DRY-FRIED GREEN BEANS

Dry-Fried Green Beans image

Tasty side dish when green beans are fresh. If you have access to Chinese yard-long beans you can use those too, just cut into 2-3 inch lengths. In any case the beans must be fresh, not canned or frozen. The canned and frozen forms have too much moisture in them to fry properly.

Provided by Sheynath

Categories     Vegetable

Time 25m

Yield 4 cups, 4 serving(s)

Number Of Ingredients 5

1 lb fresh green beans
2 tablespoons oil
1/4 cup walnuts, coarsely chopped
1 teaspoon dried chili pepper flakes
salt and pepper

Steps:

  • Wash green beans and dry thoroughly. Snap off stems.
  • Heat oil in large skillet or wok over medium high heat until almost at the smoking point.
  • Add the dry beans to the hot oil and stir-fry until the beans start to get some dark brown spots.
  • Add the walnuts and continue to stir-fry to cook all sides of the beans and toast the nuts.
  • Sprinkle on the chili flakes and toss to distribute evenly.
  • Remove from heat, salt and pepper to taste.

1 pound green beans
1/2 pound ground lamb
1/2 teaspoon cornstarch
1 teaspoon soy sauce
1 teaspoon sake or dry sherry
1/4 teaspoon sugar
1/4 teaspoon pepper
1/4 cup plus 1/2 teaspoon peanut oil

  • Remove any strings from the edges of the beans and trim off the tops and tails. Break them into short sections (about 2 inches long).
  • Heat 2 tablespoons of oil in a wok, add the beans, and stir-fry over a medium flame for about 6 minutes, until they are tender and their skins are a little puckered. Remove from the wok and set aside. If you want to save time, deep-fry the beans at about 350°F (175°C) until they are tender and puckered.
  • Heat another 2 tablespoons of oil in the wok over a high flame, add the pork, and stir-fry for 30 seconds or so until it’s cooked, splashing in the Shaoxing rice wine and the soy sauce as you go.
  • Add the ya cai or Tianjin preserved vegetable and stir-fry briefly until hot, then toss in the beans, stir and toss, adding salt to taste (remember that the ya cai is already very salty).

  • Heat your wok over high heat until just starting to smoke, and add the green beans and salt. Immediately lower the heat to medium low, and sear the green beans for about 20 minutes, stirring occasionally. You want to see small scorch marks on the green beans. During this process, gather the rest of the ingredients and have them ready. Once the beans are somewhat tender, take them out of the wok and set aside.
  • Heat the oil in your wok over medium high heat and brown the pork. Add the garlic and chili, and stir for 30 seconds. Add the sui mi ya cai, and stir everything together. Cook for another minute.
  • Toss in the seared green beans, cooking wine, soy sauce, sugar, and sesame oil. Crank the heat back up to high and stir-fry for a final minute. Serve immediately.
