CHEF JOHN'S FISHERMAN'S PIE

Chef John's Fisherman's Pie image

My Fisherman's Pie gives you flaky cod mingled with spinach in a garlic and lemon-scented sauce underneath a browned crust of creamy, buttery potatoes on top. It really does taste fantastic.

Provided by Chef John

Categories     Seafood     Fish

Time 1h35m

Yield 6

Number Of Ingredients 19

3 russet potatoes, peeled and cut into chunks
3 tablespoons butter
1 pinch freshly grated nutmeg
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup milk
2 teaspoons olive oil
12 ounces baby spinach leaves
3 tablespoons butter
3 tablespoons all-purpose flour
2 cloves garlic, minced
2 cups cold milk, divided
2 teaspoons lemon zest
1 tablespoon butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 pounds boneless cod fillets
½ lemon, juiced
1 tablespoon chopped fresh chives for garnish

Steps:

  • Bring a large saucepan of salted water and to a boil; add russet potatoes to boiling water and cook until very tender, about 20 minutes. Drain well. Mash in 3 tablespoons butter until thoroughly combined. Season with nutmeg, salt, black pepper, and cayenne pepper to taste. Mash 1/2 cup milk into potato mixture until smooth.
  • Drizzle olive oil in a large Dutch oven over medium-high heat, add spinach, and season with a big pinch of salt. Cook, stirring occasionally, until spinach has wilted, about 1 minute. Transfer to a bowl lined with paper towels to wick away excess moisture.
  • Heat 3 tablespoons butter and flour in a saucepan over medium heat; whisk mixture to a smooth paste. Cook, stirring constantly, until mixture has a nutty smell and is slightly browned, about 2 minutes. Add chopped garlic; whisk until fragrant, 10 to 20 seconds.
  • Whisk 1 cup cold milk into flour mixture; cook until thickened. Whisk in remaining 1 cup milk and lemon zest. Bring white sauce to a gentle simmer, whisking constantly; season with salt. Turn heat to very low and keep sauce warm.
  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8x12-inch casserole dish with 1 tablespoon butter.
  • Season buttered pan with salt, black pepper, and cayenne pepper. Lay boneless cod fillets into the pan in a single layer. Season tops of fillets with more salt, black pepper, and cayenne pepper. Spread spinach evenly over fish and drizzle with lemon juice. Spoon white sauce over spinach; give casserole dish several taps and shakes to eliminate bubbles.
  • Drop mashed potatoes by heaping spoonfuls over the casserole and spread smoothly to cover. Place dish onto a rimmed baking sheet to catch spills.
  • Bake in the preheated oven until bubbling, about 40 minutes. Turn on oven's broiler and broil until potato crust has a golden brown top, about 2 minutes. Fish should flake easily. Let stand 10 minutes before serving. Garnish with a sprinkle of chives.

Fried Cod for Fish and Chips With Tartar Sauce image

Simple and Yummy! We think it's better than Ivar's fish and chips which is the best fast food fish and chips in the USA! Try this Recipe #406770 with it. ***Please note that the nutrition facts are a little misleading - you will not be using all of the flour/salt dredge mixture and most of the shortening will still be in the pan when you are done cooking.***

DRIED COD FISH PIE

Dried Cod Fish Pie image

Provided by MariaElena Sikolas-Toledo

Categories     Fish     Rice     Tomato     Bake     Orange     Mint     Cod

Yield Makes 8 (main-course) servings

Number Of Ingredients 22

For the cod:
1 1/2 pounds boneless, skinless salt cod (bacalao), rinsed well and cut into 4 or 5 large pieces
For the filling:
1/4 cup olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup long-grain white rice
2 ripe tomatoes, peeled and finely chopped
1 cup tomato purée
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh marjoram or oregano
1 packed teaspoon finely grated orange zest (from 1 orange)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
Table salt and freshly ground black pepper
For the phyllo dough:
5 cups all-purpose flour
1/2 cup dry white wine
1/2 cup olive oil, plus more for brushing the baking dish and phyllo dough
1 teaspoon table salt
1 to 1 1/2 cups lukewarm water

