GRANDMA'S FRUIT COCKTAIL CAKE
Serve this old-fashioned Fruit Cocktail Cake up for dessert or invite your friends for coffee! Made from scratch, NO box mix needed!

Steps:
- Adjust an oven rack to medium position. Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
- In a large mixing bowl, stir together all cake ingredients until well combined. Pour into prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, make the topping by combining all the ingredients in a saucepan and bring to a boil over medium heat. Continue to boil, stirring constantly, for 2 minutes. Pour over hot cake and smooth evenly with an offset spatula.
- Top individual slices of cake with a dollop of Reddi Wip and Maraschino cherries.

- In a large bowl, stir together flour, sugar, baking soda and salt.
- Add eggs, fruit cocktail and vanilla and mix all ingredients well (by hand--do not use electric mixer); batter will seem very thick at first (if you use good fruit cocktail that has mostly fruit, not all juice), but this is the way it should be (the juice in the fruit cocktail is the only liquid in this recipe except, of course, the eggs).
- Pour into a greased 9 inch x 13 inch pan.
- Bake at 350°F for about 30 minutes or until toothpick inserted near center comes out clean.
- This cake is best with Fruit Cocktail Cake Icing #7062.

FRUIT COCKTAIL CAKE

- Preheat the oven to 350 degrees Fahrenheit.
- Spray a 9x13 pan with cooking spray then dust the pan with flour.
- In a small bowl, whisk together the flour, baking soda and salt. Set aside.
- In a large bowl, beat together the eggs, sugar and vanilla.
- Add in the flour mixture and fruit cocktail, beating well.
- Pour the batter into the prepared pan.
- Sprinkle the brown sugar and walnuts on top of the cake.
- Bake for 35-40 minutes or until the cake tests done.
- While the cake is baking, prepare the frosting.
- In a saucepan over medium heat, mix together the sugar, butter and evaporated milk. Bring the mixture to a boil, stirring constantly. Allow the mixture to thicken slightly.
- Remove the pan from the heat and fold in the coconut.
- As soon as the cake comes out of the oven, poke the top of the cake with a fork to make holes, then spread the coconut frosting on top of the cake.
- Serve the cake with a dollop of whipped cream and cherry.
- Store in an airtight container at room temperature.

- 1. Sift all dry ingredients together ,then add beaten eggs and fruit cocktail with juice.Mix together. Pour in to a 9x13 inch pan that has been greased and floured or sprayed with Bakers Joy or non stick spray ,I use Bakers Joy.Sprinkle cake batter with brown sugar and coconut .Bake at 350 degrees for about 30-35 minutes ,till tooth pick test clean

- Place oven rack in the middle position and heat oven to 350°F. Lightly grease a 9x13" baking pan with cooking spray or butter, set aside.
- Whisk together all purpose flour, whole wheat flour, baking soda, cinnamon, salt, mace, allspice and nutmeg in a medium bowl. Set aside.
- Lightly beat eggs using a stand mixer or hand mixer on medium speed. Add sugar and vanilla. Beat on high for 2-3 minutes until light and foamy. Turn mixer to low speed and slowly add flour mixture. Mix until flour mixture is incorporated - it will be very dry. Add fruit cocktail with it's liquid and mix until just incorporated. Turn mixture off and Finish mixing with a spatula to ensure all dry bits are mixed in.
- Pour batter into prepared cake pan and smooth with a spatula. Sprinkle coconut evenly over the top of the batter. Bake until a skewer inserted in the middle of the cake comes out clean, 35-40 minutes.
- While cake is baking, melt butter in a small saucepan over medium heat. Once melted, add whipping cream and sugar. Bring to a boil over medium heat and simmer for 5 minutes to form a syrup. Remove from heat.
- When cake is done, poke the top all over with a fork or chopstick. Pour syrup evenly over the top of the cake and cool before serving.

I made only a couple changes to this recipe I adopted from the RecipeZaar account in February 2005. I increased the butter from 3/4 to 1 cup, changed the milk from canned evaporated milk (which I am not terribly fond of) to regular whole milk, and decreased the amount of milk from 1 cup to 3/4 cup (the additional 1/4 cup butter makes up the difference). This delicious topping is the perfect topping for Recipe #7061.

- Mix sugar, butter, and milk in a heavy saucepan (2 quarts or larger) and bring to a boil over medium heat, stirring constantly, then boil for 5 minutes while you continue to stir.

- 1. Preheat oven and grease an oblong baking dish or cake pan. Prepare cake mix according to package directions. Reduce water by 1/2 cup. Mix well and beat according to package directions.
- 2. Pour cake batter into baking pan. Gently pour in fruit cocktail and juice into center of prepared cake mix.
- 3. Bake according to directions on box adding about 10 minutes. Test center done when tooth pick inserted comes out clean.
- 4. While baking, prepare topping. In large mixing bowl place coconut, sugar and pecans and flour. Using hands gently toss ingredients together until well mixed. Pour in evaporated milk and melted butter. Mix thoroughly until coated well. Store or set aside.
- 5. Remove cake from oven and apply topping to cake while warm. Allow cake to cool before serving. Enjoy! Tip - Alternative cake mix would be pineapple upside down is delicious also with the above recipe!
