BROWN RICE PUDDING WITH PRUNES AND APRICOTS



Brown Rice Pudding With Prunes and Apricots image

This is a pudding for whole food-minded people, deliciously different from the traditional rice pudding. Taken from Delia Smith's Complete Cookery Course ISBN 0-563-36249-9. Cooking and preparation times are a guesstimate.

275 ml brown rice
570 ml milk
4 tablespoons dark brown sugar
1 egg, beaten
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg, grated
110 g dried apricots, soaked overnight then drained and chopped
175 g prunes, soaked overnight then drained and chopped
150 g natural yoghurt

Steps:

  • In a thick-based saucepan bring the milk to the boil and sprinkle in the rice.
  • Stir, then cover and cook on a very low heat for about 50 minutes or until the rice is tender.
  • Keep an eye on it or the milk might boil over and, towards the end of the cooking time, have a peep as you may need to add a drop more milk.
  • Then take it off the heat and stir in 3 tbsps of the sugar, the beaten egg, cinnamon and nutmeg.
  • Next, butter a 4 pint (2.25 litre) casserole dish, spread half the rice mixture in it and top this with half the fruit.
  • Spread the rest of the rice on top and cover this with the remaining fruit.
  • Cover the casserole with a lid and bake in a pre-heated oven for 30 minutes at gas mark 4, 350F or 180°C.
  • At the end of the cooking time, remove the pudding from the oven, spread the yoghurt over the top and sprinkle with the remaining tbsp of sugar.

For pastry dough:
2 1/4 cups cake flour (not self-rising)
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, frozen
8 to 10 tablespoons ice water
For filling:
Pie weights or raw rice for weighting shell
5 Granny Smith apples (about 2 1/2 pounds)
1 cup dried apricots
1/2 cup plus 2 tablespoons sugar
1 cup water
1/2 cup pitted prunes
1/2 cup apricot jam
Accompaniment: crème fraîche or whipped cream

Steps:

  • Make pastry dough:
  • Into a chilled large metal bowl sift together flour and salt. Set a grater in bowl and using largest teardrop-shaped holes coarsely grate frozen butter into flour, gently lifting and tossing flour to coat butter. Chill mixture 20 minutes. Drizzle 8 tablespoons ice water evenly over mixture and gently stir with a fork until just incorporated. Test mixture by gently squeezing a small handful: When it has proper texture it should hold together without crumbling apart. If necessary, add more water, 1 tablespoon at a time, stirring until just incorporated, and test mixture again. (If you overwork or add too much water, pastry will be tough.)
  • Turn mixture out onto a lightly floured surface and with floured hands mound into 4 portions. With heel of hand smear each portion once in a forward motion to help distribute fat. Gather dough portions together and form it, rotating it on work surface, into a disk (dough will not be smooth). Chill dough, wrapped in plastic wrap, at least 2 hours, or until firm, and up to 2 days.
  • On floured surface with a floured rolling pin roll out dough 1/4 inch thick (about a 15-inch round). Fit dough into a 12 1/2- by 1-inch fluted round tart pan with a removable bottom and with a rolling pin roll over top of shell to trim pastry flush with rim. With a fork prick bottom of shell all over. Chill shell 30 minutes.
  • Preheat oven to 425° F.
  • Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 20 minutes. Carefully remove weights or rice and foil and bake shell until golden, about 10 minutes more. Cool shell in pan on a rack.
  • Make filling
  • Peel, core, and chop 1 apple. In a saucepan cook chopped apple, apricots, 1/2 cup sugar, and water, covered, over moderately low heat, stirring occasionally, until fruit is tender, about 12 minutes. Cool mixture 20 minutes. In a food processor pulse mixture until smooth and transfer to a small bowl. Chop prunes and stir into purée. Peel remaining 4 apples and quarter. Core apples and cut lengthwise into 1/8-inch-thick slices.
  • Spoon apricot purée evenly into shell and smooth top. Decoratively arrange apple slices, overlapping them, over purée and sprinkle with remaining 2 tablespoons sugar.
  • Bake tart in middle of oven until apple slices are slightly browned and crust is golden brown, about 45 minutes. Cool tart slightly in pan on rack. In a small saucepan melt jam over low heat and pour through a fine sieve into a small bowl. Press hard on solids and discard. With a pastry brush, brush glaze evenly over tart.
  • Serve tart with crème fraîche or whipped cream.

3 tablespoons honey
1 tablespoon olive oil
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon chili powder
1/2 teaspoon ground cinnamon
1 medium onion, sliced
4 garlic cloves, minced
2/3 cup pitted prune
2/3 cup dried apricot, halved
1/2 teaspoon salt
1/2 teaspoon pepper
2 lbs boneless skinless chicken thighs, halved

Steps:

  • In the morning (or the night before), combine first 13 ingredients in ungreased 2 quart shallow casserole.
  • Add chicken. Turn to coat. Cover. Chill for at least 8 hours or overnight. Stir.
  • Bake chicken, uncovered, in 400 degree F oven for about 30 minutes, stirring occasionally, until chicken is no longer pink.

2/3 cup red wine vinegar
2 garlic cloves, crushed
2 tablespoons fresh oregano
salt and pepper, sprinkle generously to taste
2/3 cup olive oil
6 ounces dried prunes, quartered
6 ounces dried apricots, quartered
4 ounces green olives, pitted
2 ounces capers
1 bay leaf
4 large whole chicken breasts
3 tablespoons brown sugar
3/4 cup white wine

Steps:

  • Combine all above ingredients (****EXCEPT brown sugar & white wine) into marinade. Place chicken in a zip lock bag or a baking dish that can be tightly sealed. Cover the chicken with marinade. Refrigerate for at least 4 hours or overnight if possible.
  • One hour before baking: Time to arrange in the baking dish and bring to room temperature before cooking.
  • Distribute chicken in single layer in baking pan, DO NOT discard the marinade. Pour it over the chicken with all the other marinade ingredients. Sprinkle brown sugar over the chicken breasts and pour white wine around the breasts.
  • Preheat oven: Cook UNCOVERED at 325 for 50 minutes or until chicken is cooked through and no longer pink. Cooking time may vary depending on the thickness of your chicken breasts. Cook to 165°F
  • Arrange cooked chicken breasts on a platter, top with the sauce and other ingredients.
  • NOTE:.
  • This recipe yields a lot of sauce, so you can double the chicken content without having to double the marinade. It's nice because you can make it all ahead of time!

1 tablespoon butter
4 ounces diced onions (1 medium)
2 cloves garlic, minced
1/8 ounce ginger (size of an American quarter)
1/2 tablespoon coriander seed
1 teaspoon dried basil
1 cup white rice
2 ounces dried apricots, diced
1/3 cup white wine
1 teaspoon lemon, zest of
2 cups hot water or 2 cups broth
1/2 teaspoon salt
pepper
1 -2 tablespoon crushed cashews

Steps:

  • In a hot heavy bottom pan heat butter and oil
  • Saute onion, garlic and ginger till translucent add coriander seeds, basil, rice and apricots stir to coat with onion mixture adding wine and cook till wine is absorbed
  • Add zest and water simmering covered over low heat for 20-25 minutes
  • Fluff with fork and season with salt and pepper
  • Top with cashews and garnish with fresh basil
