This recipe comes from an old cookbook called Native Cookery and Edible Wild Plants of Newfoundland and Labrador . Its old fashioned good, traditional style pea soup from Newfoundland.

2 cups split peas
1 onion, chopped
1 cup celery, diced
1 cup potato, diced
1/2 turnip, diced
3 carrots, diced
1 lb spareribs or 1 lb ham bone
1 1/2 cups flour
1/4 cup butter
3 teaspoons baking powder
1 teaspoon salt
1/2-3/4 cup water or 1/2-3/4 cup milk

Steps:

  • For the soup:.
  • Soak salt meat or sparerib and peas overnight. Drain off water. Add 6 cups of water and onion and simmer gently for 3 hours. About 20 minutes before serving, add vegetables.
  • Make doughboys as follows:.
  • Cut butter into small pieces into small pieces in the flour, baking powder and salt. Add water or milk to make a soft dough. Drop by teaspoonfuls into soup. Cover pot tightly and cook for 15 minutes.

Traditional Newfoundland Pea Soup and Dough Boys. A hearty local favorite that has warmed many a belly over the decades.

2 cups flour
2 tbsp sugar
1 tsp baking soda
2 tsp baking powder
½ tsp salt
Very quickly mix in with a wooden spoon:
1 cup warm milk
¼ cup melted butter
1 ham bone
4 cloves roughly chopped garlic
1 large coarsely grated carrot
1 small onion, , chopped
12 cups water
2 cups dried yellow split peas
3-4 bay leaves
1 tbsp dried thyme
1 tsp coarsely ground white or black pepper, , your preference.
3 cups diced carrots
1 large red or sweet white onion, , about 1½ cups diced (yellow onions are traditional, so use them if you want but I use sweeter onions to balance the saltiness of the ham.)
3 cups diced baked smoked ham

Steps:

  • Simmer the ham bone, garlic, carrot, small onion and water slowly in a large covered pot for 1½ hours. Strain the stock through a colander and return it to the pot. Skim excess fat from the surface of the stock.
  • Add the split peas, bay leaves, dried thyme, pepper and red onion. If you are using salt beef, add it here.
  • I don't add any salt at this point, the salt content of the ham you are using will determine if you need to add a little at the end. Let your own taste be the guide.
  • Simmer slowly and gently for about 45 minutes, stirring occasionally so that the peas do not stick to the bottom of the pot.
  • Add the diced carrots and diced ham.
  • Simmer for an additional 10 minutes stirring occasionally. Taste the soup at this point to determine if any additional salt is necessary. In all likelihood, it will not. Now add the dough boys to a very gently simmering pot
  • Sift together the flour, sugar, baking powder, baking soda and salt.
  • Using a wooden spoon, very quickly mix in the milk and melted butter.
  • Do NOT over-work this dough. Stir in the liquid as quickly as possible and as soon as a soft dough forms , STOP mixing.
  • Make sure you give the soup one last good stir to make sure that that nothing is sticking to the bottom of the pot then immediately drop the dough by heaping tablespoonfuls into the slowly simmering soup.
  • Place the cover on the pot and do NOT remove it for 15 minutes. After 15 minutes, remove the dough boys from the pot and give the soup a final stir and remove the bay leaves before serving.

This is full of flavour and the whole family loves this meal. Comfort cooking. This recipe was passed down from my Nana.

Number Of Ingredients 11

1 lb stewing beef, chopped
2 tablespoons seasoned flour
1 onion, chopped
2 carrots, chopped
1/4 turnip, chopped
2 beef bouillon cubes
salt and black pepper
4 ounces flour
2 ounces beef suet or 2 ounces vegetable suet
4 tablespoons water (approx, to make dough)
1 teaspoon cornflour

Steps:

  • Chop up beef; roll into seasoned flour.
  • Place into a hot oiled pan to brown (Will go crusty on the base. Do not worry).
  • Add the chopped onion, carrots, and turnips. Cook on medium until softened.
  • Dissolve beef bouillon cubes in about 3/4 pint of water.
  • Pour mixture into stew.
  • Season with salt and pepper.
  • Slow cook on low heat until beef is tender, approximately 1-1/2 to 2 hours.
  • Stir often and keep the gravy level up by adding water.
  • DOUGHBOYS:.
  • Blend flour and suet together.
  • Mix in a little water at a time to make a dough.
  • Roll into balls and place on top of gravy about 15 to 20 minutes from end of cooking.
  • Make sure there is enough gravy as they soak up the liquid.
  • Best cooked with lid on pan.
  • When ready they are light and fluffy about double the size.
  • To serve, take out doughboys and thicken the gravy if required with gravy thickener or a little cornflour mixed with water.
  • I like to cook the stew in the morning, switch it off and reheat when making the doughboys for our evening meal; always tastes much better.

MAORI BOIL-UP WITH DOUGHBOYS (DUMPLINGS)



Maori Boil-Up With Doughboys (Dumplings) image

A variation of a New Zealand recipe. This version uses a pork tenderloin. Traditional versions use pork bones or pork neck added to the broth. Use the doughboy recipe included here or use recipe #484350. Other root vegies may be added also.

