DUCK FAT FRIES

Steps:
- Peel the sides of the potatoes but leave some skin on the ends. As you peel, place the potatoes in a bowl filled with cool water. Cut the potatoes into matchsticks (1/8-inch square) and place back into the bowl of clean cool water. Allow the potatoes to sit for 1 hour, changing the water as it becomes cloudy to remove the starch.
- Heat the canola oil in a large, heavy Dutch oven or deep skillet to 325 degrees F.
- Drain the potatoes and dry well with paper towels. Carefully add the potatoes to the oil, in batches if necessary, and cook until they just lose their opaque look and are starting to firm up, 5 to 6 minutes. Drain well on paper towels.
- Heat the duck fat in a heavy saucepan to 375 degrees F; ideally you want the duck fat 3 to 4 inches deep.
- Carefully add the fries to the duck fat and cook until crispy and evenly golden, about 8 minutes. Remove to a paper towel-lined plate and season with the sea salt or truffle salt.
- Cook's Note: Strain the duck fat through a fine mesh strainer and transfer to a glass container. Keep refrigerated or frozen for up to 6 months.

Steps:
- Preheat oven to 450˚
- Rinse and dry potatoes
- Cut potatoes into wedges
- Spray potatoes with Gourmet Duck Fat Spray for crispiness
- Cover potatoes with seasonings, mixing with hands
- Cover a cooking sheet with foil, and lightly spray with Gourmet Duck Fat Spray
- Add potatoes to cooking sheet
- Roast in oven at 450˚ for 35 minutes, or until Cornhusker Kitchen crispy!

- Peel and cut Russet potatoes into 1/4 inch fries. Soak the fries in cold water for 30 min. If you like your fries cut differently (steak, shoestring, etc), go for it!
- In a large dutch oven, heat duck fat to 320 - 330 degrees F. To cook duck fat fries properly, ensure the temperature of the duck fat stays within this range. Pat fries dry and carefully add them to the oil. Cook the duck fat fries in small batches. Once the fries start to turn golden, remove them with tongs and drain on a sheet lined with paper towels.
- Increase to the temp to 350 degrees F and add back the the fries. Cook for another minute or two for a perfect golden and crispy finish. Serve duck fat fries immediately.

- Score skin of DUCKCHAR Moulard Duck Breast. Just don’t not pierce the meat. Scoring is perhaps the most important step achieving crispy duck skin: the better you score, the crispier the duck. Be careful, though, and avoid cutting into the meat. Once scored, season both sides with plenty of kosher salt and pepper.
- Pick the pan. For pan seared duck breast, we choose a cast iron or steel skillet. Sear DUCKCHAR Moulard Duck Breast to your preferred finish. We believe medium rare is perfect. Cook skin side down at medium-high heat. Keep scooping out rendered duck fat while the duck breast cooks. It’s ready to flip when the duck skin is thin, crispy and golden.
- Sear duck breast skin side up. Once the internal temp hits 131 degrees F, take off heat and allow to rest for about 10 minutes lightly covered with foil.
- Peel and cut Russet potatoes into 1/4 inch fries and soak cold water for 30 min. If you prefer a different fry thickness, the total cooking time will vary from this recipe.
