1/2 cup balsamic vinegar
1/4 cup olive oil, plus more for grill
1 tablespoon chopped fresh rosemary
Salt and pepper
1 1/2 pounds top blade beef, cut into 1 1/2-inch pieces
8 ounces button mushrooms
2 red bell peppers, cut into 1 1/2-inch wedges

Steps:

  • Combine vinegar, oil, rosemary, and 1 teaspoon salt and 2 teaspoons pepper. Reserve and refrigerate about 1/4 cup of marinade. Transfer remaining marinade to a zip-top bag and add beef and toss to coat. Refrigerate 8 hours (or up to overnight).
  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Thread some skewers with beef, others with mushrooms, and others with peppers. Season with salt and pepper. Grill mushroom and pepper skewers for 9 to 12 minutes and beef skewers for 12 to 15 minutes, turning all skewers frequently and brushing with reserved marinade.

¾ cup all-purpose flour, divided
1 tablespoon dried oregano
salt and ground black pepper to taste
3 pounds cubed beef stew meat
2 tablespoons olive oil
1 cup red wine, divided
29 ounces frozen pearl onions, thawed
2 cups chopped fresh mushrooms
8 medium baby red potatoes
3 large carrots, chopped
3 stalks celery, chopped
1 (14.5 ounce) can beef broth
1 ½ cups boiling water
4 cubes beef bouillon

Steps:

  • Combine 1/4 cup flour, oregano, salt, and pepper in a bowl. Add beef and toss to coat.
  • Heat olive oil in a cast iron skillet over medium-high heat heat. Brown beef in the hot oil on all sides, 5 to 7 minutes. Transfer meat to the bottom of a slow cooker. Do not clean the skillet.
  • Pour 1/2 cup red wine into the skillet and add pearl onions and mushrooms. Saute over medium-high heat until softened, 5 to 7 minutes. Be sure to scrape the meat bits into the mixture with a wooden spoon. Reduce heat and simmer for 20 minutes.
  • Stir potatoes, carrots, and celery into the slow cooker. Add beef broth and remaining wine. Season with salt and pepper.
  • Cover and cook until beef is no longer pink in the center and vegetables are tender, on Low, 6 to 8 hours, or High, 4 to 6 hours. Near the end of cooking time, whisk boiling water, remaining flour, and bouillon together; stir into the pot and allow sauce to thicken.

A simple beef stew recipe that comes together quickly then braises slowly to a flavorful finish.

2 1/2 pounds beef-stew meat, cut into 1 1/2- to 2-inch cubes
Coarse salt and freshly ground pepper
4 tablespoons all-purpose flour
6 tablespoons olive oil, plus more if necessary
1 cup dry red wine
2 1/2 cups homemade or low-sodium canned beef stock
8 ounces pearl onions, peeled
1 cup canned whole plum tomatoes, crushed
5 carrots, peeled and cut into 1-inch pieces
12 ounces white button mushrooms, quartered if large

Steps:

  • Pat the cubed meat dry with paper towels; season with salt and pepper. Toss the meat in flour.
  • Heat a large Dutch oven over medium-high heat. Add 2 tablespoons oil. Add half the meat in a single layer without crowding, and brown on all sides, 5 to 6 minutes. Remove meat from pot, and transfer to a bowl. Add 1/3 cup of wine, and stir with a wooden spoon, scraping any browned bits on the bottom of the pan (if wine evaporates too quickly to scrape up browned bits, add some stock). Transfer cooking liquid to bowl with meat. Wipe pot clean, and repeat process with remaining meat.
  • Heat remaining 2 tablespoons oil in Dutch oven, and add onions. Cook, stirring occasionally, until golden all over, about 3 minutes.
  • Deglaze pan with remaining 1/3 cup wine, and return reserved beef and cooking liquid to pot. Add stock and tomatoes; season with salt and pepper. Bring to a boil. Reduce to a simmer, and cook, covered, for 1 hour and 15 minutes. Add carrots and mushrooms. Cook, covered, until meat and vegetables are tender, 45 to 50 minutes.

