DUCHESS POTATOES FOR RISE
Rise and I had these at a very fancy restaurant and I went in search of the recipe, found it on food network. They are really pretty and empressive. Can be made ahead for a dinner party.

Steps:
- Bake the potatoes in a preheated 400 degree oven for 1 hour or untilthey are tender.
- Halve the potatoes lengthwise, scrape the flesh into a bowl.
- Press through a ricer or sieve into a large bowl.
- With and electric mixer beat in the butter, 1 tablespoon at a time.
- Add the eggs, 1 at a time, mixing between.
- Add half and half and beat the mixture until it is combined well and smooth.
- Add 1/3 cup parmesan.
- Add nutmeg, pepper, salt, to taste.
- Transfer mixture to a pastry bag fitted with a large decorative tip.
- Pipe mixture into 6 rosettes onto a buttered baking sheet.
- Drizzle them with melted butter and remaining cheese.
- The rosettes may be chilled, covered loosely, for several hours or overnight.
- Bake the potatoe rosettes in a preheated 350 degree oven for 10 to 15 minutes for potatoes at room temp.
- or 25 minutes to 30 minutes for chilled potatoes, or until they are heated through.
- Put the baking sheet under a broiler about 6 inches from the heat, and broil them until the tops are golden.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until tender. Drain. Over very low heat, stir potatoes 1-2 minutes or until steam has evaporated. Remove from heat., Preheat oven to 400°. Press potatoes through a potato ricer or strainer into a large bowl. Stir in the egg yolks, milk, butter, salt, pepper and nutmeg., Using a pastry bag or heavy-duty resealable plastic bag and a large star tip, pipe potatoes into 6 mounds on a parchment-lined baking sheet. Brush with beaten egg. Bake 20-25 minutes or until golden brown.

DELICIOUS DUCHESS POTATOES
These are the best Duchess potatoes you will ever have, I developed this recipe, you will love these! They are a must with prime rib roast or roast pork dinner! Use only russet potatoes for this, and only butter not margarine! If you do not have a pastry bag, just drop 12 mounds onto baking sheet and swirl with a spoon to create a desired pattern.

Steps:
- Cook the potatoes in boiling water until fork-tender (about 25 minutes) drain and place in a large mixing bowl.
- Cool the potatoes for about 20 minutes at room temperature.
- Add in eggs and 7 tablespoons melted butter, pinch dill, pinch garlic powder, salt, pepper and parmesan cheese; add in 3 tablespoons cream adding in more to achieve desired consistency (you might use up to 7 tablespoons cream).
- Season with more salt and pepper if needed to taste.
- Spoon the potato mixture into a pastry bag fitted with a large star tip.
- Pipe the mixture into 12 mounds onto a large greased baking sheet/s.
- Melt the 1/3-1/2 cup butter and drizzle over the potatoes.
- Sprinkle a very small amount of paprika over each mound (this is only optional).
- Set oven to 400°F.
- Bake for about 18-20 minutes or until golden brown.
- Delicious!