4 cups chicken broth
2 cups water
1 lb pork tenderloin
2 bunches watercress
1 large kumara, peeled and chopped (sweet potato)
1/2 large onion, peeled and chopped
3 green onions, sliced
6 cherry tomatoes
1 teaspoon salt
1 tablespoon fresh cilantro, chopped (optional)
3 tablespoons unsalted butter, in pea sized pieces
1 cup flour
1 teaspoon baking powder
1 pinch salt
1 pinch sugar
1/4-1/2 cup milk

Steps:

  • Add stock, water and pork to pot, bring to a boil then cover and simmer for an hour.
  • Soak watercress in cold water for 10 minutes. (This removes bitterness) Squeeze out moisture and break into pieces. Set aside.
  • Add kumara, onion, green onion and tomatoes to stock and simmer for 15 minutes.
  • Remove pork and chop into pieces. Return meat to stock and boil for 5 minutes. Add salt and watercress and simmer for 15 minutes.
  • Meanwhile make the doughboys. Cut butter into dry ingredients until it resembles coarse cornmeal. Stir in enough milk to make a stiff, slightly sticky dough.
  • Drop either teaspoon or tablespoon sized amounts of the doughboy mixture into the the boiling pot, cover and cook for about 10-15 minutes. Don't lift lid while cooking. Larger doughboys will take a bit longer.
  • Serve with a garnish of chopped cilantro.

1 package dry yeast (2 teaspoons)
3/4 cup lukewarm water
2/3 cup unbleached white flour
2 1/2 cups unbleached white flour
1/4 cup rye flour
1 teaspoon salt
1 cup cold water
1 cup whole-wheat flour
1/2 cup chestnut flour
1/3 cup olive oil
Oil, for frying

Steps:

  • Sponge: In a large bowl, dissolve the yeast in lukewarm water and stir in the flour. Allow the mixture to sit until quite bubbly, about 30 minutes.
  • Mix together the white flour, rye flour and salt in a bowl. Stir 1 cup of this mixture and 1 cup of cold water into the sponge. Mix thoroughly and allow to sit another 30 minutes.
  • Add the whole-wheat flour, chestnut flour and the olive oil. Knead the dough either by hand or in an electric mixer fitted with a dough hook. Mix until the dough is soft and elastic, about 5 minutes. You may need to add a little more flour if the dough is too wet, but you want a soft, slightly sticky dough. Very soft, moist dough makes the best crust!
  • Put the dough in a large bowl, cover with a towel and allow it to rest in a warm place until it has doubled in size, about 2 hours. If you are making the dough a day before, put the bowl in the refrigerator and let rise slowly overnight.
  • To cook the doughboys, preheat a deep-fryer or heavy-bottomed pot, with enough oil to come halfway up the sides of the pot, to 375 degrees F.
  • Be sure to use a frying thermometer to be accurate. Pull the dough into odd shapes that look like elephant ears, then drop them into the fryer, in batches, and cook until golden brown, about 3 minutes. Flip them over with a chop stick and cook the other side until golden brown, a few more minutes. Repeat the process until all of the dough is used. Arrange them on a serving platter and serve with jam, maple syrup, and powdered sugar. Sit down, get coffee and eat.
  • Cook's Note: The dough usually made a day before using.

1/2 cup margarine
1/2 teaspoon salt
1/2 cup shortening
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups of grated coconut
1 -2 cup brown sugar
1 tablespoon yeast (instant)

Steps:

  • Preheat oven to 350°F.
  • Sift together the flour and salt. Cut the margarine and shortening into the flour mixture.
  • Add spices and yeast, followed by coconut and water.
  • Knead the mixture for 5 minutes, score with a knife. Leave to stand until almost twice its' size (approx. 1 hour). Form dough into a round mound or loaf shape.
  • Gently place bread on baking sheet. Bake for 1 1/2 hours. Check for doneness by "knocking" on the bottom of the bread; if it sounds hollow, it is done. If it is not done, continue baking for another 15 to 30 minutes if needed.

These doughboys are pan fried rather then deepfried and are much like pancakes. In Italy they are served for holiday breakfasts.

Number Of Ingredients 11

1 teaspoon dry yeast
1 cup water
1 teaspoon honey
1 3/4 cups whole wheat flour (not pastry flour)
1 1/2 cups white flour
1/4 teaspoon white pepper
2 teaspoons butter or 2 teaspoons margarine, melted and cooled slightly
vegetable oil
1/2 cup butter, softened
1/2 cup honey
1/2 teaspoon cinnamon (optional)

Steps:

  • Blend the 1/2 butter and 1/2 cup honey (and cinnamon if desired) together until fluffy Sprinkle yeast over the warm water in a small bowl.
  • Stir in 1 T. honey and let stand 5 to 10 minutes until mixture bubbles up.
  • Combine whole wheat flour, white flour and pepper, stirring to blend together.
  • Pour in yeast mixture and the 2 T. melted butter.
  • Mix until a dough forms.
  • Turn dough out onto a floured surface.
  • Knead for 10 minutes, until dough is firm, elastic and no longer sticky.
  • If necessary you can add 2 or 3 more tablespoons of flour.
  • Place 1 T. oil in a large bowl.
  • Add dough, turning to coat dough and bowl with the oil.
  • Cover with plastic wrap and let rise in a warm area until doubled.
  • (1 1/2 to 2 hours) Turn dough out onto a lightly floured surface.
  • Form into a cylinder 2 inches in diameter.
  • Cut off pieces 1 inch thick.
  • Press each slice with palm to flatten.
  • Let rest 10 minutes.
  • Roll slices out with a rolling pin until they are ovals about 6x3 inches.
  • Lay ovals on waxed paper and let rise about 30 minutes until doubled.
  • Cover the bottom of a skillet with a thin coat of oil.
  • Heat oil.
  • Fry doughboys over med heat until golden brown on both sides.
  • Don't rush them, they will get there.
  • Add more oil as needed.
  • Serve doughboys warm with honey butter.
