EASY, EXCELLENT BAKED FLOUNDER
This is a great recipe for a night when you're feeling lazy - only a few ingredients, nothing to chop, easy cleanup, and very yummy! My husband announced the fish was 'excellent,' and he's not usually one to rave about food.

- Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
- Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.
- Bake in the preheated oven until flounder flakes easily with a fork, 25 to 30 minutes.

BAKED STUFFED FLOUNDER

- Preheat the oven to 350 degrees F.
- In a medium saute pan over low heat, melt the butter; add the onion and a pinch of salt and sweat until translucent. Add the garlic and continue to cook for another minute. Add the spinach and lemon zest and cook until just heated through. Season with the salt and pepper, add the parsley, and stir to combine. Remove from the heat and keep warm.
- Place the heavy cream and wine into a saucepan over medium heat. Once the mixture begins to simmer, gradually add the cheese and stir until melted. Set aside and keep warm.
- If the fillets are large, cut in half. Season each filet on both sides with salt and pepper. Divide the spinach mixture evenly among the fillets and roll the fish around the mixture. Place the rice into a 2 1/2-quart casserole dish and spread evenly. Place each roll on top of the rice, seam side down. Pour over the cheese sauce and place in the oven for 25 minutes. Allow to cool for 5 minutes before serving.

- Squeeze out the lemon juice and measure 1 tablespoon.
- Rinse fish fillets and pat dry. Season with lemon juice, salt and pepper.
- Rinse and peel the carrots.
- Use the peeler to shave the carrots lengthwise into strips.
- For each fillet, arrange several carrot strips side by side, slightly overlapping, on a work surface.
- Place fillets on top of carrot strips and wrap the strips around the fish to cover. Turn seam side down and season with salt and pepper.
- Heat the oil in a pan over high heat and cook the fish until crisp on both sides.
- Line a baking sheet with a piece of parchment paper and transfer fish to the baking sheet. Bake in a preheated oven at 180°C (convection oven 160°C, gas mark 2-3) (approximately 350°F/convection 325°F) on the middle rack until fish is opaque throughout, 10-15 minutes. Serve immediately.

DOWN EAST BAKED FLOUNDER
My mom always made her baked flounder like this, as was typical in "Down East" Carteret County, NC. You can use either whole flounder or flounder fillet. I prefer using the fillet so you don't have to worry about bones. Lining your baking dish with foil makes for an easy clean up.

- 1. Preheat oven to 400 degrees. Spray a 9" X 13" baking dish with cooking spray. Place prepared flounder in baking dish with the flesh side up.
- 2. Slice peeled potatoes into 1/4-inch thick round slices. Place potato slices around sides of baking dish and around flounder in bottom of pan. Add salt and pepper to taste on fish and potatoes. (This is good with a little extra pepper!) Top with sliced onion rings. Add enough water in the bottom of the baking dish to come up around sides of fish a little, but not to cover it. Dot with butter or margarine on top of fish.
- 3. Bake in preheated oven for approximately 45 minutes or until potatoes are tender and flounder flakes with a fork. Enjoy!

- Set the oven at 450°F/232°C. Line a baking sheet with aluminum foil and spray or wipe it with olive oil. Or, use a non stick pan like this one in the pics. Rinse off the zucchini and cut them up into french fry shapes.
- Rinse off the flounder filets and pat them dry with paper towels. Spread the zucchini out with the pointy side sticking up and the flounder with the "flat side down". Sprinkle with some salt, pepper and paprika. And a little grated parmesan cheese if you want to.

- Turn the oven on at 400°F. Rinse off the fillets and pat them dry with a paper towel. Spray a cookie sheet with oil and spread the fillets out on it. You could line the cookie sheet with aluminum foil before you spray it for an easier cleanup. In a bowl 1/4 cup olive oil or melt 1/2 stick of butter and add 1 tablespoon garlic powder or chopped garlic, salt, pepper, juice from 1/2 of a lemon and dried parsley flakes. Here's where you get to do it your own way. With the basic oil or butter then you can add lots of different things to your liking. Paprika, Parmesan cheese, honey, red pepper flakes, balsamic vinegar and on and on. Brush the mixture over the flounder saving some for the veggies.
- Line a small baking pan with foil and put in some potatoes cut into about 3/4 inch cubes and some frozen broccoli florets or carrots. Brush them with the rest of the butter (or oil) mixture and put everything in the oven at the same time.
- Seven minutes on bake then three minutes on broil, but, all ovens are different so watch them. When the flounder starts to sizzle around the edges switch from bake to broil and then as soon as they start to get the slightest brown on top take them out. The veggies will keep up with the fish so it all should be ready to go.
- You are the chef! A nice dry white wine would go along good with your Oven Baked Flounder. Gammy likes Pinot Grigio so thats what we have (surprised?) And since the oven is on, some of poppop's easy homemade bread wouldn't slow things down.