Steps:

  • Soak the cod:
  • In a large bowl, cover the cod pieces with 2 inches of cold water and soak, chilled, at least 24 hours and up to 36 hours, changing the water 2 to 3 times per day and tasting the cod to test for saltiness after the first 24 hours.
  • Make the filling:
  • Once the cod is sufficiently soaked, poach it in a large pot of boiling salted water for 5 minutes. Transfer the cod to a large bowl and reserve 2 cups of the poaching liquid. Using 2 forks, gently shred the cod into small pieces.
  • In a large, deep sauté pan, heat the oil over moderate heat until hot but not smoking. Add the onion and sauté until translucent, about 2 minutes. Add the garlic and sauté for 1 minute. Add the shredded cod, along with the rice and chopped tomatoes, stir to combine, and cook for 10 minutes. Add the tomato purée, parsley, mint, marjoram, orange zest, cinnamon, allspice, and the 2 cups reserved poaching liquid and simmer for 5 minutes. Season with salt and pepper, remove from the heat, and set aside while you make the phyllo dough.
  • Make the phyllo dough:
  • Place the flour in a large bowl and create a well in the center. Add the wine, olive oil, and salt to the well and use your hands to gradually combine the ingredients. Once all the liquid has been absorbed, gradually start adding water just as needed, while using your hands to incorporate the water into the dough. Continue working the dough and adding water until the dough is fairly uniform and no longer sticky-you may have water left over. Divide the dough into two balls and flatten them into discs. Return the discs of dough to the bowl and cover with plastic wrap followed by a large kitchen towel. Let the dough rest at room temperature for about 30 minutes.
  • Assemble and bake the pie:
  • Arrange a rack in the middle of the oven and preheat to 350°F. Generously brush a 13- by 9-inch baking dish with oil.
  • On a lightly floured surface, roll both discs of dough into roughly 18- by 14-inch rectangles. Arrange 1 rectangle of dough in the prepared baking dish, allowing any excess dough to hang over the edge. Add the cod filling, spreading it evenly in the baking dish. Arrange the second rectangle of dough on top of the cod filling and use your fingers to roll and crimp the edges of the dough together, making sure to create a good seal. Brush the pie with oil then sprinkle it with water. Use a toothpick or fork to poke a few holes in the top of the pie to allow steam to escape during cooking. Bake the pie until the dough is golden brown, about 1 hour. Transfer the pie to a wire rack to let cool for at least 30 minutes before cutting and serving.

FRIED BACCALà (SALTED COD FISH)

Fried Baccalà (Salted Cod Fish) image

Fried Baccalà (Salted Cod Fish) is a Christmas Eve tradition for many Italians! Note, you'll need to soak the cod for 4 days before starting this recipe.

Provided by Mamma C

Categories     Main Course

Time 31m

Number Of Ingredients 6

2 pounds baccalà ((skin and bones removed; see notes))
2 extra-large eggs ((beaten))
¾ cup all-purpose flour
1/3 teaspoon black pepper
1 ½ cups avocado oil ((or corn oil; see notes))
Lemon wedges for serving

Steps:

  • When you bring the dried baccalà home from the store, rinse it to remove some of the salt. Place the baccalà pieces in a large bowl and add enough cold water to cover the fish by at least two inches. Refrigerate it for four days, changing the water every 8 hours (2-3 times a day).
  • When you're ready to cook the skinned and deboned baccalà, rinse it and pat it dry with paper towels or a lint-free kitchen towel.
  • Use kitchen scissors to cut the fish into smaller pieces 3-to-5 inches long and 2 or 3 inches wide.
  • Beat the eggs in a shallow bowl. Add the flour to a dinner plate and stir in the black pepper.
  • Set up an assembly line from left to right with the baccalà, the beaten eggs, the flour and a large platter or pan to hold the fish.
  • Dip each piece of cod in the eggs, letting the excess drip off. Then, place the baccalà in the flour, patting on the flour with the back of a fork. Flip the fish and flour the other side. Let any excess flour fall off and add the fish to your platter in a single layer.
  • Add your avocado oil to a 12-inch frying pan and heat it on medium high. When the oil temperature reaches 350 degrees F (test it with an instant thermometer or just wait until it's starting to ripple), add about half the baccalà to the pan in a single layer. (You will need to fry it in two batches.)
  • Fry the first side for 3-4 minutes (or less for thin pieces). Flip over the fish and fry the second side for another 3-4 minutes (or just 2 minutes for thin pieces). It's a good idea to remove a thick piece to a plate and cut it open to see if it's done. The fish should flake easily and not look shiny.
  • Place the fried baccalà on a cooling rack positioned over paper towels to drain. (This prevents sogginess.) If you don't have a cooling rack, you can drain the baccalà on a platter lined with paper towels.
  • Squeeze lemon juice onto the baccalà and serve immediately for the crispiest texture.
  • Store leftovers in the refrigerator for up to three days. Leftovers are delicious slightly warmed in the microwave and served with mayo for dipping, or in a sandwich.

Time 45m

Yield Serves 6

Number Of Ingredients 0

Steps:

  • Preheat the oven to 230C/fan 210C/gas 8. Heat the oil in a frying pan and gently fry the cod until it starts to flake, approximately 5 mins each side depending on thickness of the fish.
  • Boil the potatoes until soft (about 10-15 mins) and mash. Season to taste. Simmer the carrots in a small amount of water for 5 minutes.
  • Make the cheese sauce: melt the butter in a pan. Add the flour and stir over a low heat for 1 minute. Add the milk a little bit at a time, stirring continuously. Continue to cook the sauce, stirring all the while, until it starts to thicken. Add 4 oz of the cheese and cook for a further minute until the cheese has melted. Add pepper to taste.
  • Butter a pie dish. Break the fish into large flakes and place evenly in the bottom of the dish. Add the carrots, and the parsley if using. Pour the cheese sauce over the fish and carrots. Top with the mashed potato, using a fork to spread evenly and make a pattern on top. Sprinkle the remaining cheese over the top.
  • Bake in the oven for 25-30 minutes, until the top is light brown. Serve with vegetables or a hearty salad.

  • Preparing the codfish: First, de-salt the codfish by soaking in plain water (enough to cover) for at least 24 hours in the fridge. Change the water 4 or more times. If using salted, dry-weight codfish, bring it to a quick boil. Drain well and pat dry the codfish just before you are about to start cooking. Cut codfish fillets into smaller pieces. Codfish preserved in salt tastes much better than fresh cod, which is rather bland.
  • In a large, non-stick skillet, heat 2 tablespoons of olive oil over medium heat, then add the onion. Cook onion until translucent, about 3 to 4 minutes (the goal here is to cook the onions without browning). Add the garlic and let cook for about 1 minutes, stirring often. Transfer cooked onion and garlic to a small bowl, and reserve.
  • Using the same skillet where the onions and garlic were cooked, heat remaining 3 tablespoons of olive oil and cook the codfish pieces over medium heat until soft, about 7 to 8 minutes, turning them at least once. Remove from heat and flake them with tongs while they are still hot. Season with salt, pepper, and the bouillon; stir. Add the lime juice and the chopped chives, and stir again. Reserve. At this point, you can either combine the cooked flaked cod with the cooked onion-garlic mixture, or reserve each separately for assembly according to the instructions below. Since this recipe does not call for sliced onions, when I prepare the dish I prefer to combine the cod and the onion-garlic mixture right away.
  • Making the mashed potatoes: In a large pot, cover potatoes with salted cold water and bring to a boil over medium-high heat; then, reduce heat to medium and let simmer until fork tender (about 20 minutes). Drain cooked potatoes and mash them well. Heat the heavy cream and milk together over medium heat until simmering. Add to the mashed potatoes and stir until combined. Stir in the salt, pepper, nutmeg, and the melted butter. Let mixture cool and mix in the yolk. Reserve.
