I like this recipe for Cornish hens because it's easy to do and a delicious entrée for two. The basting ingredients result in a beautifully browned hen, sealing in the juices so that it is moist, tender and quite flavorful.

- Place hens on a rack in a shallow baking pan. Combine the apple juice, soy sauce and browning sauce if desired; pour over hens. , Bake, uncovered, at 350° for 50-60 minutes or until a thermometer reads 180°, basting occasionally with pan juices.

- Preheat oven to 450 F.
- Spread out chopped vegetables and rosemary in the bottom of 9 x 13 inch baking dish.
- Rub olive oil lightly over the Cornish hens. Set aside.
- In a bowl, mix together spices and sprinkle generously over the hens, being sure to season the inside cavity as well. ( Want more flavor? See note)
- Place the hens on top of the bed of vegetables.
- Run your fingers under the skin to loosen it.
- Place a slice of butter under the skin of each hen.
- Tie the legs together with kitchen string or foil paper. (I like to sprinkle on more parsley at this point but that's optional)
- Bake for 50-60 minutes, depending on size of hens.
- Let hens rest for 15 minutes before eating.

- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
DRESSED-UP CORNISH HEN
"Although our children are grown, it seems like I'm usually feeding a bunch. But when my husband and I dine alone, this is one of our favorite dishes. Stick a couple of baked potatoes in the oven and toss a salad, and you have a great meal."

Pour half of the marinade over hen; seal bag and refrigerate for 8 hours or overnight, turning several times. Refrigerate remaining marinade for basting., Drain and discard marinade. Place hen, skin side up, in a greased 9-in. square baking dish. Bake, uncovered, at 400° for 30 minutes. Baste with reserved marinade. Bake 20-30 minutes longer or until a thermometer reads 180°. SPECIAL CORNISH HEN
This is a very rich dish. Garlic lovers sing it's praise. This is another of my originals. Recommended side dishes: Rouqfort Green Beans Candied Dill Carrots *This can be cooked at camp in a dutch oven with coals ( majority of coals on lid). Place hen on heat proof plate set on bottle caps or small stones to keep off the bottom of oven. Add water to bottom of oven to just cover; keep water level constant; test for doneness after 1.5 hours. To cook on grill, use indirect heat and turn often. Please make sure you sew or pin closed the cavity...it is need to steam the stuffing. Also make sure you cook to the recommended temp please for the same reason.

- Pre heat oven to 350o F.
- Mix the vegetables,wine, herbs, and oil together in a bowl.
- Chop and sweat the bacon in a cast iron skillet, add to vegetable mixture grease and all. Salt and pepper to taste.
- Stuff the hen with this mixture and sew closed tightly ( this is needed to maintain moisture in the finished product ).
- Salt and pepper the stufffed hen well.
- Place hen on rack in shallow oven proof pan*. Brush with melted butter.
- Roast for 1.5 to 2 hours, basting often, until juices run clear or instant read thermometer reads 180 o. Allow to sit for 10 minutes before serving.
- Cut hen in half lengthwise and serve with the stuffing.

- Mix all the ingredients, except the hens, in a blender. Mix until the garlic is completely pureed into it.
- Place the game hens into a seal-able container. Pour the mixture over the game hens and marinade in the fridge for a few hours, or even overnight.
- When you are ready to cook, place them onto a foil lined baking sheet. Pour the remainder of the marinade over the hens.
- Cook in a 350 degree oven for 25-30 minutes, these cook very fast when halved. Cook them to a temperature of 165 °F when a thermometer is inserted deep in the thigh,but not touching the bone.

PLUM-GLAZED CORNISH GAME HENS
These plum jam-glazed Cornish game hens are fall-off-the-bone yumminess! I use homemade sand plum jelly for the glaze.

- Place the game hens in a slow cooker. Sprinkle with red pepper flakes.
- Mix the plum jam and onion soup mix together in a bowl until well blended. Remove 1/4 cup of the jam mixture and refrigerate until needed. Brush the remaining jam mixture over the hens.
- Set the slow cooker on Low for 7 hours. Brush the reserved glaze over the hens. Cook on Low 1 hour more. Place hens on serving plates and garnish with kiwifruit slices.

- Get out a large food-grade container. You can use a large pot if you have one large enough. Try to avoid metal if at all possible, because from what I've read it can do strange things to your birds!
- Add the salt, sugar, garlic, peppercorns, ground mustard, and onion powder to your pot. (Do not worry if you don't have garlic, peppercorns, ground mustard, or onion powder because these can be omitted. I would discourage this, but sometimes you just don't have an ingredient.) Pour the warm water over it all and stir it so the salt and sugar dissolves. Put the pot into your fridge until the water has cooled down.
- Take the pot out of the fridge and get your Cornish hens ready. Remove the giblets and submerge the hens into the brine. Put the pot back in the fridge for about 6 hours. Remove the pot from the fridge, flip the birds over, and put the pot back into the fridge for another 6 hours.
