1 c all purpose flour
3/4 c brown sugar, firmly packed
1 Tbsp shortening
1 c dark molasses
1 egg, beaten
3/4 c hot water (not boiling)
1 tsp baking soda
1 9-inch piecrust, unbaked

Steps:

  • 1. Preheat oven to 400F.
  • 2. mix flour, brown sugar and shortening with a pastry knife until crumbly. Reserve 2/3 cup for topping. Spoon rest into the unbaked piecrust.
  • 3. Mix baking soda in hot water. Add egg and molasses and stir well. Pour over crumbs in piecrust. Sprinkle reserved crumbs on top.
  • 4. Bake at 400F. for 10 minutes. Reduce heat to 350F and bake another 30 minutes, or until knife inserted in center comes out clean. Let cool on wire rack before slicing.

1/2 recipe no fail pie crust
1 1/2 cups all-purpose flour
1/2 cup dark brown sugar
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted
3/4 cup boiling water
3/4 cup molasses
1 teaspoon baking soda
1 egg
3/4 cup chopped semi-sweet or dark chocolate (optional)

Steps:

  • Preheat oven to 400 °F. Place a baking sheet in the oven to heat. Prepare the pie crust. Place in a pie dish and flute edges. Refrigerate crust until filling is ready. To make the crumble topping, whisk together the flour, brown sugar, cinnamon, ginger, and salt. Slowly pour in the melted butter, continuing to stir. The mixture will form a big clump, break this up with your fingers until the mixture has a sandy texture. In a medium bowl, whisk together the boiling water and molasses until smooth and well combined. Stir in the baking soda and egg, along with an additional small pinch of salt. Sprinkle the chopped chocolate (optional) along the bottom of the crust. Pour the molasses mixture into the crust and sprinkle half the crumb mixture on top of the pie. Place the rest of the crumb mixture in the freezer. Bake the pie for 15 minutes. After 15 minutes, remove the pie from the oven. Top with the remaining now chilled crumb mixture, sprinkling it evenly over the top of the pie. Return the pie to the oven, reduce the temperature to 350 °F, and bake an additional 20-25 minutes, until the pie is just set. Cool on a wire rack before slicing.

1/2 cup Golden Barrel Supreme Baking Molasses
1/2 cup Golden Barrel corn syrup
1/2 cup Golden Barrel Brown Sugar
2 eggs
1 cup hot water
1 teaspoon baking soda, dissolved in the hot water
1 cup all-purpose flour
1/2 cup Golden Barrel Brown Sugar
1/4 cup Golden Barrel Coconut Oil (solid)
1 single pie crust pastry, rolled out and placed in 9" pie plate

Steps:

  • Preheat oven to 400 degrees. Mix together the crumb topping ingredients: flour, brown sugar, and coconut oil until pea-sized crumbs form. Set aside.
  • Mix together molasses, corn syrup, brown sugar and eggs until smooth.
  • Dissolve baking soda in hot water. Slowly pour into the molasses mixture and stir until combined. Mix will be runny.
  • Pour half of syrup into an unbaked pie shell, top with half of crumb mixture, then rest of syrup, finishing with crumbs on top. Bake at 400 degrees for 10 minutes, then at 350 for 40-50 minutes until set. Best served warm or cold with milk.

2 1/2 cups All-Purpose Flour
1 tsp Granulated Sugar
1 tsp Salt
1 cup Unsalted Butter (very cold and cubed)
1/2 cup Ice Cold Water
1/2 cup Warm Water
1/2 cup Full Flavored Molasses
1/4 cup Light Brown Sugar
1/4 tsp Baking Soda
1 tbsp All-Purpose Flour
1 Large Egg (beaten)
1 1/2 cups All-Purpose Flour
1/2 cup Light Brown Sugar
1/4 cup Vegetable Shortening
1/4 tsp Salt
1/2 cup Full Flavored Molasses
1/2 cup Warm Water
1/2 tsp Baking Soda

Steps:

  • In a large mixing bowl whisk together the all-purpose flour, granulated sugar, and salt.
  • Using a pastry blender (or two forks), cut in the cold unsalted butter until you have small pea-size pieces. Some larger pea-size pieces are fine too!
  • Add in the ice cold water, then using a bench scraper or spatula work it into the pie dough mixture. Rotate the bowl as you crape the mixture from one side of the bowl to the other until there is not more visible signs of water.
  • Using your hands, begin to scoop up the dough then press it down with your fingers. Rotate the bowl and repeat, folding the dough until it has formed. Don't forget to include any dry bits of the pieces that may have fallen underneath the dough.
  • Place the pie dough onto a lightly-floured, clean surface and divide it in half using a pastry cutter. Pat each half into a 1″- 1 1/2″ thick disc, then double wrap it tightly in plastic wrap and place them in the coldest part of your refrigerator (usually the back) for a minimum of 1 hour. Double wrapping the dough keeps any air from getting in and drying the dough out. The pie dough will keep in the refrigerator for about 3 days.
  • Adjust the oven rack to the 2nd level position (just above center) and (on the same rack), place a baking sheet, jelly roll pan, or baking steel. Preheat the oven to 400ºF.
  • In a medium size mixing bowl, combine all ingredients for the bottom filling and set to the side.
  • For the top batter, combine the all-purpose flour, light brown sugar, vegetable shortening, and salt. Reserve 1 cup (147 g) for the crumb topping.
  • To the remaining batter mixture, add the full flavored molasses, warm water, and baking soda, mixing until just combined.
  • Pour the filling mixture into the chilled unbaked pie shell, followed by the batter. It's okay if the filling comes up the sides as you pour the batter in. Sprinkle the reserved 1 cup of crumbs over the top. Don't worry about the crumb topping sinking into the batter. It will remain on top.
  • Place the pie on top of the preheated baking sheet and bake for 400ºF for 15 minutes. Then reduce the temperature to 350ºF and bake for 30-35 minutes more. You may wish to add a silicone crust shield the last 15 minutes of baking to prevent the crust from over browning. The pie will appear jiggly, but will set as it cools. Transfer to a wire cooling rack to cool completely. Serve at room temperature or chilled with a dollop of whipped cream.

9 inch deep-dish unbaked pie shell OR pie crust as below
1 1/3 cup all-purpose flour
1/2 cup shortening
1/2 teaspoon salt
3-4 tablespoons of ice cold water
1 cup all purpose flour
1/2 cup dark brown sugar
1/2 tsp baking powder
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
2 Tablespoons salted butter AND 2 Tablespoons vegetable shortening OR 1/4 cup room temperature all shortening, lard, or salted butter
1/2 cup dark brown sugar
1/2 cup unsulphured baking molasses (not blackstrap molasses)
1 beaten egg, room temperature
1/2 teaspoon baking soda
1 1/2 teaspoons all purpose flour
1 teaspoon vanilla
1 cup boiling water

Steps:

  • In medium bowl, mix flour and salt. Cut in shortening using pastry blender, until mixture forms pea-size chunks. Sprinkle with water, one tablespoon at a time. Toss lightly with fork until dough forms ball.
  • Wrap in plastic wrap, flatten slightly into a disk, and place in refrigerator for 30 minutes.
  • Roll out onto a lightly flour surface into a circle about 2 inches wider than pie pan; place crust into a 9 inch deep-dish pie pan, crimp edges as desired. If using a regular depth pie pan, build your crust edges up high when crimping.
  • Line un-baked pie crust with heavy-duty foil. Bake at 350 F degrees for 10 minutes. Remove foil, brush crust with beaten egg yolk. Bake 5 minutes longer, cool on wire rack.
  • In a mixing bowl, place the 1 cup all purpose flour, 1/2 cup brown sugar, 1/2 teaspoon baking powder, 1/2 teaspoon cinnamon, and 1/8 teaspoon nutmeg; combine well with fork or spoon to eliminate lumps.
  • Add the 2 Tablespoons butter and 2 Tablespoons shortening to the bowl (or the 1/4 cup fat of your choice) and, using a fork, pastry blender, or your fingers, combine to make fairly fine crumbs.
  • In another mixing bowl or 4 cup glass measuring cup, place the 1/2 cup brown sugar, 1/2 teaspoon baking soda, and 1 1/2 teaspoons all purpose flour listed for the liquid filling. Blend the dry ingredients together with a fork or spoon to help eliminate clumps.
  • Next, add the 1/2 cup unsulphured baking molasses, the beaten egg, and the 1 teaspoon vanilla to the dry mixture; blend together well, using a spoon or whisk making sure the dry ingredients are mixed in.
  • Add the 1 cup boiling water to the molasses mixture, SLOWLY streaming it in while stirring or whisking to avoid curdling the raw egg, Stir or whisk until well blended. The mixture will appear "foamy" at this point.
  • Place pie pan with unbaked crust on a baking sheet large enough to catch any drips or spills, then pour all of the molasses mixture carefully into the pie shell.
  • Using your fingers or a spoon, sprinkle the entire bowl of crumbs evenly on top of the liquid filling in the crust; pay attention to getting some crumbs right up to the edge of the pie crust as well.
  • Place the tray with the filled crust carefully into the oven. Bake 375 F degrees about 35 to 40 minutes. Pie will "puff" while baking, but will firm up and settle some as it cools.
  • Serve warm, room temperature, or chilled. Pie can be stored on the counter for 3 days, refrigerate leftovers after that time.

