LEMON FISH ROLL-UPS



Lemon Fish Roll-Ups image

This is another one from the Favorite Brand Names Cookbook. It is my absolute favorite meal that we have at my house. We make it at least once a week. Anything that can get my son eating rice is great. I promise you won't be disappointed! Microwave instructions follow.

1 cup cooked rice
1 (10 ounce) package frozen chopped broccoli, thawed and well drained
1 cup shredded cheddar cheese
1/3 cup margarine or 1/3 cup butter, melted
1/3 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
8 fish fillets, fresh (about 2 lbs) or 8 fish fillets, frozen, thawed (about 2 lbs)

Steps:

  • Preheat oven to 375.
  • In medium bowl, combine rice, broccoli and cheese.
  • In small bowl, combine margarine, lemon juice, salt and pepper; add 1/4 CUP ONLY to broccoli mixture.
  • Place equal amounts of broccoli mixture on fillets; roll up.
  • Place seam side down in shallow baking dish; pour remaining margarine mixture over roll-ups.
  • Bake 20 minutes or until fish flakes with fork.
  • Garnish with paprika if desired.
  • Microwave: Prepare fish as above. Arrange in shallow baking dish.
  • Cook tightly covered on HIGH for 10-12 minutes or until fish flakes with fork, rotating dish once.
  • Serve as above.

I like this recipe because it is a cracker based stuffing. This is a great recipe for a dinner party served with a tartar sauce or lemon butter sauce. I got this recipe from the all recipe site.

2/3 cup butter
2 tablespoons finely minced onions
1 cup minced crabmeat, fresh or 1 cup imitation crabmeat
2 tablespoons finely minced fresh parsley
1/4 teaspoon garlic powder
24 butter flavored crackers, crushed
12 (6 ounce) fillets sole or 12 (6 ounce) other thin white fish fillets
2 tablespoons lemon juice
1/4 cup grated parmesan cheese
3 tablespoons butter, fot dotting each roll
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Lighty coat a 9x13" baking pan with cooking spray or butter.
  • Melt 2/3cup butter in pan over medium heat.
  • Add onion and saute for 1 minute.
  • add crabmeat, parsley, garlic powder,salt and pepper.
  • Stir and cook 1 minute more.
  • Remove from heat and add crushed crackers.
  • Spread mixture evenly over 12 fillets sprinkle with lemon juice and parmesan cheese.
  • Roll up fillets and hold together with toothpicks.
  • Place in baking dish and dot each fillet with butter.
  • Cover pan and seal tightly with foil.
  • Bake in preheated oven for 15 to 17 minutes until fish flakes.

SPINACH-FILLED FISH ROLLS

1 pound sole, orange roughy or flounder fillets
1 1/2 cups firmly packed spinach leaves
1/4 teaspoon garlic salt
1/3 cup fat-free mayonnaise or salad dressing
1/2 teaspoon Dijon mustard
1/4 cup garlic-flavored croutons, crushed
Lemon wedge, if desired

Steps:

  • Heat oven to 400°F. Spray square baking dish, 8x8x2 inches, with cooking spray. If fish fillets are large, cut into 4 serving pieces.
  • Place spinach on fish; sprinkle with garlic salt. Roll up each fillet, beginning at narrow end. Place rolls, with points underneath, in baking dish. Mix mayonnaise and mustard; spoon onto each roll. Sprinkle with crushed croutons.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Serve with lemon wedges.

Yogurt provides a wonderful addition to the cucumber sauce that's used in these fish rolls that are made with Progresso® bread crumbs - a tasty dinner that's ready in 30 minutes.

6 oz Greek plain yogurt
3 tablespoons mayonnaise
1 medium cucumber, peeled, seeded, coarsely grated
3 tablespoons chopped fresh dill weed
1 tablespoon chopped green onion (1 medium)
1 tablespoon lemon juice
1/2 teaspoon salt
2 lb fresh flounder, halibut or cod fillets, skin removed
1/2 cup milk
1 egg
1 cup Progresso™ panko bread crumbs
1 teaspoon salt
2 tablespoons vegetable oil
2 tablespoons butter, melted
12 hot dog buns, split
Lemon slices, if desired
Sprigs fresh dill weed, if desired

Steps:

  • In medium bowl, mix Cucumber Sauce ingredients. Cover and refrigerate until ready to serve.
  • Cut fish fillets into 12 serving pieces. In pie plate or shallow pan, mix milk and egg. In another pie plate or shallow pan, mix bread crumbs and salt. Dip fillets into milk mixture; roll in bread crumbs. Shake off excess crumbs.
  • In 12-inch skillet, heat oil over medium-high heat. Cook fish fillets in oil 10 to 12 minutes, turning once, until fish flakes easily with fork. Keep warm.
  • Heat 10-inch skillet over medium heat. Brush melted butter on cut sides of buns. Place cut sides down in skillet; cook about 3 minutes or until toasted. Place buns on plates; fill each with fish fillet and about 3 tablespoons sauce. Serve with lemon slices and fresh dill.

This recipe is from my childhood. My gramma used to cook it on family reunions, is delicious and perfect for a dinner party. She used "cazón" is a shark, I believe it's called "dogfish".

1 lb fish, fillets
1 bunch spinach
1/2 cup sour cream
6 ounces mozzarella cheese, grated
1 teaspoon salt
1 pinch pepper
2 lemons, juice

Steps:

  • Season the filets with salt, pepper and lemon. Macerate for 30 minute.
  • Cook the spinach in a casserole until is dry.
  • Put some spinach, cheese and cream inside each fillet, then rolled up.
  • Put the rolls in a greased baking dish. Add some spinach, cheese and cream over each roll.
  • Cover the dish with foil and bake 350 degree oven, check the fish, bake until the cheese is grilled.
