FRIED APPLE RINGS
Four ingredients and a skillet are all that you'll need for these delightful apple rings that Mary Jane Ruther cooks in her Trenton, New Jersey kitchen. Serve them as a sweet side dish alongside pork...or for dessert.

- In a skillet, melt butter over medium heat. Stir in sugar and lemon juice. Cut the apple into four rings; add to skillet. Reduce heat. Cover and simmer for 10-15 minutes or until apple rings are tender, turning frequently. Serve warm.

DRIED APPLE AND CREAM CHEESE SCONES
The cream cheese in these scones ensure they are always moist, while the sweet, dried apples add great flavour. If you find the dried apples difficult to dice, simply tear them into small pieces.

- Preheat your oven to 400° F. and prepare an ungreased baking sheet by lining with parchment paper or a silpat.
- In a medium-sized bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a fork, cut in the cream cheese and butter, until the chunks of butter are the size of peas. Stir in the dried apples.
- In a separate small bowl, whisk together the egg, vanilla and milk. Add these wet ingredients to the dry mixture and stir with a fork until the dough is evenly moistened.
- Turn the dough out onto a floured piece of parchment paper and fold the dough over onto itself several times, until it holds together. Pat the dough into a 3/4″ thick square or circle.
- Cut the dough into desired size of squares, wedges, or diamonds.
- Brush the tops lightly with milk and sprinkle with sparkling white or demerara sugar. Place the scones about 2 inches apart on the prepared baking sheet.
- Bake for 18-20 minutes, until the tops are light golden brown. Serve hot, with butter or jam.

- Core the apples, slice into 1-inch thick rings,m and soak for 10 minutes in the salt nad easter solution. Drqin and thread the apple rings onto skewers. (Note: Soad wooden skewers in water overnight before using),.
- Place in a preheated 140F oven, alternating the apple rings on the rungs of the oven racks so that they are not touching. Bake for 4-5 hours or until leathery but pliable.
- Let cool for 10-12 hours on dish towels. Place in a labeled airtight container in a cool, dark place,. Soak for 24 hours in water to reconstitute.
- OVEN-DRYING TIP: Oven-drying is a more exact method than sun-drying; the only problem can be in keeping your oven at the correct, low temperature. Your aim in drying is not to heat the food, but rather to remove the moisture from it.

- Fill a large bowl about half-full with cold water and and lemon juice. I usually just eyeball it, about 1 lemon per 5-6 cups of water should be fine.
- Peel and core your apples. Slice them into very thick slices, about ½-inch. I like to cut my slices in half so they are half-moons, since I can fit more on a dehydrator tray.

- Start with apples that you know you like and that are not bruised or mushy (save those for apple sauce).
- Peel the apples if you want or just scrub them with a little apple cider vinegar to get the wax off.
