DUCK AND WILD RICE CASSEROLE
An old one from Southern Living. My mom has made this one for years, using the bounty from my dad's duck hunts.

Steps:
- Combine the first 5 ingredients in a large pot; cover with water, and bring to a boil.
- Lower heat; cover and simmer 1 hour or until ducks are tender.
- Remove ducks from stock; strain stock and reserve.
- When ducks are cool enough to handle, remove meat from bones; cut into bite-sized pieces and set aside.
- Cook rice by following the package directions.
- Drain mushrooms, reserving the liquid.
- Add enough duck broth to the mushroom liquid to make 1 1/2 cups.
- Saute chopped onion in the melted margarine until tender.
- Add in flour, stirring until smooth.
- Add in mushrooms; cook/stir constantly for 1 minute.
- Gradually stir in mushroom liquid/broth mixture; cook over medium heat, stirring constantly until thickened and bubbly.
- Stir in duck, rice, half-and-half, and parsley.
- Spoon into a greased 2-quart shallow casserole dish.
- Sprinkle almonds over the top.
- Cover and bake in a 350°F oven for 15-20 minutes; uncover and bake 5-10 more minutes or until thoroughly heated.

- Preheat oven to 350 degrees F (175 degrees C). Bring chicken broth to a boil in a medium saucepan.
- In a 1 1/2 quart baking dish, mix chicken broth, uncooked wild rice, water chestnuts, 2 tablespoons butter and salt.
- Cover, and bake in the preheated oven 30 minutes.
- While rice mixture is baking, melt remaining butter in a medium skillet over medium heat. Place mushrooms and onion in skillet, and slowly cook and stir until tender. Stir mushrooms and onion into the wild rice mixture, cover, and continue baking 30 minutes, or until liquid has been absorbed.

- Preheat the oven to 350°F (180°C). Grease a 3-quart baking dish with butter.
- Melt the butter in a large pan over medium-high heat. Add the onion, carrots, and celery, and cook, stirring occasionally, until soft, about 8 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute.
- Add the flour and cook, stirring constantly, until golden brown, about 2 minutes. Add the chicken stock and stir to combine. Reduce the heat to medium-low and continue to cook, stirring often, until thickened, about 5 minutes.
- Add the salt and pepper and stir to combine. Add the chicken and rice to the pan and stir until fully combined.
- Transfer the rice mixture to the prepared baking dish and spread in an even layer. Bake until bubbling, about 20 minutes.
- Top with the parsley before serving.

- Cook ducks with seasonings (celery, onion, salt and pepper), covered with water in Dutch oven for one hour or until tender. Remove ducks from stock. Let cool; strain stock and reserve. Cut meat into bite-sized pieces and set aside. Cook rice according to directions on package. Drain mushrooms, reserving liquid. Add enough duck broth (stock) to make 1 1/2 cups. Sauté chopped onion in margarine until tender; add flour, stirring until thick and smooth. Gradually stir in mushroom broth liquid. Cook over medium heat, stirring constantly, until thick and bubbly. - Take the duck breasts out of the fridge and salt them well. Set aside for now. Soak the dried mushrooms in the hot water and set aside for 20 minutes. When the mushrooms are soft enough, chop them well. Strain the soaking water through a paper towel that has been set inside a sieve. Save the water for cooking the rice.
- Heat the duck fat for the rice in a saucepan over medium-high heat. Saute the onions until they are just beginning to brown on the edges, about 5 minutes. Add the mushrooms and rice and saute another minute or two. Add the dried cranberries, then the stock and 1 cup of the soaking water. Add salt to taste. Bring to a simmer, cover and cook until the rice is cooked, about 20 minutes.
- You might need to drain the rice; different rices soak up different amounts of liquid while cooking. Drain and move to a large bowl. Add the walnuts and parsley and salt and pepper to taste. Drizzle the oil over the pilaf and mix well.
- Pat the duck breasts dry with paper towels. Put the remaining duck fat into a large frying pan. If your ducks are fat, turn the heat to medium-high and lay the duck breasts in the pan as soon as the fat melts. If your ducks are skinny, wait until the pan is hot before putting in the duck breasts. Cook the duck breasts skin side down at a steady sizzle (think about how bacon sounds when it's cooking and you have the idea), until the skin has browned nicely, about 5 to 8 minutes.
