DUMP-AND-BAKE BASIL CHICKEN BREASTS



Dump-and-Bake Basil Chicken Breasts image

Serve a 5-minute delicious, easy, and healthy dinner with these Dump-and-Bake Basil Chicken Breasts!

½ cup dry white wine ((or chicken broth))
¼ cup olive oil
¼ cup Dijon mustard
¼ cup chopped fresh basil
2 teaspoons minced fresh garlic
1 teaspoon honey
1 teaspoon Italian seasoning
Salt and pepper
1 ½ - 2 lbs. boneless, skinless chicken breasts*
Optional garnish: additional chopped fresh basil or parsley

Steps:

  • Preheat oven to 425 degrees F. Spray an 11 x 7-inch baking dish (or any similar size that accommodates your chicken in a single layer) with cooking spray and set aside.
  • In a small bowl, whisk together wine, olive oil, Dijon mustard, basil, garlic, honey, Italian seasoning, and salt.
  • Season chicken on both sides with salt and pepper. Place chicken in the prepared baking dish.
  • Pour sauce over the chicken and toss to make sure that each piece of chicken is well coated.
  • Bake, uncovered, for 30-40 minutes, or until meat thermometer reads 165 degrees F. Baste with pan sauce periodically while the chicken is cooking.
  • Be sure to spoon plenty of the sauce over the chicken before serving! Garnish with additional fresh herbs, if desired.

Delicious lemony baked chicken breast. Pairs nicely with a baked potato.

2 (5 ounce) chicken breasts
2 tablespoons olive oil, or more as needed
salt and freshly ground black pepper to taste
⅛ teaspoon garlic powder, or to taste
1 medium lemon, halved
1 bunch fresh basil, chopped

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Wash chicken breasts and pat dry with paper towels. Trim and discard fat. Tenderize chicken with a meat mallet. Rub 1 tablespoon olive oil on each breast, lightly covering both front and back. Season with salt, pepper, and garlic powder and set on the prepared baking sheet.
  • Squeeze juice from one lemon half over the chicken breasts. Sprinkle with basil. Cut 2 slices of lemon from the remaining half and set 1 slice on each breast. Reserve remaining lemon for another use.
  • Bake in the preheated oven until chicken breast is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from oven, cover with foil, and allow to rest for 7 minutes before serving.

1 pound tomatoes, peeled, seeded and quartered
2 tablespoons honey
1 tablespoon chopped green onions
1 tablespoon minced fresh parsley
1-1/2 teaspoons lemon juice
1 garlic clove, minced
1/4 teaspoon grated lemon zest
1 teaspoon liquid smoke, optional
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 boneless skinless chicken breast halves (6 ounces each)
1 log (4 ounces) fresh goat cheese
2 tablespoons chopped fresh basil
2 tablespoons butter
2 tablespoons olive oil
Fresh basil leaves, julienned

Steps:

  • Preheat oven to 350°. Place the first 7 ingredients in a small heavy saucepan. Add liquid smoke, if desired. Bring to a boil; reduce heat. Simmer, uncovered, until thickened to consistency of jam, about 25 minutes. Stir in 1/4 teaspoon salt and 1/8 teaspoon pepper. Remove from heat; keep warm., Meanwhile, pound chicken breasts with a meat mallet to 1/4-in. thickness. Sprinkle goat cheese and chopped basil over chicken. Roll up chicken from a short side; secure with toothpicks. Sprinkle with remaining 1/4 teaspoon salt and 1/8 teaspoon pepper., In a large ovenproof skillet, heat butter and olive oil over medium heat. Add chicken; brown on all sides. Bake, uncovered, until chicken is no longer pink 12-15 minutes. Discard toothpicks. Serve with tomato jam and julienned basil.
