This is a specific formula for achieving a perfectly pink prime rib cooked somewhere a shade under medium rare. To use this method you must have a full-sized, modern oven with a digital temperature setting that indicates when it is preheated. Older ovens with manual controls can vary greatly, and the doors may not have the proper insulation.

4 pounds prime rib roast
¼ cup unsalted butter, softened
1 tablespoon freshly ground black pepper
1 teaspoon herbes de Provence
kosher salt

Steps:

  • Place rib roast on a plate and bring to room temperature, about 4 hours.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Combine butter, pepper, and herbes de Provence in a bowl; mix until well blended. Spread butter mixture evenly over entire roast. Season roast generously with kosher salt.
  • Roast the 4-pound prime rib (see footnote if using a larger and smaller roast) in the preheated oven for 20 minutes. Turn the oven off and, leaving the roast in the oven with the door closed, let the roast sit in the oven for 2 hours. Remove roast from the oven, slice, and serve.

5 lbs standing rib roast (3 ribs)
1/8 cup garlic powder
1/8 cup black pepper
1/2 cup salt

Steps:

  • Combine seasonings. Rub seasonings all over roast several hours in advance.
  • Preheat oven to 375 degrees.
  • Place roast on rack with fatty side up and rib side down. Place roast in oven and cook one hour.
  • Turn off oven. DO NOT OPEN OVEN DOOR AT ALL DURING THIS PROCESS. Leave in oven for 3 hours without opening door.
  • About 45 minutes before serving turn oven on to 375 degrees to reheat roast. Very important not to open oven from time roast is put in until ready to serve.
  • This makes a RARE prime rib. If a more well done is desired, increase cooking time.

6 pounds prime rib (bone-in (with bones cut off and tied back on))
1/2 cup butter (softened)
6 garlic cloves (minced)
1 tablespoon kosher salt
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon black pepper
1 onion (quartered (if making the red wine au jus))
1/4 cup drippings from prime rib pan (make sure to separate the fat from the drippings)
2 cups beef broth
1 1/2 cups red wine
Optional: 1 tablespoon cornstarch or arrowroot powder (in a slurry) to thicken

Steps:

  • Remove the prime rib from the fridge 2-3 hours before cooking, and allow it to come to room temperature.
  • Preheat your oven to 450F/230C. In a small bowl, mix together the butter, garlic, salt, thyme, rosemary, and black pepper.
  • After the prime rib has come to room temperature, pat it down with paper towels to make sure it's dry. Then rub the entire outside of the prime rib with the herb butter mixture.
  • Place the prime rib in an oven-safe pan or roasting tray with the bones-side down, fat-side up. Place the onion slices in the pan around the meat, if you're making the red wine au jus. If not, you can omit the onions.
  • Cook the prime rib in the center of the oven for 20 minutes at 450F. It should get a nice sear on the outside. If not, cook it a few minutes longer. Then reduce the temperature of the oven to 325F and continue cooking until the internal temperature reaches 120F (about an hour and a half), for medium-rare. But go by temperature, not time, as it will depend on the size of your prime rib and your oven.
  • Remove the prime rib from the oven and let it rest for 20-30 minutes. You can tent it with aluminum foil to keep it warm. Then, remove the string and bones, and slice it up into thick 1/2" slices.
  • After you've removed the fat from the pan, add up to 1/4 cup of drippings back in along with the beef broth and red wine. If you have leftover herbs, you can toss those in as well.
  • Simmer this for about 15 minutes, or until the liquid has reduced by half. It's meant to be a thin sauce, but if you'd like to add a little bit of a thickener, you can do that as well. Strain the au jus to remove the onion and any browned bits, then drizzle over the prime rib.

1 (4 lb) standing rib roast (4-rib)
Lawry's Seasoned Salt
1 (5 lb) bag rock salt

Steps:

  • Sprinkle fatty cap of roast with seasoned salt to your taste.
  • In heavy roasting pan, spread rock salt evenly over bottom; place wire roasting rack on top of salt.
  • Place the roast on rack, fatty side up. Make sure no salt actually touches the beef.
  • Insert meat thermometer in thickest part of meat, making sure it does not touch a bone.
  • Roast in preheated 350 degrees F. oven until thermometer registers 130 degrees F. for rare, 140 degrees F. for medium or approximately 20 to 25 minutes per pound.
  • Remove from oven and let stand 20 minutes before carving.
  • Using a sharp carving knife, slice meat across the grain for serving.
  • Discard rock salt.
  • Serve with Lawry's Whipped Cream Horseradish.

1 (5 lb) choice cut prime rib roast
1/2 cup kosher salt
1 tablespoon garlic powder or 6 garlic cloves, crushed
pepper, generous amount
additional seasoning, as preferred

Steps:

  • Let roast come to room temperature, rub roast with seasonings.
  • Place roast, bone side down, in shallow roasting pan, but do not cover.
  • Add a small amount of water to pan.
  • Insert meat thermometer, not touching any bone.
  • Sear roast at 500°F for 15 minutes.
  • DO NOT OPEN THE OVEN DOOR!
  • Turn temperature down to 350°F.
  • Cook approximately 20 minutes per pound.
  • Rare-140-150°F.
  • Medium 150-160°F.
  • Well 170-180°F.
  • Allow roast to sit for 15 minutes after removing from the oven, then slice.

