DOWN HOME POTATO SALAD

I have tried so many potato salad recipes, but (most of) my family still prefers mine...so I am posting it in case somebody else might like it too! These ingredients are staples at my house and yes, this recipe has a lot of ingredients, but easy to throw together and so worth it. You can leave out what you need to, but try to make it as stated because it's a flavor party! I used my food processor to simplify the prep. Sometimes I like to only use honey mustard and mayo instead of the dijon and yellow mustard and that lends a less mustardy flavor and is more sweet. Just a variation. I make this potato salad with my deviled eggs because they both use a lot of the same ingredients....in fact, I regularly add the leftover deviled egg mixture to the tater salad too...I think it makes the whole thing more creamy.

7 -8 medium red potatoes, skin on
4 eggs, divided
1/4 cup finely chopped onion
1 (8 ounce) can water chestnuts, drained and finely chopped
1 celery rib, finely sliced (without leaves)
1/2 teaspoon dill weed, crushed
1/4 teaspoon garlic powder
1 teaspoon celery seed
1/2 tablespoon dry mustard
1 teaspoon turmeric (gives potato salad beautiful yellow color)
1 tablespoon parsley flakes, ground
1/2 cup sweet pickle juice
1 cup light mayonnaise
4 tablespoons prepared yellow mustard
1 tablespoon prepared Dijon mustard
2 tablespoons honey mustard dressing
salt and pepper (I used 1 tsp of each)
1/2 tablespoon parsley flakes, crushed (for garnish)

Steps:

  • Wash and cube potatoes (skin-on), putting into large soup pot as they are cut. Cover with water to one inch above potatoes. Bring to a boil then reduce heat so potatoes only simmer for 20 minutes or until cubes are crisp-tender. You don't want them too mushy or too hard. Remove from heat and drain. Put potatoes into medium large bowl. Set aside.
  • In a seperate saucepan, cover 4 eggs with water and bring to boil. Turn heat off, leave pan on hot burner and cover pan. Set a timer for 12 minutes. Prepare a bowl of ice water big enough to hold the four eggs. When the eggs have set for 15 minutes, remove from hot water, rinse and immerse in ice water until cooled, then peel, cut in half. Remove yolks and reserve. Chop or slice egg whites and add to potatoes.
  • Chop veggies (I chop and slice these by hand), gather spices and other ingredients while potatoes and eggs are cooking.
  • In food processor or blender (or bowl to use with hand blender or mixer, place egg yolks, plus (ingredients #6-#16) dill weed, garlic powder, celery seeds, dry mustard, turmeric (gives potato salad beautiful color,parsley flakes, sweet pickle juice,light mayo, prepared yellow mustard, prepared dijon mustard & honey mustard salad dressing. Pulse a few times until well blended. Scrape blade and bowl clean and empty contents into the bowl with the potato salad and egg whites.
  • Gently stir and add salt and pepper to taste. Garnish with more crushed parsley flakes. Chill, if desired in refridgerator. I like it room temp, hubby likes it cold. Prep time does not include time to chill.

Everything you need to know to make perfect potato salad every time -- just like Granny's!

8 medium potatoes (use ones with thin skins such as new or Yukon gold.)
6 hard boiled eggs (peel and chop 4 or 5. Slice the remaining to put on top.)
4 stalks celery (sliced thin)
1 Cup Mayonnaise
2 Tablespoons dill pickle (chopped)
2 Tablespoons sweet pickles (chopped)
1/2 onion (chopped)
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sweet paprika
1/2 teaspoon dry mustard (omit if you don't have it)
1/2 teaspoon garlic powder
2 teaspoons vinegar or sweet pickle juice
1 teaspoon sugar

Steps:

  • Hard boil your eggs and set aside.
  • Place the unpeeled whole potatoes in a sauce pan and cover with cold water. Gentle bring to simmer and cook until done. About 1/2 hour.
  • Cooking will probably take about ½ hour. Keep an eye on your potatoes. You want them done all the way through but not mushy. Use a small pointed knife to assess doneness.
  • If you aren't sure, you can pull a potato out and cut it in half. You want to see it cooked all the way through. If you still aren't sure, cut a small piece off and taste.
  • While the potatoes are cooking, chop the celery, onion, and egg.
  • Then make your salad dressing. If you're making a big salad, use about a cup of mayonnaise.
  • To your mayonnaise, add salt, pepper, sweet paprika, dry mustard (use dry or leave out-nothing from a jar), garlic powder, sugar, and a little vinegar or sweet pickle juice. This is now your salad dressing.
  • Once the potatoes are cooked all the way through, drain the hot water off carefully.
  • Then add cold water to the pan and let the potatoes rest there for a few minutes.
  • Cool them just enough that you can handle them. Once they can be handled, peel the skin off and chop into bite size pieces.
  • Add the dressing to the potatoes while they are still warm.
  • Add the potatoes to a mixing bowl. Put chopped celery, onion, pickle, and egg on top.
  • Add the prepared salad dressing and gently mix.
  • Gently lift up the ingredients from the bottom of the bowl and turn them. Mix like this until all the potatoes have dressing and the ingredients are mixed in.
  • Put in serving bowl, cover, and refrigerate until serving time.
  • If you have a hard boiled egg or two left, it looks pretty to slice them and put on top before serving.

I always loved my mother's potato salad and I would never eat potato salad that she didn't fix...I know it's a little silly! I've made a few adjustments to her salad but not too much. It is a creamy, really good salad to take to Bar b ques, potlucks, holiday dinners, etc.

3-4 russet potatoes
1 Tbsp mustard
1/4 c finely chopped celery and leaves
3+ Tbsp sweet pickle relish
1/2-1 small jar of red pimento
1-2 tsp tony chachere's creole seasoning or brand sold in yur area
2-3 finely chopped eggs
salt and pepper to taste
1-2 tsp zuchinni relish (see my recipe)
1/2 c mayonnaise

Steps:

  • 1. In a large pan I boil my potatoes (skins on) and eggs until done (I like my potatoes bursting open to get a softer texture. cut potatoes in small to medium chunks while hot (don't let get too cool), add chopped eggs, chopped celery and leaves, pickles, zuchinni relish if you have some, spices, mustard and mayo. Mix all together. Garnish with paprika. Serve
  • 2. I sometimes if I have it I use chopped green onions, and bell peppers. This is really good but my husband does not like bell pepper. I have also garnished this salad with sliced green olives and sliced eggs and sprinkled paprika and parsley flakes on top...so pretty and good! I always have a clean bowl everytime I make my potato salad!

SOUTHERN POTATO SALAD

1/2 cup thinly sliced green onions

Salt and pepper to taste

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes. Drain; refrigerate until cold. Add eggs, onions and pickles; toss well. Stir in mustard, celery seed and mayonnaise. Season with salt and pepper; mix well. Refrigerate until serving.

1 onion, diced
2 green onions, thinly sliced
1 small green bell pepper, seeded and diced
3 stalks celery, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

3 to 3-1/2 pounds potatoes (about 10 medium)
6 hard-boiled large eggs
1 medium onion, finely chopped
1/2 cup mayonnaise
1/2 cup evaporated milk
3 tablespoons white vinegar

1/4 cup sugar
1 teaspoon salt
1/4 teaspoon pepper
Additional hard-boiled large eggs, sliced

  • In a large kettle, cook potatoes in boiling salted water until tender. Drain and cool. Peel potatoes; cut into chunks. Separate egg yolks from whites. Set yolks aside. Chop whites and add to potatoes with onion., In a small bowl, mash yolks. Stir in mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Pour over potatoes; toss well. Adjust seasonings if necessary. Spoon into a serving bowl. Garnish with egg slices and paprika. Chill until serving.

  • My Note: What others have added, mustard, pickles, bacon, radishes, etc. Because everyone's tastes vary, as mentioned in the description, I encourage you to add "additional ingredients" to make this recipe "your own". Don't be afraid to experiment, that's what makes cooking fun. When adding bacon or chopped dill pickles, you may want to reduce the salt called for in the recipe. To make this quickly - first start cooking the eggs - then take out the large bowl that you will be using to serve - I peel and dice the potatoes and rinsed them in that bowl to get out starch - put potatoes in cold water and bring to boil - then lower heat to a slow boil and cook approximately 10 to 15 minute Your eggs will probably be finised by then so cool them down with cold water. Then mix all the ingredients for dressing in the bowl - add the chopped eggs and by then your potatoes are probably ready to add. Very little clean up and no waiting time for things to be done - I added a tablespoon of ground mustard to dressing and only used 2 eggs but that is just a preference. I thought this turned out great and it was fast. The inlaws/outlaws? (in Sweden) are in love with this and have asked for the recipe! Have Fun and Happy Cooking!
