This is a summery side dish or great for dipping tortilla chips. I found in this months Saveur magazine.

Number Of Ingredients 7

2 (15 ounce) cans black-eyed peas, drained
8 scallions, trimmed and chopped
1 green bell pepper, finely diced
1 red bell pepper, finely diced
1 large tomatoes, diced
1/4 cup chopped cilantro
1 (16 ounce) bottle spicy Italian dressing

Steps:

  • Toss all ingredients to combine. Cover with plastic wrap and refrigerate at least 3 hours or overnight to allow flavors to come together.
  • Serve cold or at room temperature.

2 (15 ounce) cans black-eyed peas (drained)
1 medium vidalia onion, medium-sized, diced
1 large tomatoes, large, diced
2 tablespoons jalapenos, diced (optional)
2 teaspoons Italian salad dressing, to moisten
salt and pepper

Steps:

  • Mix all ingredients together in a bowl.
  • Cover and refrigerate overnight.
  • Serve with Frito Scoops or tortilla chips.

2 large avocados - peeled, pitted, and chopped
3 plum tomatoes, chopped
1 bunch green onions, chopped
1 (14.5 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexicorn, drained
¼ cup red wine vinegar
¼ cup canola oil
hot pepper sauce to taste

Steps:

  • Stir together avocados, tomatoes, green onions, black beans, and Mexicorn. Stir in red wine vinegar, canola oil, and hot pepper sauce. Cover, and chill 1 hour.

16 ounces black beans
16 ounces black-eyed peas
11 ounces white shoepeg corn
5 ounces minced chili peppers, with liquid
3 stalks celery, chopped
1/2 red onion, chopped
1/2 cup olive oil
1/2 cup apple cider vinegar
3/4 cup sugar (to taste)

Steps:

  • Heat oil, vinegar and sugar to boiling, until sugar is dissolved.
  • Add remaining ingredients to large bowl and pour liquid ingredients over them.
  • Marinate for several hours in refrigerator.
  • Serve with scoops corn chips.

POOR MAN'S CAVIAR: EGGPLANT SPREAD

1 medium, firm eggplant
1 clove garlic, cracked away from the skin
2 pinches ground allspice
Coarse salt and black pepper
1 handful flat-leaf parsley tops
A drizzle extra-virgin olive oil
1 whole grain baguette or other long crusty bread, sliced at bread counter

Steps:

  • Preheat oven to highest setting, at least 500 degrees F.
  • Cut 2 or 3 slits into whole eggplant. Place eggplant directly on the oven rack in the middle of the oven and roast the eggplant until it is tender, about 20 minutes. Keep the slits facing up so that the eggplant does not loose liquids as it roasts.
  • The roasted eggplant will look like a flat tire when you remove it from the oven. Using a sharp utility knife, carefully peel skin away from eggplant flesh. Add cooked eggplant flesh and juice to food processor and combine with garlic, allspice, salt, and pepper and parsley. Pulse grind the eggplant into a paste, add a drizzle of olive oil. Transfer to a serving dish. The seeds of the eggplant will make the spread resemble caviar eggs, and so the name: poor man's caviar.
  • To serve, surround a bowlful of spread with crusty bread rounds.
  • Tidbit: Mixed olives and selections of Italian sheep's milk cheeses are suggested accompaniments to this menu to round out your buffet. They require no recipe or preparation and add something to the offering overall. Place them on the buffet near the eggplant caviar and bread.

GRANDMA'S POOR MAN'S PIE



Grandma's Poor Man's Pie image

This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

2 cups heavy cream (Whipping Cream)
2/3 cup sugar (you can use white or brown, but Grandma always used white.)
3 tablespoons flour
butter, pats
nutmeg

Steps:

  • Pre-heat oven to 350º.
  • Mix the cream, sugar, and flour.
  • Pour into an unbaked 8" pie shell.
  • Float several thin pats of butter on top.
  • Sprinkle with ground nutmeg.
  • Bake at 350º for 30-45 minutes or until top is a nice golden brown.
  • Chill, then refrigerate until ready to serve.

Drema's

A great appetizer or great side dish. Actually better if made a day or two ahead! You can adjust your likings by the aount of cilantro you prefer. This was served and passed down to me from an employee many years ago. Enjoy!

2 can(s) black eye peas, drained
2 can(s) black beans, drained
2 can(s) corn, yellow kernel, drained
2 can(s) rotello diced tomatoes w/chilies
2 bottle zesty italian dressing (sm bottles)
1 small cilantro bunch, chopped coarse

Steps:

  • 1. In large mixing bowl combine all ingredients except cilantro and onions. Mix thoroughly!
  • 2. Gently stir in cilantro and onions. Mix well. Add all of dressing and toss or stir gently. Cover in airtight container and store in frig until ready to serve. Serve cold with chips! Excellent!
