Steps:
- Preheat oven to 400°F
- Line a baking sheet with parchment paper
- In a bowl, moisten bread with stock or milk
- In a mixing bowl, mix beef with the wine and season with salt and pepper
- Squeeze excess liquid from bread and tear it into small breadcrumbs as you add them to the bowl with the meat
- Add nutmeg, garlic, herbs, egg, cheese and a fat drizzle of EVOO
- Mix to combine with your hands
- Using a scoop, roll 20-24 balls and place them on the parchment-lined baking sheet
- Roast 18-20 minutes

- 1. In crock pot, mix Chili Sauce, brown sugar, & beer. Stir in frozen meatballs. Cook on high for approx. 2-3 hours until done. Keep crock pot on warm after cooking to serve hot.
DRUNKEN MEATBALLS (WITH CROCK POT INSTRUCTIONS)
I found these on another website ages ago ad they have since become a regular at my parties. You can use any bourbon but I have done well using Southern Comfort.

Steps:
- Combine the first three ingredients and simmer for 5 minutes, until blended.
- Add meatballs and simmer, covered for about 45 minutes.
- CROCK POT: For the crock pot, prepare sauce as above. Put meatballs (they can be frozen meatballs) into crock pot, pour sauce over and cook on low for 8 to 12 hours.

DRUNKEN TURKEY

- Preheat oven to 325℉ (160℃). Rinse turkey and pat dry inside and out. Set aside. Combine dried fruit, raisins, and apples in a medium-size bowl. Put orange juice and chiles (with sauce that clings to them) into a blender or food processor and process for 1 minute. Add 1 cup each of tequila and Grand Marnier, then pour the mixture over the fruit and let rest 15 minutes. Drain the fruit, reserving the liquid. Cut half the butter into ½ inch pieces and combine with the fruit. Stuff cavity of the turkey with most of the fruit. Place the turkey in a roasting bag, arrange remaining fruit on top of the bird and pour reserved orange juice liquor mix over it. Combine remaining tequila and Grand Marnier. Have ready a basting syringe fitted with a metal injection nozzle and inject the mixture all over the turkey. Melt remaining butter and carefully pour over the turkey in the roasting bag. Seal bag and cut ¼ inch slit on the top to let steam escape. Place in a roasting pan and roast for 2½ hours. Every 30 minutes open bag (being careful to shield your face from steam) and inject more liquor, eventually using it up. When ready to serve, slit open bag, arrange turkey on a platter, and scoop out the fruit stuffing. Place all the fruit in a serving bowl. Strain the juices that have accumulated in the bag, skim off any fat, and serve in a gravy boat. Serves 8 to 10.

- Preheat oven or grill to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
- Melt butter in saute pan over medium heat. Cook onions until fragrant and slightly brown while stirring occasionally, about 3-5 minutes. Reduce heat to low and add garlic, cook for 2-3 minutes. Remove from heat and set aside to cool.
- In large bowl, combine ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, salt and cooked onions and garlic. Use hands to mix well, but try not to over work the meat. Shape into 1-2 inch sized meatballs on parchment lined baking sheet.
- Bake uncovered in the preheated oven 20 minutes. While meatballs are cooking, combine ketchup with mustard and brown sugar in a bowl. Set aside.
- After 20 minutes of cooking, insert toothpick into each meatball, dip into ketchup mixture, return to baking sheet, and continue baking for about 10 additional minutes to an internal temperature of 160 degrees F (70 degrees C). Serve warm with toothpicks for easy eating. Can be kept warm in slow cooker, if needed.

- 1. Mix together all meatball ingredients. Refrigerate 90 minutes Or put in freezer for 15 minutes.
- 2. Form into 1-inch meatballs. Brown in bacon fat, when cooked, remove from frying pan to large bowl. Put onions in the pan for about 8-10 minutes over medium heat. Put the onions with the meatballs.
- 3. Add broth into pan and stir until it is boiling, this helps to get the pan drippings. Add corn starch mixed with milk. Stirring constantly, add in the sour cream sour cream, then the alcohol. It will thicken to a rich sauce.
- 4. Put the meatballs and onions into the pan and gently fold into the sauce. Remove from heat and serve!
- 5. *** Serve over noodles or mashed potatoes, with a salad or vegetable.

- Place the beer and ketchup in a slow cooker on high setting and allow to simmer..
- Meanwhile, in a large bowl, combine the ground beef, garlic powder and onion, mixing well. Form mixture into meatballs about 3/4 inch in diameter. Place meatballs in a 9x13 inch baking dish.
- Bake at 400 degrees F (200 degrees C) for 20 minutes.
- Transfer meatballs to the slow cooker with the beer and ketchup and simmer for 3 hours; sauce will thicken.
