HOMEMADE DOUGH ENHANCER
I've used this homemade dough enhancers for over 20 years and it works like a charm. Use 3 tablespoons for every loaf your recipe makes.

- Mix together and store in a capped Mason jar in the refrigerator.
- To Use: Add 3 tablespoons for each loaf of bread a recipe makes.

DOUGH ENHANCER
I kept reading about dough enhancer but couldn't find it in any of our stores. A dough enhancer is a powder that is supposed to make your dough smoother and is what commercial bakers often use to obtain the smooth textured bread you buy in the store. My bread doesn't last long since we eat it quickly, but it is supposed to help with shelf life as well!

Steps:
- Mix all together in a bowl and store in refrigherator in an airtight container.
- Use 3 Tbs of this mixture in a recipe for whole wheat bread (3 1/2 cups flour) For white bread use 1 tsp.
- For rye bread use 3 1/2 Tbs.
DOUGH ENHANCER FOR GLUTEN-FREE BREAD
A slight "tweek" that you just might find works better and adds NO taste whatsoever! This really does the trick for GF baking of any GF item. Try it in cookies and tell me what you think.

- Combine liquid ingredients in a 14 cup food processor fitted with dough blade or a heavy duty electric mixer fitted with a paddle.
- Working in batches, gradually add dry ingredients into the liquid, until well incorporated. The 'dough' will be thinner than a traditional wheat-containing dough, more closely resembling a thick batter.
- Transfer dough to a 1 gallon glass canister (with non-airtight lid) or other similar vessel. Allow the dough to rest at room temperature for 2 hours or until it doubles/fills the 1 gallon canister.
