CHERRY AND AMARETTI PARFAITS
The familiarity of cherry cheesecake is reimagined in this surprisingly simple dessert. In each parfait, a quick, creamy ricotta filling is layered over sweetened poached cherries and topped with crumbled almond cookies from the market.

- Combine cherries, water, granulated sugar, and 1/8 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, and cook, stirring occasionally, for 20 minutes. Let cool.
- Meanwhile, blend cream cheese, ricotta, vanilla, confectioners' sugar, and remaining 1/8 teaspoon salt in a food processor until smooth. Divide cherries among 4 glasses, then top each with ricotta mixture. Sprinkle tops with crumbled amaretti cookies, and serve immediately.
DRIED CHERRY PARFAIT
Steps:
- Warm the wine in a small saucepan. Add the cherries and set aside for 30 minutes. Drain the cherries and spread them on paper towels to remove excess moisture.
- Place half the cherries in each of two large-stemmed goblets. Sprinkle with half the brown sugar.
- If using fromage blanc, beat it lightly to smooth it. With the cottage cheese, puree it in a blender or force it through a sieve to smooth it. Mix either cheese with the yogurt. Spoon the cheese mixture over the sugared cherries in the goblets, then add the remaining cherries and sprinkle with the rest of the brown sugar on top. Serve at once.

Steps:
- Fold white chocolate chunks into dark chocolate ice cream in large bowl. Cover and freeze until firm, about 4 hours.
- Bring 3/4 cup water to boil in heavy medium saucepan. Whisk in cocoa. Add butter. Stir over low heat until mixture is smooth. Add both sugars, corn syrup and salt. Stir over low heat until sugars dissolve, about 5 minutes. Remove from heat. Stir in vanilla. (Dark chocolate ice cream and sauce can be made 1 week ahead. Keep ice cream frozen. Cover sauce and refrigerate. Rewarm sauce over low heat.)
- Drizzle some warm chocolate sauce into bottom of 6 parfait glasses or wineglasses. Place 1 scoop mint chip ice cream in each glass. Spoon some chocolate sauce over ice cream. Spoon dark chocolate ice cream, then mint chip ice cream into glasses, spooning some sauce over each layer. Sprinkle dried cherries over. Garnish parfaits with fresh mint.

- Pour the cream into a bowl and place it in the fridge. Line a medium loaf tin with baking paper as neatly as possible (see notes for tips).
- Place the pitted cherries, sugar and water in a small saucepan over low heat. Bring to a simmer, stirring regularly. After about 5 minutes the juice should be nearly covering the cherries - at this point use an immersion blender (or transfer it to a blender) to puree the cherries.
