FAVORITE OLD FASHIONED GINGERBREAD
This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

- In a large bowl, combine the first 9 ingredients. Cut in shortening until mixture resembles coarse crumbs. Store in 5 airtight pint containers in a cool, dry place for up to 6 months. Yield: 5 batches (10 cups total)., To prepare cake: Preheat oven to 350°. Lightly beat egg, water and molasses. Add one jar (2 cups) cake mix; beat until well blended. Spread into a greased 8-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool on a wire rack.

GINGERBREAD CAKE
An old fashioned gingerbread cake with buttery rum glaze is perfect for Christmas and holiday celebrations.

Steps:
- Melt butter in a saucepan and carefully mix in molasses, eggs, and brown sugar.
- Place baking soda in a 2-cup measure and pour hot water over it. Mix it into the butter-sugar mixture.
- In a large bowl, combine flour, ginger, cinnamon, cloves, allspice, and nutmeg. Stir into butter mixture.
- Pour batter into greased 13x9x2-inch baking pan and bake at 350 degrees for 20 minutes or until firm.
- Cool cake completely.
- In a small saucepan over medium heat, melt butter and add rum. Add powdered sugar and mix until well blended.
- Pour and spread glaze over the gingerbread cake.