6 tablespoons grapeseed or olive oil, plus more as needed
3 pounds beef chuck, cut into 1-inch pieces
Kosher salt and freshly ground pepper
4 carrots (1 roughly chopped, 3 cut into 1/2-inch rounds)
4 stalks celery (1 roughly chopped, 3 cut into 1/2-inch pieces)
1 onion, roughly chopped
1 tablespoon tomato paste
1 cup hearty red wine, such as shiraz
2 quarts beef stock or reduced-sodium beef broth
2 sprigs thyme
1 1/4 pounds russet potatoes, peeled and cut into 1-inch chunks
1 pound mixed mushrooms (such as cremini, chanterelle, oyster and/or stemmed shiitake), sliced or quartered if large
4 tablespoons unsalted butter
1/2 cup all-purpose flour
Chopped fresh parsley, for topping

Steps:

  • Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Season the beef with 2 teaspoons salt and 1 teaspoon pepper. Add to the pot in batches and cook, turning and adding more oil as needed, until browned all over, about 5 minutes. Transfer to a bowl with a slotted spoon.
  • Add 2 more tablespoons oil to the pot and reduce the heat to medium. Add the roughly chopped carrot, celery and onion and cook, occasionally stirring with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the vegetables soften, about 5 minutes. Move the vegetables to one side and add the tomato paste to the empty side. Cook until it darkens around the edge, about 2 minutes; stir into the vegetables. Add the wine and bring to a boil.
  • Return the beef and any juices to the pot; add the stock. Bring to a boil, skimming any foam off the top. Add the thyme. Reduce the heat to low, cover and simmer until the beef is tender, about 2 hours.
  • Strain the beef and vegetables in a colander set over a large bowl, reserving the cooking liquid. Tent the beef mixture with foil. Let the cooking liquid stand for 5 minutes and then skim off the fat on the surface. Return the liquid to the pot. Add the remaining carrots and celery and the potatoes and bring to a simmer over high heat. Reduce the heat to medium and simmer until the vegetables are just tender, about 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms; cook, stirring occasionally, until they release their juices and brown, 10 minutes. (Pour off any extra liquid, if necessary.) Season with salt and pepper. Remove from the heat and set aside.
  • Melt the butter in a saucepan over medium-low heat. Whisk in the flour to make a roux, then let it bubble (do not brown), 2 minutes. Whisk in 2 cups of the reserved cooking liquid. Stir this sauce into the pot with the vegetables; bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thickened, 5 minutes.
  • Return the beef to the pot, discarding the roughly chopped carrot, celery, onion and thyme. Add the mushrooms and simmer until heated through, 5 minutes. Season with salt and pepper; sprinkle with parsley.

3 pounds stewing beef, cubed
1 bottle of good quality red wine ( merlot, cabernet etc.,)
1 onion, sliced thinly
2 garlic cloves, minced
1 tsp. freshy ground black pepper
1 tbsp. fresh thyme, chooped
1 tbsp. fresh rosemary, chopped
Place above ingrediants in a bowl. Cover securely and marinate for at least 12 hours, up to 24.
3 very large onions, large dice
5 red bell peppers, large dice
1 pound mushrooms, quartered
5 garlic cloves, minced
1-14oz can diced tomatoes
3 cups beef broth ( low sodium)
2 sprigs of fresh thyme
2 beef bouillion cubes ( low sodium)
1/4 cup flour
1 bay leaf
Salt and freshly ground black pepper
Vegetable Oil

Steps:

  • 1) Remove beef cubes from marinade. ( Reserve marinade) Dry on paper towels. In a large pot, heat vegetable oil and brown beef in small batches. Set aside. 2) To pot, add onions, mushrooms and red peppers. Saute for 5 mins. 3) Add 1/4 cup flour and cook 1 minute. 4) Add STRAINED reserved marinade, minced garlic, thyme sprigs, bay leaf, tomatoes, beef broth and bouillion cubes. Add 1 tsp. freshly ground black pepper and 1/2 tsp. salt. Bring to a boil, then reduce to medium-low heat. 5) Cook covered, approximately 1 hour, stirring periodically. Cook partially covered, for an additional 2 hours on low heat. 6)Check for seasoning, adding more salt and pepper to taste. Freezes well and tastes great the next day !!!

