CHAI OLD-FASHIONED COCKTAIL



Chai Old-Fashioned Cocktail image

The Chai Old-Fashioned Cocktail with Chai Ice Cubes is a lovely fall nightcap. With flavors of cardamom, orange, tea and spices, each sip is more flavorful than the last thanks to the tea-infused ice cubes.

4 cups water
2 chai tea bags or 2 tablespoons looseleaf tea
2 sugar cubes (see note)
dash cardamom bitters (see note)
2 1-inch pieces orange peel
4 ounces bourbon or rye whiskey
2 chai ice cubes
2 cinnamon sticks, for garnish (optional)
2 whole cloves, for garnish (optional)
2 star anise, for garnish (optional)

Steps:

  • Boil water. Steep with tea bags in a bowl. (If using looseleaf tea, use an infuser.)
  • Remove tea bags after 5-8 minutes. (Longer yields a stronger flavor). Let cool.
  • Once cooled, pour tea into ice cube trays. Place molds in freezer until ice is frozen through, about 6 hours.
  • In two rocks glasses, add a sugar cube to each. Add a dash of cardamom bitters to the sugar cubes, then add the orange peels.
  • Muddle the sugar with the bitters and orange peel to release the flavors of the bitters and the oils.
  • Top with whiskey and stir until sugar dissolves.
  • Add the chai ice cubes, then garnish with whole spices such as cinnamon sticks, cloves and star anise.

One 15.5-ounce can chickpeas
1/4 cup cashew butter
1/4 cup maple syrup
1/8 cup almond milk
2 tablespoons rolled oats
2 teaspoons espresso powder
2 teaspoons vanilla extract
1 teaspoon ground cinnamon, plus more for garnish
1/4 teaspoon ground cardamom, plus more for garnish
1/4 teaspoon ground clove
1/4 teaspoon ground nutmeg
Plain yogurt, for serving, optional
Kosher salt
Cinnamon stick, for serving, optional
Graham crackers, cinnamon pita chips or apple slices, for serving

Steps:

  • Drain the chickpeas in a strainer over a bowl, reserving the chickpea liquid for another use if desired. Rinse the chickpeas and add to a food processor. Add the cashew butter, maple syrup, almond milk, oats, espresso powder, vanilla, cinnamon, cardamom, clove and nutmeg. Puree until smooth, about 1 minute.
  • The hummus can be served room at temperature immediately or chilled. To serve, transfer the hummus to a large mug, top with a dollop of yogurt, if using, a sprinkle of cinnamon, cardamom and salt. Garnish with a cinnamon stick, if using, to resemble a latte. Serve with graham crackers, cinnamon pita chips or apple slices.

1 cup half-and-half
1 tablespoon agave syrup
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/2 teaspoon smashed peppercorns
10 whole cloves
6 whole allspice berries
1 cinnamon stick
6 cups hot brewed coffee
4 ounces bourbon
Whipped cream, for garnish
4 star anise pods, for garnish

Steps:

  • Heat the half-and-half in a small saucepan over medium heat until barely simmering. Add the agave, cardamom, ginger, peppercorns, cloves, allspice and cinnamon; stir gently. Turn off the heat and let steep for 15 to 20 minutes. Strain.
  • Divide the chai mixture among four mugs. Add 1 1/2 cups coffee and 1 ounce bourbon to each mug; stir gently. Garnish with whipped cream and star anise.
