2 large egg yolks
1 teaspoon water, plus more for brushing
1 1/2 kielbasa sausage, (1 1/2 rings)
Flour, for rolling pastry
2 sheets prepared puff pastry
Assorted mustards for serving

Steps:

  • Preheat oven to 425 degrees F. Beat the egg with the water and set aside.
  • Cut the kielbasa into 8 (3-inch) long pieces and set aside.
  • On a lightly floured surface roll the pastry sheets into 12 by 12-inch squares. Cut the sheets into 8 equal squares. Brush 1 square with water around the edges and wrap a sausage up in the pastry. (First fold the 2 long sides over the sausage, then fold the ends up and over. Press edges firmly to seal.) Place seam side down on a parchment-lined sheet pan.
  • Brush the tops and sides of the packages with egg wash and bake until browned and shinny, about 25 minutes. Transfer to a rack and cool for 20 minutes, before serving. They can be served warm or at room temperature with assorted mustards.

2 tablespoons grated lemon zest
1/2 cup fresh lemon juice
3 tablespoons packed light brown sugar
1/3 cup buttermilk
12 skin-on chicken drumsticks (3 1/2 to 4 1/4 pounds)
Kosher salt and freshly ground black pepper
2 cups panko (Japanese breadcrumbs)
1 tablespoon chopped fresh thyme
Pinch of cayenne pepper
1/4 cup mayonnaise
Olive-oil cooking spray

Steps:

  • Mix 1 tablespoon lemon zest and the lemon juice in a large bowl. Add 1 cup water and the sugar and whisk to dissolve, then whisk in the buttermilk. Pierce the drumsticks several times with a fork and season with salt and pepper. Toss in the marinade, cover and refrigerate 4 hours, or overnight.
  • Preheat the oven to 400 degrees F. Bring the chicken to room temperature. Put the panko, thyme, the remaining 1 tablespoon lemon zest, the cayenne, 1 teaspoon salt, and black pepper to taste in a large resealable plastic bag and shake to mix. Put the mayonnaise in a bowl. Set a rack on a baking sheet and spray with cooking spray.
  • Remove the drumsticks from the marinade, dip in the mayonnaise, then drop into the bag and shake to coat; transfer to the rack.
  • Mist the chicken with cooking spray. Bake until golden, about 35 minutes; flip and bake until browned and crisp, 35 to 40 more minutes. Cool completely, then pack in an airtight container.

1 pound Greek yogurt
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons ground cumin
2 teaspoons garlic salt
2 teaspoons smoked paprika
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
24 medium chicken drumsticks
Neutral oil, for deep-frying
Hot sauce, such as Frank's, as needed
Melted unsalted butter, as needed
Blue cheese dressing, for serving

Steps:

  • Combine the yogurt, garlic powder, onion powder, cumin, garlic salt, smoked paprika, black pepper and kosher salt in a large bowl and mix thoroughly. Add the drumsticks and turn to coat. Marinate overnight (at least 12 hours) in the fridge.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken from the marinade, place on a baking sheet and bake for 20 minutes. Remove from the oven and let cool.
  • Heat the oil in a deep fryer to 375 degrees F.
  • When ready to serve, fry the drumsticks until the skin is crispy, 3 to 5 minutes. Toss them with hot sauce and butter in a large bowl (use more butter than hot sauce for a mild heat and more hot sauce than butter for a spicier flavor). Serve with blue cheese dressing.

2 tablespoons canola oil
1 (2 to 3 pound) pheasant
Salt and black pepper
1/2 cup (1 stick or 8 tablespoons) softened butter
1 large red onion, chopped
2 cloves garlic, lightly crushed with the side of a knife blade
1 cup Marsala wine
2 bay leaves
3 tablespoons chopped fresh parsley leaves
1 tablespoon balsamic vinegar
1/2 cup brown sauce
4 sheets puff pastry dough (these are often sold in 17 or 18-ounce packages containing
2 (9 or 10 inch) square sheets puff pastry)
2 eggs, beaten

Steps:

