DRIED MOREL MUSHROOMS
These elusive tasty mushrooms are only available for hunting for a short time in the spring. When hunting - -please use a net bag such as the bag that covers your onions. The reason for this: While they are in your bag & you are moving around, the spores can shake free and fall to the ground to produce more mushrooms. Morels take 5 years to produce a nice crop in the wild.

Steps:
- Soak morels for up to 4 hours in salt water. The mushrooms are hollow, and the salt water will kill any little bugs that might be living in them.
- Drain and rinse with fresh water.
- Slice at least one side of the mushrooms.
- Lie mushrooms on a towel.
- Direct the air flow of a small fan onto the mushrooms and let dry up to 24 hours.
- The mushrooms will reduce in size drastically. When they are dry, bag them in a ziplock bag and throw them in the freezer to use later.
- Reconstituting Mushrooms:.
- Soak mushrooms in broth, wine, or water for up to 5 minutes. They will spring back to the size they were when they were picked.

- Saute onion and celery in butter until tender.
- Crush morels or other mushrooms with rolling pin, set aside.
- Stir the flour into the onion-celery mixture, add the water and crushed mushrooms. Simmer until the mushrooms are tender, (about 5 minutes).
- Add bouillon, milk and seasonings. Heat, but do not boil, and serve.

- Melt butter in a large pot over medium heat. Cook mushrooms in butter in batches, turning occasionally, until golden brown, about 10 minutes. Add a portion of the garlic at the end of each batch and cook until fragrant, about 1 minute. Remove mushroom mixture to a plate.
- Add onion to the pot. Cook and stir until onion has softened and turned translucent, about 5 minutes. Add mushroom mixture, thyme, and parsley. Pour wine into the pot and cook while scraping the browned bits of food off the bottom of the pan with a wooden spoon, about 3 minutes.
- Sprinkle flour over the mixture and stir until well incorporated. Add broth, bouillon, salt, and pepper and bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally, until thickened, about 10 minutes.
- Stir in cream and enough milk to reach desired thickness. Cook until heated through.

- Re-hydrate the morels in the stock for 30 minutes, or until hydrated. Agitate the mushrooms to remove any grit, then strain the liquid and reserve both separately. Trim the morels into bite size rounds that will fit on a spoon.
- When your roast, chicken, or other roasted meat is done, remove it from the oven and allow it to rest in a warm place while you prepare the gravy. Stir the cornstarch with the water and reserve.
- Place the roasting pan on the burner on medium heat, then deglaze the pan with the brandy and scrape with a wooden spoon to loosen up the browned bits. Cook until the brandy is almost evaporated, then add the stock, trimmed morels, and cornstarch and bring the mixture to a simmer.
- Cook until the sauce is thickened nicely, slightly reduced and glossy. Whisk in the butter if using. Season the mixture with salt to taste, then double check the seasoning one last time, transfer to a dish with a ladle and serve immediately.

- Heat the stock, then pour over the morels and allow to hydrate for 30 minutes, then swish them to remove grit, remove the mushrooms and reserve then strain the liquid and keep separate.
- Separate the mushrooms into 2 piles: saving prettiest, smallest mushrooms that will fit on a spoon for garnish, rough chop the other half.
- Sweat the celery and onion in 2 tablespoons of the butter for 5 minutes, add the rice and cook for a minute more, then add the sherry and reduce by half. Add the stock, and the chopped morels bring the mixture to a simmer and cook for 20 minutes on low heat, or until the rice is just tender.
- Transfer the mixture to a blender*, add the cream, and puree until very smooth—a minute or two, carefully starting on low speed and gradually moving to high as you get comfortable-hot soup in a blender can be dangerous--make sure there's room for air to escape through the top of the blender lid while pureeing. Gradually add 3 tablespoons of butter. Finally, season the mixture with salt and white pepper to taste.
