1 medium spaghetti squash (2 to 2-1/2 pounds)
1/4 pound ground beef (90% lean)
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup sliced fresh mushrooms
1 garlic clove, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, drained
1/3 cup shredded part-skim mozzarella cheese

Steps:

  • Cut squash in half lengthwise; scoop out seeds. Place squash, cut side down, in a baking dish. Fill pan with hot water to a depth of 1/2 in. Bake, uncovered, at 375° for 30-40 minutes or until tender. , When cool enough to handle, scoop out squash, separating strands with a fork; set shells and squash aside. , In a skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the mushrooms, garlic, basil, oregano, salt and pepper; cook and stir for 2 minutes. Add tomatoes; cook and stir for 2 minutes. Stir in squash. , Cook, uncovered, until liquid has evaporated, about 10 minutes. Fill shells; place in shallow baking dish. , Bake, uncovered, at 350° for 15 minutes. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

This easy Twice-Baked Spaghetti Squash recipe is a simple dinner idea that only needs 3-ingredients, is meatless, gluten-free, and frugal.

1 Spaghetti Squash (medium size)
1/2 - 1 cup pasta sauce (adjust according to preference)
1/2 - 1 cup shredded mozzarella cheese (adjust according to preference)
Salt & Pepper (to taste)
leaves Optional: fresh garlic (fresh chopped basil , dried oregano or Italian seasoning)

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or grease with olive oil or cooking spray.
  • With a sharp knife, carefully cut spaghetti squash in half lengthwise. With a spoon, gently remove seeds and discard. Place spaghetti squash cut side down on baking sheet. Bake for 45 minutes or until a fork can pierce the shell easily.
  • Remove from oven and allow to cool slightly. With a fork, loosen and separate spaghetti squash strands from shell. Reserve shells.
  • Place strands in a bowl. Mix strands with pasta sauce (and additional spices, if you wish). Adjust the amount of sauce you use based on your own preference. Spoon mixture back into the empty shell. If you have enough strands, you may be able to separate the mixture into each of the two shells, but you may also be able to spoon the entire mixture into just one of the shell halves. Sprinkle with mozzarella cheese.
  • Bake for 7-9 minutes or until cheese is melted, bubbly, and slightly browned. Spoon and serve directly from shell.

1 small spaghetti squash (1-1/2 to 2 pounds)
1/2 cup water
1 pound ground beef
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
1 garlic clove, minced
1 cup canned diced tomatoes
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded mozzarella or cheddar cheese
1 tablespoon chopped fresh parsley

Steps:

  • Cut squash in half lengthwise; scoop out seeds. Place with cut side down in a baking dish; add water. Cover and bake at 375° for 20-30 minutes or until it is easily pierced with a fork. When cool enough to handle, scoop out squash, separating the strands with a fork. In a skillet, cook beef, onion, red pepper and garlic until meat is browned and the vegetables are tender. Drain; add tomatoes, oregano, salt, pepper and squash. Cook and stir for 1-2 minutes or until liquid is absorbed. Transfer to an ungreased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 25 minutes. Sprinkle with the cheese and parsley; let stand a few minutes.

1 spaghetti squash, halved and seeded
1 tablespoon extra-virgin olive oil
salt and freshly ground black pepper to taste
1 tablespoon freshly grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place the squash halves into a large baking dish with the cut-sides facing down.
  • Bake in the preheated oven until easily pierced with a knife, about 40 minutes. Cool squash for 10 minutes.
  • Shred the inside of the squash with a fork and transfer to a bowl. Add olive oil, salt, and pepper to shredded squash and toss to coat. Serve with Parmesan cheese.

1 spaghetti squash
1 Tablespoon olive oil
1 teaspoon kosher salt
½ teaspoon cracked black pepper

Steps:

  • Preheat. Preheat your grill for indirect or two-zone grilling (where one side has heat and one side doesn't) to 375 or 400 degrees F.
  • Season the squash. Cut the ends off of the spaghetti squash and then cut in half lengthwise. Scrape out the seeds and pulp with a large spoon. Place each half of the squash cut side up on a metal baking sheet. Drizzle each half of the squash with olive oil and season with salt and pepper.
  • Grill the spaghetti squash. Place the baking sheet on the side of your grill with no direct heat and close the lid. Roast for 45-60 minutes (depending on how big your squash is. Check the squash with a fork for tenderness, the strands should pull apart easily when it is done.

2-pound spaghetti squash
1 tablespoon olive oil
3/4 cup pecorino romano cheese, shredded (or parmesan)
1 cup mozzarella cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon onion powder
1 tablespoon butter
2 teaspoons fresh thyme leaves
3 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees. Use a fork to poke a few holes around the spaghetti squash. Place in the microwave for a minute to soften a bit.
  • On a cutting board, cut the end of squash off, then cut in half lengthwise. Scoop the seeds and pulp out using a spoon, and coat the inside with olive oil.
  • Place the squash on a baking sheet with the insides facing down. Bake in in the oven for about 45 minutes or until soft.
  • Let cool for a bit, and then use a fork to remove all the strands of spaghetti squash into a mixing bowl. Combine both cheeses into a small dish, and add HALF the cheese mixture to the bowl with squash. Also add salt, pepper, onion powder, butter, minced garlic, and fresh thyme, and stir all to combine.
  • Place the spaghetti squash mixture back into the skins on a baking sheet pan. Top with the remaining half of the cheese. Place back in the oven and broil for 5-6 minutes until the cheese is melted and slightly browned. Enjoy warm.

2 medium tomatoes (cored, seeds removed and diced)

1 small clove garlic (crushed and finely minced)
1/2 cup grated Parmesan cheese (plus more for serving)
1/8 teaspoon ground black pepper
3/4 teaspoon salt (or to taste)

Steps:

  • Line a baking pan with foil and oil lightly with olive oil. Heat the oven to 375 F.
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds and any soft fibers.
  • Arrange the squash, cut side down, on the foil-lined pan.
  • Cover the pan tightly with foil and bake for 1 hour.
  • After an hour, turn the squash over, cover once again with foil and bake for about 20 minutes longer, or until very tender.