  • Heat the canola oil over medium heat in a large saute pan. Season the pheasant with salt and pepper and coat with the softened butter. Brown all sides of the pheasant until golden brown and remove to a utility platter. To the same pan, add the onion and garlic and saute until the onion becomes translucent. Deglaze the pan with the Marsala wine and add bay leaves and parsley. Lower the heat and return the pheasant to the pan. (Wash and dry the utility platter and keep handy for the cooked pheasant.) Cover and simmer until the pheasant is tender and juices in the thigh run clear when pierced, about 35 minutes. Remove the pheasant to the utility platter and allow to rest until cool enough to handle.
  • Strain the braising juices into another pot and skin off any excess fat. Add balsamic vinegar and brown sauce and cook over medium heat until thickened.
  • Pull pheasant meat from the bones and cut into 1-inch pieces, discarding bones. Remove sauce from heat. In a bowl fold pheasant meat with enough sauce to coat. Do not feel obligated to use all of the sauce. The mixture should not be soupy.
  • Preheat oven to 400 degrees F.
  • Roll out the pastry dough and, using an appropriately sized cereal bowl or small mixing bowl as a template, cut 4 rounds 8-inches in diameter.
  • Spoon the pheasant mixture evenly into 4 individual ovenproof 6-inch bowls (onion soup bowls are ideal for this), and brush the edges of the bowls with egg. Top each with a circle of pastry, draping the crust over the rim. Brush the tops of the pastry with the egg wash and bake until golden, about 12 to 15 minutes.

1 egg
1 tablespoon water
1/4 cup toasted sliced almond (optional)
1/4 cup chopped fresh parsley
1 (about 1 pound) Brie cheese round
1 box (13 ounces) Pepperidge Farm® Entertaining Quartet Distinctive Crackers

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Cut off the corners to make a circle. Sprinkle the almonds and parsley in the center of the circle. Top with the cheese. Brush the edge of the circle with the egg mixture. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto the baking sheet. Decorate the top with pastry scraps, if desired. Brush with the egg mixture.
  • Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.

2 onions, thinly sliced
1 teaspoon caraway seeds
1 pound low-fat turkey kielbasa
1 (10-ounce) can refrigerated pizza dough
1 cup honey mustard

Steps:

  • In a large nonstick skillet, heat the oil. Add the sauerkraut, onions, caraway seeds and a 1/2 cup of water; cook, covered, until the liquid evaporates and the sauerkraut and onions are very tender, about 15 minutes. Remove from the heat and cool completely.
  • Preheat the oven to 400 degrees. Cut the kielbasa into 2 (8-inch) lengths, then cut the pizza dough in 1/2. On a lightly floured surface, roll out each 1/2 of dough into a rectangle about 2 inches longer than the kielbasa and wide enough to wrap around it. Spoon 1/2 of the sauerkraut mixture down the center of each piece of dough, then place a kielbasa half on the sauerkraut. Fold up the dough to enclose the kielbasa completely, pinching the edges to seal. Transfer to an ungreased baking sheet. Bake until golden, 15 to 20 minutes. Cut into slices; serve warm or at room temperature, with honey mustard on the side.

1/2 teaspoon salt, divided
1/2 cup high-fiber bran cereal (recommended: Fiber One Original)
1 1/4 teaspoons black pepper
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon dried oregano
1/4 teaspoon chili powder
1/4 cup fat-free liquid egg substitute

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray a baking sheet with nonstick spray and set aside.
  • Season chicken with 1/4 teaspoon salt and set aside.
  • Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Transfer crumbs to a large sealable plastic bag. Add remaining 1/4 teaspoon salt and all other seasonings. Seal the bag and shake to mix. Open the bag and, if you like, season the crumbs with additional seasonings, to taste. Set aside.
  • Place egg substitute in a wide bowl. Two at a time, coat the drumsticks in egg substitute, gently shake to remove excess liquid and place in the bag with the crumbs. Seal and shake to coat. Transfer crumb-coated drumsticks to the baking sheet and repeat with remaining drumsticks.
