DRIED APPLE AND CREAM CHEESE SCONES

Dried Apple and Cream Cheese Scones image

The cream cheese in these scones ensure they are always moist, while the sweet, dried apples add great flavour. If you find the dried apples difficult to dice, simply tear them into small pieces.

Categories     Snack

Time 35m

Number Of Ingredients 11

3 1/4 cups all-purpose flour
1/2 cup granulated white sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
8 oz cream cheese (cold)
1/2 cup unsalted butter (cold)
3/4 cup diced dried apples (not apple chips though (home made or store-bought))
1 large egg
2 tsp. vanilla
1/4 cup milk (plus 1 to 2 tablespoons more, if needed)
Sparkling or demerara sugar for garnish (optional)

Steps:

  • Preheat your oven to 400° F. and prepare an ungreased baking sheet by lining with parchment paper or a silpat.
  • In a medium-sized bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a fork, cut in the cream cheese and butter, until the chunks of butter are the size of peas. Stir in the dried apples.
  • In a separate small bowl, whisk together the egg, vanilla and milk. Add these wet ingredients to the dry mixture and stir with a fork until the dough is evenly moistened.
  • Turn the dough out onto a floured piece of parchment paper and fold the dough over onto itself several times, until it holds together. Pat the dough into a 3/4″ thick square or circle.
  • Cut the dough into desired size of squares, wedges, or diamonds.
  • Brush the tops lightly with milk and sprinkle with sparkling white or demerara sugar. Place the scones about 2 inches apart on the prepared baking sheet.
  • Bake for 18-20 minutes, until the tops are light golden brown. Serve hot, with butter or jam.

  • Fill a large bowl about half-full with cold water and and lemon juice. I usually just eyeball it, about 1 lemon per 5-6 cups of water should be fine.
  • Peel and core your apples. Slice them into very thick slices, about ½-inch. I like to cut my slices in half so they are half-moons, since I can fit more on a dehydrator tray.
  • When all the apples are sliced, remove them from the water and place them evenly on the dehydrator trays, close but not touching.

  • Start with apples that you know you like and that are not bruised or mushy (save those for apple sauce).
  • Peel the apples if you want or just scrub them with a little apple cider vinegar to get the wax off.
  • Core the apple and slice into 1/4" slices. I really like using an apple peeler/corer/slicer for this; it can also be used for pears.
  • Dip the apples in some water with citric acid (fruit fresh) or lemon juice in it to keep them from browning if you want to. Just like dehydrated bananas the apples turn brown if you don't but they taste just fine and are fine to eat.

  • Core the apples. Using a mandoline (careful of your fingers!) or a sharp knife, cut rings about 2mm (<1/8") thick.
  • One by one, dunk both sides of the apple slices into the lemon juice and place on a baking sheet lined with parchment paper or a silicone mat. You can crowd the apple slices but do not overlap them.
  • If you have a dehydrator setting on your oven, bake at 175°F for 2 or so hours, longer if you want the rings to be crispy. Flip them over after about an hour.

  • Position racks in the upper and lower third of the oven; preheat to 200 degrees F. Line 2 large baking sheets with parchment paper.
  • Using a sharp knife or a mandoline (if you have one), slice 2 large apples as thin as possible, about 1/8 inch thick. (We skip peeling and coring because we like the look of the dried skins and the pretty pattern the core makes in the center.) Soak the slices in the lemon water for 30 minutes. Drain and pat the slices as dry as possible with paper towels (or clean kitchen towels). Place on the prepared baking sheets in a single layer.
  • Bake the slices on the upper and lower racks for 1 hour. Remove from the oven and turn each slice over; return the pans to the oven. Bake 1 more hour for soft dried apples or about 2 more hours for crispy apple chips. (Timing depends on your oven, the type of apple and thickness of the slices; check periodically and reduce or increase the total time as needed.) Turn off the oven, crack the door and leave the apples in the oven until the oven cools completely, 1 to 2 hours.
