HOMEMADE INSTANT OATMEAL MIX
Recipe adapted from and with thanks to The Lemon Bowl

Steps:
- Combine all the ingredients in a large mixing bowl and stir to combine. Store in an airtight container for up to 3 weeks.
- To serve, place 1 cup of the oatmeal mixture in a glass bowl along with 1/2 - 3/4 cup milk or water. Microwave for 90 - 120 seconds, stir and then let rest for at least 2 minutes before serving. *
- * Adjust the liquid and the cooking time according to your preference. I like my oatmeal more chewy than mushy, so 1/2 cup and 90 seconds works for me. My boys like theirs a little more mushy, so 3/4 cup and 120 seconds works for them.
APPLE-CINNAMON OATMEAL MIX
Apple cinnamon oatmeal is a breakfast staple at our house. It's a warm nutritious start to the day that keeps us going all morning. We used to buy the oatmeal mixes, but we think our homemade version is better! Feel free to substitute raisins or other dried fruit for the apples. -Lynne Van Wagenen, Salt Lake City, Utah

INSTANT OATMEAL MIX
This tastes remarkably similar to the maple and brown sugar instant oatmeal varieties you buy in little packets. Save money by making your own! For each batch of oatmeal, combine 2/3 cup quick-cooking oats with 1 to 2 tablespoons of mix; add boiling water until desired consistency is reached.

INSTANT OATMEAL MIX (OAMC)
I love making my own oatmeal mixture because I know exactly what's in it (many store-bought packets have additives), it's cheaper (every penny counts!), and I think it just tastes better. I keep a large Tupperware of this mixture in my desk at work, along with a 1/4-cup measuring cup; I give the Tupperware a quick shake before measuring out my serving. Alternatively, you could prepackage servings in sandwich-sized Ziplocs. 1/4 cup is about the same amount as the store-bought packets, so that's the serving size the recipe is based on, but I often measure out 1/2 cup portions.

DRY OATMEAL MIX
This recipe came from the February/March 2003 issue of Taste of Home's Light and Tasty. I really have enjoyed this recipe and the ease of preparation. Also, very economical to have on hand. Those small packets of pre-flavored oatmeal do get pricey. 3 points per serving.

Steps:
- In a large bowl, combineall dry ingredients Store in an airtight conatiner in a cool dry place for up to 6 months. Yield aprox 8 cups total. To prepare oatmeal: Shake mix well and measure out oatmeal into bowl, add water, and microwave for 3 minutes. Or on a stovetop, in a saucepan, bring water to a boil; slowly stir in 1/2 cup mix. Cook and stir over medium heat for 1 minute. Remove from the heat. Cover and let stand for 1 minute or until oatmeal reaches desired consistency. For Rice cooker: Before going to bed put 1 part oats mix and 3 parts water in the rice cooker. (A full cup of oats will make three medium or two large servings.) Soaking overnight makes the oats cook more quickly and it also minimizes the risk of boiling over. In the morning turn on the rice cooker and forget. Come bake in aprox 30 minutes for a yummy, warm breakfast. Some times I will use Milk or apple juice instead of water. When serving add more milk to likeing and honey if you like

- In a large storage container or freezer bag, combine the oats, almonds, dried fruit, flaxseeds, coconut sugar, cinnamon, and salt. Stir to combine.
- Pour 2/3 cup water into a small saucepan and bring to a boil over high heat. Stir the oatmeal mix again to ensure that it’s evenly blended, then pour 1/3 cup of the oatmeal mixture into the boiling water. Stir to combine, reduce the heat to medium-low, and simmer, uncovered, stirring occasionally, until the oats have absorbed most of the water and are creamy in texture, 5 to 7 minutes.
- Stir the oatmeal mix again to ensure that it’s evenly blended. Combine 1/3 cup of the mix and 2/3 cup of the water in a microwave-safe bowl (use a slightly larger bowl than you think you’ll need, so the oatmeal doesn’t bubble over). Microwave for 1 1/2 to 2 1/2 minutes, pausing to stir if necessary to prevent overflow, until the oats have absorbed most of the water and are creamy in texture.
- The oatmeal will thicken up a bit more as it cools. Let the oatmeal rest for a few minutes, until it reaches a palatable temperature. Stir again, add any garnishes that you might like, and serve.

- To make the instant oatmeal mix, put the oats, dried fruit, nuts, and cinnamon into a large jar or resealable bag with a bit of extra room. Shake well until all the ingredients are thoroughly combined.
- To prepare one serving of oatmeal, scoop 1/3 cup of the Oatmeal Mix into a deep, microwave-safe cereal bowl. (If the bowl is too shallow, the oatmeal may overflow when it cooks.) Add 2/3 cup water and stir well.
- Place the bowl in the microwave and cook on high for about 2 minutes, until the water is absorbed and the oats are tender. Remove the bowl from the microwave and stir in a pinch or two of kosher salt. The oatmeal will thicken as it cools. If you prefer thicker oatmeal, scale back the water by 1 or 2 tablespoons. Add milk and maple syrup.

29 EASY OATMEAL ADD-INS TO MAKE BREAKFAST AWESOME

Estimated Reading Time 7 mins
- Cinnamon and Sugar- This oatmeal add-in is my personal favorite. I usually mix about 1 part cinnamon for every 2 parts sugar into my oatmeal because I like it on the sweeter side, but you can switch it up to your liking.
- Brown Sugar- I’m not too big of a fan of brown sugar in general, but literally everyone in my life swears by this add-in. Raisins also go very well with the brown sugar and oatmeal combo, and they’ll add some variety to the texture too.
- Egg Whites- This one sounds a little weird, but it’s actually quite good! Adding egg whites will make your oatmeal nice and fluffy, and it’ll be more filling, so you don’t have to eat as much to keep you full until lunchtime.
- Fruit- Pretty much every fruit goes well with oatmeal. Bananas, all kinds of berries, apples, strawberries… you really can’t go wrong. You can use one type of fruit or mix and match.
- Maple Syrup or Honey- A small amount will go a long way to sweeten your oatmeal and give it that great maple or honey taste. However, if you’ve already added some sugar or another sweetener, you might want to steer clear of this one.
- Molasses- Molasses has tons of vitamins and minerals, and it works great as a way to sweeten your oatmeal. It’s more of a dark sweetness than plain white sugar, so if you like brown sugar, molasses is a wonderful way to switch up the flavor and texture.
- Bacon- Oatmeal doesn’t HAVE to be sweet. Adding some crumbled bacon will give your oatmeal some texture, crunch, and add some salty to your sweet. A great option for those who prefer savory over sweet.
- Cheese- Shredded cheese is another great savory option. I prefer using a mild cheddar (usually with bacon!) , but you can use whichever cheese is your favorite or switch it up to your liking.
- Nut Butter- Add some protein to your oatmeal by mixing in some of your favorite nut butter. This is best done immediately after you take the oatmeal off of the stove (or out of the microwave) so that the nut butter will soften.
- Vanilla Extract- A tiny bit of this will do wonders for your oatmeal. Just mix it in immediately after your oatmeal is done cooking to add some flavor.
