4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Tangy, sweet old fashioned baked beans, are made the easy way in this side dish. This is my grandma's favorite semi home-made recipe. She makes it every Thanksgiving, and we usually end up scraping the pan clean! Never any leftovers!

2 (28 ounce) cans baked beans
1 small onion, chopped
2 tablespoons brown sugar
3 tablespoons pancake syrup
2 tablespoons ketchup
2 teaspoons prepared yellow mustard
4 slices bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the baked beans, onion, brown sugar, syrup, ketchup and mustard. Pour into a 9x13 inch baking dish, and lay strips of bacon across the top.
  • Bake for 35 to 40 minutes in the preheated oven, until the bacon is browned and the beans have thickened.

2 (15 ounce) cans baked beans with pork
½ cup packed brown sugar
½ onion, chopped
½ cup ketchup
1 tablespoon prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon red wine vinegar
salt and pepper to taste
2 slices bacon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x9 inch baking dish, combine the pork and beans, brown sugar, onion, ketchup, mustard, Worcestershire sauce and vinegar and season with salt and pepper to taste. Top with the bacon slices.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until sauce is thickened and bacon is cooked.

I got this recipe from a PACE Salsa summer pocket cookbook many years ago. It is a simple method to dress up canned baked beans. I have adjusted the ingredients/measurements for our personal tastes and I freepour everything, but had to provide measurements. Use the measurements as a guide only. I am always asked for the recipe or to bring them to BBQs and potlucks. They are quick, easy and without the hassle of making beans from scratch. The cumin and salsa gives them the kick and unique taste that have people coming back for more. I also make a big batch to ensure leftovers and put in the freezer. If you go camping, the frozen baked beans in ziploc bags make excellent icepacks! Enjoy! Edited to add: I make this in a 6 qt crockpot and the recipe as posted below fits perfectly.

1 lb bacon
2 large onions, chopped
4 (28 ounce) cans baked beans, any flavor, I use Bushes
1/4 cup ketchup (more or less to taste)
2 cups chunky salsa, I use Chi Chi's or Pace (mild, medium or hot to taste, I use hot)
2 tablespoons honey or 1 tablespoon agave nectar
2 tablespoons ground cumin (to taste, I free sprinkle it and add more to taste as it slo cooks)
1 tablespoon red chili pepper flakes, or to taste

Steps:

  • Fry bacon in frying pan.
  • I cut into bite sized pieces with scissors before frying.
  • As bacon fries, chop onions.
  • When bacon is finished, remove from pan,drain and wrap in paper towels to absorb grease.
  • Saute onions in bacon fat til translucent.
  • Pour into strainer, but not necessary to rinse or pat with paper towel.
  • For me, straining is enough.
  • Pour canned beans into 6 Qt Crockpot.
  • Stir in bacon, onions, ketchup, Salsa, Brown Sugar and cumin, mixing very well.
  • Stir often.
  • Cook on high for 3 hours, then switch to low for another two hours, well ahead of serving as it tastes even better the longer you allow the flavors to blend together.
  • If I'm making them for a party, I make them early morning for that night or even the night before, cooking overnight in the crockpot.
  • They will stay hot for a long time and you can just turn the crockpot back on a couple hours before serving.
  • I taste them often as they're cooking and add more salsa and/or cumin to taste.
  • We like to taste the cumin, but if you don't that's ok.
  • Recipe is easily halved or doubled.
  • I never measure anything- I add all ingredients for our taste preferences.
  • Freezes VERY well and you can reheat in microwave or in crockpot once thawed.
  • Leftovers are great the next day!

My sister turned me on to this wonderful way to dress up canned baked or barbeque beans (and she nabbed it from our cousin). They are delightful, and such an easy way to make canned taste homemade. I love to serve these with barbequed meat, and either cold slaw or potatoe salad. This recipe can easily be adjusted to serve the number of people in your party. You can also add more or less brown sugar, depending on how much sweetness you prefer.

1 -2 can bush baked beans (the size of the cans and the number of cans will be based on the number of people you are serving)
2 -5 slices bacon, cooked and crumpled
1 (4 ounce) can diced jalapenos
1/2-1 tablespoon brown sugar (adjust sweetness level to taste)

Steps:

  • Place beans in saucepan.
  • Add diced jalapenos, with juice (add as much juice as you prefer, based on how spicy you want it).
  • Add bacon and brown sugar.
  • Stir well.
  • Bring to a boil and then turn down heat to simmer.
  • Simmer for one hour, or more.

6 bacon slices (diced)
3 tbsp garlic cloves (minced)
1 jalapeno (diced)
1 onion, yellow or sweet (diced)
2 bell peppers (diced)
4 28-ounce baked beans (¼ of the liquid drained off)
½ cup yellow mustard (may substitute with spice brown mustard)
⅓ cup barbeque sauce
¼ cup ketchup
1 tbsp molasses ((optional))

Steps:

  • Preheat oven to 350°
  • In a 12-inch cast iron skillet over medium heat cook bacon until crispy. Remove with a slotted spoon. Drain all but 2-3 tbsp of bacon grease.
  • Add onion, peppers, garlic, and jalapeno and cook for 4-5 minutes, until tender.
  • Add remaining ingredients except for 1 can of beans. Stir well. Then add in the last can and stir carefully. The pan will be very full.
  • Place cookie sheet or large piece of tin foil on the oven rack just underneath skillet, then carefully place skillet in the oven. Bake for 35-45 minutes, until thick and bubbly.

1 small onion, finely chopped
1/2 c brown sugar, firmly packed
1/4 c ketchup
1 Tbsp prepared spicy brown mustard

Steps:

  • 1. Pre-heat oven to 350 degrees. In 2 quart casserole, stir together beans, onion, brown sugar, ketchp and mustard. Bake, uncovered, for 1 hour, or until hot and bubbly. Enjoy!
  • 2. **Microwave Directions: in 2 qt. microwave safe dish, place onion. Cover with plastic wrap, vented, and microwave on high 2 minutes until onion is soft. Add beans, brown sugar, ketchup and mustard: gently mix well. Cover with vented plastic wrap and microwave on high for 6 minutes. Stir. Uncover completely, and continue to microwave on high for a final 6 minutes. Stir well, and serve.