For our Sunday roast, we went with a foolproof reverse sear method - cooking the roast low and slow then finishing with an incredibly high heat - to get a juicy, perfectly medium-rare roast from edge to edge. The low heat dries the surface which allows the high heat to crisp it up nicely. And a long cooking time with a low, gentle heat avoids the gray band of overcooked meat that usually happens when you sear first.

One 3-rib standing rib roast (7 to 8 pounds)
2 cloves garlic, thinly sliced
1/4 cup kosher salt
2 tablespoons black or tricolor peppercorns, coarsely ground

Steps:

  • Pat the skin of the roast completely dry and place on a cutting board, fat-side up. Use a paring knife to make small slits all over the fat, and then stud the meat with the garlic slices. Sprinkle all over with the salt and pepper, wrap tightly with plastic wrap and refrigerate for 4 hours and up to overnight.
  • Preheat the oven to 250 degrees F. Unwrap the roast and place fat-side up on a rack set in a roasting pan.
  • Roast the meat until an instant-read thermometer inserted into the center of the meat registers 120 degrees F, about 4 hours. Remove from the oven and let sit for 1 hour. The temperature will continue to rise another 10 to 14 degrees as it sits.
  • Turn the oven to 500 degrees F. Place the roast back in the oven and bake until the fatty skin starts to crisp up and turn golden brown, 10 to 15 minutes. Let rest another 30 minutes before transferring to a cutting board for slicing.

HERB-BRINED PORK PRIME RIB ROAST

The pork is prepared for roasting like a prime rib of beef; you can follow the method here or have your butcher do it for you. For best results, start brining the pork five days before you plan to roast it. Times do not reflect this.

6 quarts cold water, divided
1 1/2 cups sugar
3/4 cup fine sea salt
8 large fresh thyme sprigs
6 turkish bay leaves, crumbled
4 juniper berries
2 teaspoons whole black peppercorns
6 1/2 lbs center-cut pork rib roast, well-trimmed (8-bone, about 12 to 14 inches long)
2 tablespoons chopped fresh thyme
2 teaspoons whole black peppercorns (crushed in mortar with pestle or in resealable plastic bag with mallet)

Steps:

  • For brine:.
  • Combine 1 quart water and all remaining ingredients in medium saucepan.
  • Bring to boil, stirring until sugar and salt dissolve.
  • Pour brine into wide pot or container large enough to hold pork (3- to 4-gallon capacity).
  • Add remaining 5 quarts cold water; stir to blend.
  • Let stand until brine is cool to touch, about 1 hour.
  • For pork:.
  • Place pork on work surface.
  • Trim off all but 1/4-inch layer of fat from roast.
  • Turn roast over so that rib bones point up.
  • Using boning knife and starting where meat meets rib bones, gradually cut loin away from rack of bones, leaving 2 inches of meat attached to bones (do not cut meat off bones completely).
  • Tie meat back onto bones with kitchen string at 2-inch intervals.
  • Place roast in brine, submerging pork completely and weighing down with heavy pot if necessary.
  • Cover and refrigerate 5 days.
  • Remove pork from brine; discard brine.
  • Rinse pork under cold running water for 5 minutes to reduce saltiness; pat dry with paper towels.
  • Place pork on rack set over sheet of foil; let stand at room temperature 2 hours.
  • Position rack in center of oven and preheat to 400°F
  • Place pork on rack in large roasting pan.
  • Mix thyme and crushed peppercorns in small bowl; sprinkle mixture over pork.
  • Roast until instant-read thermometer inserted into center of pork registers 140F, about 1 hour.
  • Remove from oven.
  • Let roast rest 30 minutes (internal temperature of roast will increase 5 to 10 degrees).
  • Remove kitchen string from roast.
  • Cut meat into slices and serve.

1/4 cup lemon juice

Steps:

  • For the Drowning Mixture, stir together the wine, onion, water, lemon juice, Worcestershire sauce, rosemary, marjoram, garlic salt, and water in a bowl.
  • Place meat in a plastic bag set in a shallow dish.
  • Add the mixture; close the bag.
  • Drown the beef in the refrigerator for 6 to 24 hours, turning occasionally.
  • Empty the beef’s swimming pool and throw the liquid away (unless you are a Jamie Oliver fan – if so, you can wash your hair with it).
  • Thoroughly mix all the Massaging Compound ingredients in a small bowl and use it all to give the beef a really good massage all over (you can tell when you’re done when you hear the beef whispering “Oooooh, that feels goooood).
  • Place the beef, fat side up, in a large roasting pan (or, if you’re an Emeril fan, “inside of” a large roasting pan).
  • Insert a meat thermometer into the center, making sure that it is not touching bones.
  • Roast in a 325°F oven to desired doneness, allowing 1¾ to 3 hours for rare (140°F internal temperature), 2¼ to 3¾ hours for medium (160°F internal temperature), or 2¾ to 4¼ hours for well done (170°F internal temperature).
  • Transfer the meat to a cutting board.