As we all know, there are 2 basic versions of shoofly pie, the dry kind you can dunk and the wet kind that oozes its sweetness. This one falls in the middle and is an excellent example of Pennsylvania Dutch baking.

½ cup packed light brown sugar
¼ cup shortening, chilled and diced
1 teaspoon baking soda
1 cup boiling water
⅔ cup light corn syrup
⅓ cup dark molasses
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a bowl, combine the flour, brown sugar, and shortening. With your fingertips, rub these ingredients together until the shortening resembles small lima beans. Set crumb mixture aside.
  • In another bowl, dissolve the baking soda in the boiling water. Add the corn syrup and molasses; stir to blend. Pour filling into the shell, and sprinkle the crumb mixture over the top.
  • Bake in the middle of the oven for 10 minutes. Reduce the heat to 350 degrees F (175 degrees C); bake for 25 minutes more. The filling is set, but still quivers when the pan is little tapped. Do not over bake. Cool on a rack to room temperature.

Classic wet-bottom Shoo Fly Pie is perfection in both texture and flavor. It's not hard to make, sets up to a barely woogly center, and the crisp, crunchy-yet-sandy streusel is a fantastictopping. The streusel that is baked in with the filling helps it to set up as the starches in the flour gel. It's a genius pie for lean times and not so lean times. I do hope you give it a try.

9 oz molasses, (3/4 cup)
4.5 oz hot water, (1/2 cup plus 1 Tablespoon)
1/2 teaspoon baking soda
heavy pinch kosher salt, (about 1/4 teaspoon)
1 large egg, beaten
4.5 oz all purpose flour, (about 1 cup)
4.7 oz dark or light brown sugar, (about 2/3 cup, packed)
3 Tablespoons unsalted butter, cold
1 9" pie shell, (not deep dish), docked and frozen* (See Note)

Steps:

  • Preheat the oven to 400F.
  • In a medium sized bowl, whisk together the flour and the brown sugar.
  • Rub in the butter very well so there are no little bits of butter remaining. The mixture should look about like cornmeal and should clump together when you squeeze it and then sort of fall apart if you poke it.
  • Squeeze some together so you have some pebbles of streusel and leave some of it sandy.
  • In a medium bowl, whisk together the molasses and hot water. Thoroughly whisk in the baking soda and salt. Mixture may get sort of frothy and will definitely lighten in color. Thoroughly whisk in the beaten egg.
  • Mix about half the streusel into the molasses syrup and pour into the prepared pie crust.
  • Sprinkle the rest of the streusel in an even layer over the top of the pie.
  • Carefully place the pie on the center rack of the oven. Bake for 15 minutes then reduce the heat to 350F.
  • Continue baking for about 15 more minutes then cover the pie loosely with foil to prevent excessive browning of the crust. Bake an additional 10-15 minutes or until the pie is nicely puffed up all over. It will settle as it cools.
  • Serve warm or barely warm with lightly sweetened (or even unsweetened) whipped cream or a scoop of ice cream.