350 g of diced stewing beef
1 medium onion
1 garlic clove
1/2 red bell pepper
2 medium potatoes
1 cup white wine or 1 cup sherry wine
3 cloves
1 pinch salt
1 pinch black pepper
1 teaspoon thyme
1 teaspoon rosemary
1 bay leaf
olive oil

Steps:

  • Brown the diced beef in olive oil in the saucepan and leave aside for later.
  • Chop the onion, the garlic clove and the pepper very thinly. In the remaining oil, sauté the finely chopped vegetables. Note: if you're not going to use a blender with the sauce and prefer it with chunks, a thinly chopped pepper will release its flavour more efficiently.
  • Once the onion is golden and translucent, add the white wine, the salt and the black pepper. Add some water (for now fairly roughly, just to keep it liquid). Now it's the moment (OPTIONAL) to emulsify it with a blender.
  • Add the thyme, the rosemary, the bay leaf and the cloves.
  • Add the meat and the potato (chopped chunky), cover with more warm water. Place a lid on top and leave on medium heat to finish cooking. Don't allow the mixture to boil very vigorously, just enough to cook the meat. In a pressure cooker it will take around 15 minutes but it varies a lot depending on the model. With a saucepan, it will usually take around 45-50 minutes.
  • Remember to keep watching the water level if in a saucepan to avoid too much water loss. Add water when needed, try the sauce if in doubt to tell whether it needs further adjusting with salt/pepper.

1 1/4 lbs stewing beef (cut into 1-inch pieces)
7 garlic cloves, crushed
1 cup dry red wine
1 cup Guinness stout
6 cups beef stock or 6 cups broth
3 tablespoons tomato paste
1 1/2 tablespoons sugar
2 tablespoons Worcestershire sauce
1 tablespoon dried thyme
4 bay leaves
2 tablespoons butter
1 lb russet potato (cut into 1/2 inch pieces)
1 lb baby red potato (cut into 1/2 inch pieces)
4 stalks celery, chopped
2 cups carrots, peeled (cut into 1/2 pieces)
1 large white onions or 1 large yellow onion, roughly chopped
1 tablespoon cornstarch, plus 1 T water
salt, to taste
pepper, to taste

Steps:

  • Heat olive oil in large heavy pot over medium high heat.
  • Add stew meat and saute for about 6 minutes or until brown on all sides. Add garlic cloves and saute until fragrant, or about one minute.
  • Add beef broth/stock, red wine, Guinness, tomato paste, sugar, Worcestershire sauce, thyme, and bay leaves.
  • Stir to combine and bring mixture to a boil.
  • Once boiling, reduce heat to low.
  • Cover and simmer for 1 hour.
  • Stir occasionally.
  • Meanwhile, in another large pot, melt butter over medium heat until slightly foaming.
  • Add potatoes, celery, onion, and carrots and saute for about 15 minutes, or until golden.
  • Set aside until stew has simmered for 1 hour.
  • Add vegetables to beef stew and simmer uncovered until vegetables and beef are tender, about 40 minutes.
  • After that time, mix 1 Tablespoon of cornstarch with 1 Tablespoon of cold water until combined.
  • Slowly add to the stew, stirring for about 1 minute until thickened.
  • Discard bay leaves and remove any fat that has accumulated on top. Season with salt and pepper to taste.
  • Serve with a nice crusty bread and enjoy!
