- In a heavy medium-size saucepan, combine all ingredients & bring to a boil.
- Reduce heat & simmer 20 to 30 minutes until thickened.
- Serve hot or cold with any type of meat. Rrefrigerate any leftovers.

- In a medium pot, heat oil over medium low heat then add onions and garlic.
- Cook until softened, but not browned, 6 - 7 minutes, then add red wine vinegar and cook a few minutes more.
- Add in cherries, currants, ginger, brown sugar, mustard, salt and pepper.

- In a 6- to 8-qt. heavy pot stir together all ingredients. Bring to boiling; reduce heat. Simmer, uncovered, about 1 hour or until thickened, stirring occasionally.
- Ladle hot chutney into hot clean half-pint canning jars, leaving a 1/2-inch headspace. Wipe jar rims; adjust lids and screw bands.
