small bowl, sift together flour, baking powder, cinnamon, nutmeg, and salt.
- Whisk flour mixture into batter until smooth. Grease muffin pan or use muffin papers. Bake 18-20 minutes and then check for doneness by touching gently in the center. If they bounce back take them out and set on cooling rack.
- In a small bowl, mix together sugar and cinnamon for topping. Melt butter in the microwave in a bowl. Dip muffins upside down into butter and then dip into cinnamon sugar mixture. Set on wire rack.

- Make the Crumb Topping: In a bowl whisk together the flour, sugar and cinnamon. Add in the butter cubes. Using a pastry cutter or fork, cut the butter into the flour mixture to resemble coarse crumbs. Cover and place in the fridge.
- Make the Muffin batter: In the bowl of stand mixer with the paddle attachment, add the butter and sugar, mixing just until combined. Add in the eggs mixing, while scraping the bottom of the bowl. Add in the sour cream and vanilla and blend until incorporated. Remove the bowl from the stand mixer.
- To the bowl, add in the flour, baking powder, soda, salt and cinnamon stirring with a wooden spoon or spatula until combined. The mixture will be thick.
- Add in the Dunkin’ Donuts® Extra Extra Creamer and mix with a spatula or wooden spoon until combined. Be sure to scrape the sides and bottom of the bowl. Cover with plastic wrap and place in the fridge for 1 hour.
