DUNCAN HINES' FAST FIXIN-CHOCOLATE CHIP CAKE RECIPE
This easy cake recipe was intended to compete with the popular Snackin' Cake mixes from Betty Crocker -- right down to the way you could mix, bake and serve it from the same pan.

- Preheat oven to 350 F. Pour oil into a 13x9x2-inch pan. Tilt pan until bottom is covered with oil.
- Put remaining ingredients into pan; stir with a fork or spoon until blended (about 2 minutes).
- Scrape sides and spread batter evenly in pan.
- Bake at 350° for 35-45 minutes; until toothpick inserted near center comes out clean.
- Cooled cake may be sprinkled with powdered sugar.
- Use a knife to loosen cake from sides; cut and serve directly from pan. Store leftover cake loosely covered.

EASY WHITE CAKE FROM BOX MIX

- Preheat the oven to 350º F.
- In a large mixing bowl combine the cake mix, sugar, flour, salt, egg whites, vanilla extract, milk, buttermilk, and sour cream, beat with an electric mixer until combined, 1-2 minutes.
- Spray a 9x13 inch pan with non-stick cooking spray. Pour the batter into the pan and bake for 37-43 minutes or until a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool completely before adding frosting.
- In a mixing bowl, combine the butter and vanilla extract, beat using an electric mixer until fluffy. Begin to add the powdered sugar, about 1 cup at a time, mixing by hand. Continue adding powdered sugar until the frosting no longer looks wet and tastes good to you. Then I use my electric mixer one last time to make sure the powdered sugar is really incorporated and ready to go. If the frosting becomes too thick, add a dash of milk.
- Spread the frosting on top of the cooled cake, add sprinkles if desired.

COPYCAT DUNCAN HINES BOXED CAKE MIX
This cake tastes like a boxed white cake mix only better, it has never failed me yet, it is a recipe that I use over and over again for the *perfect* white cake, and so easy to make too! really anything can be addded to this cake, tiny chocolate chips, nuts, dried fruit, add in some food colouring for a pastel coloured cake with matching frosting, this makes a wonderful birthday cake!--------- * NOTE* as one reviewer stated they omitted the salt, omitting the salt will change the texture of this cake completely, so please do *not* omit, using butter-flavor Crisco is acceptable but will alter the taste somewhat but not the texture ;-)

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking pan, and line bottom of pan with parchment paper.
- In a medium or large bowl, with an electric mixer, cream the sugar and shortening until no granules remain (about 4 minutes).
- Add in eggs and almond extract (if using); beat very well for 5 minutes on high speed.
- In a small bowl sift together flour, baking soda and salt.
- Add to the creamed mixture along with the buttermilk; mix well until blended (about 2-3 minutes).
- Transfer to a prepared baking pan.
- Bake on second-lowest oven rack for 30-35 minutes (check for doneness after 25 minutes, this cake bakes fast!).

DUNCAN HINES ALMOND POUND CAKE
Their recipe uses the Moist White Cake mix so it is easy to put together. Comments on their site said that the 1 tablespoon of almond extract called for was too much, so I adjusted to 1 1/2 teaspoons. Serve with berries for a spring treat.

- Preheat oven to 350 degrees.
- In a large bowl, combine cake mix, pudding mix, eggs, water, oil and almond extract.
- Beat at low speed with electric mixer until moistened.
- Beat at medium speed for 2 minutes.
- Stir in almonds with a spoon.
- Pour into a greased and floured 10-inch Bundt pan.
- Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean.
- Remove from oven and cool in pan for 25 minutes.
- Invert onto cooling rack. Cool completely.
- Dust with confectioners' sugar.

- It's counterintuitive to use cold butter, but it helps with the consistency of the frosting. A stand mixer or sturdy hand mixer will work - it's a bit chunky at first, but it will smooth out. Beat on medium-high until smooth.Add powdered sugar 1 cup at a time, mix thoroughly after each addition. The frosting will be chunky at this stage. Mix until the powdered sugar is fully incorporated, then add the almond extract. Add the heavy cream one tablespoon at a time, thoroughly beating after each addition. After adding the 4th tablespoon, the buttercream should be starting to pull together and whipping into a light and fluffy frosting. Continue to mix and add the final tablespoon of heavy cream until you obtain the texture you want. If tinting the frosting pink, it's preferable to use pink 'gel' coloring to maintain a nice texture of the frosting. Spread the frosting on the cooled cookies (or use a piping bag), then top with Sprinkles! Enjoy!
